A simple homemade Cuban citrus-garlic marinade for chicken, meat, shrimp and pork made with fresh ingredients!

Cuban Mojo Marinade Recipe

garlic ((approx. 10 cloves mashed until you get a smooth paste))

onion

oregano

salt

black pepper

orange juice

orange zest

lemon juice

lime juice

extra virgin olive oil

In a large mason jar, add garlic, onion, oregano, salt, pepper, orange juice, orange zest, lemon juice, lime juice, and olive oil. Cover and shake it up until well combined. Be sure to shake well before every use.

This recipe makes approx. 2 cups of mojo marinade. Feel free to taste and adjust seasoning. The marinade should taste tangy, citrusy, garlicky, and slightly sour.

Best Quick Pork Marinade

olive oil

apple cider vinegar

garlic garlic powder garlic

pepper

onion powder

smoked paprika (non-smoked will work fine too)

Italian seasoning OR herbs de provence

Combine all marinade ingredients (except for pork) in a jar, cover and shake vigorously.

Pour marinade into a ziploc bag along with the pork, press out as much of the excess air as you can, then seal the bag and chill for 30 minutes.

Transfer pork to a baking dish and pour half of the marinade over the pork. Bake at 400 degrees for about 40 minutes or until no longer pink in the middle. Slice and serve.

For Baking

Wrap pork in foil and grill for 15 minutes, turning throughout to ensure even cooking. Unwrap, place directly on the grill, and continue to grill until completely cooked through and no longer pink in the middle. Slice and serve.

For Grilling

This humble cut of meat is tender, juicy and full of flavor with a honey, garlic and Dijon pork tenderloin marinade. 

Honey Garlic Dijon Pork Tenderloin Marinade

pork tenderloin ((about 1 lb.))

honey

Dijon mustard

soy sauce ((or substitute with tamari or coconut aminos

Salt and pepper,

In a bowl, whisk together honey, Dijon mustard, soy sauce, garlic, rosemary, and thyme. Season pork on all sides with salt and pepper, to taste.

Place pork in a large zip-top plastic bag. Pour half of the marinade over the pork and toss to coat. Seal the bag and refrigerate the pork in the marinade for at least 30 minutes, or up to 24 hours. Rotate the pork occasionally so that the marinade touches all sides.

Set aside the remaining ½ of the marinade in a separate bowl, cover, and refrigerate for later.

Remove pork from the marinade and place in a baking dish that has been coated with cooking spray. Discard bag with the marinade. Allow pork to come to room temperature while you preheat the oven.

Preheat oven to 400°F (200°C).

Cover with foil and bake for 25 minutes.

Remove cover, brush with reserved marinade, and place under the broiler for about 5 minutes (or until a crispy crust forms on top), and pork reaches an internal temperature of 140°F - 145°F.

Remove from oven and allow pork to rest for about 10 minutes before slicing. Serve with reserved marinade.

TO COOK THE TENDERLOIN IN THE OVEN:

Remove pork from the marinade and allow to come to room temperature while you heat the grill. Discard bag with the marinade.

Heat the grill to medium heat. Place pork on the grill and cover. Cook for about 12-14 minutes, turning every few minutes, until pork reaches an internal temperature of 140°F - 145°F.

Allow pork to rest for 10 minutes before slicing. Serve with reserved marinade.

Easy Pork Chop Marinade

Make the marinade

Add the ingredients into a large resealable plastic bag and add about 2 lbs of pork chops. Massage it together then place it in the fridge for 45 minutes to overnight. Cook according to your desired method - bake, grill, or pan fry.

Whisk together bourbon, brown sugar, soy sauce, Worcestershire, lemon juice and garlic powder.

Place pork tenderloins in a gallon ziplock bag. Pour marinade over pork. Seal bag and refrigerate one hour to overnight.

Remove pork from marinade and grill until internal temperature reaches 145ºF. (approximately 12 to 16 minutes).

Pat the pork chops dry with a paper towel.

In a separate bowl, combine the olive oil, lemon juice, garlic, salt, and black pepper to create the marinade.

Rub the marinade evenly all over the sides of the pork chops and place them in a bowl covered with plastic wrap. Allow them to marinate for at least an hour in the refrigerator.

Grill the pork chops on high for about 5 minutes on each side (the cooking time will depend on the thickness of the pork chops). They are fully cooked when the internal temperature reaches 145°F on an instant-read thermometer.*

Allow the pork chops to rest for 10 minutes before serving them, bringing them to 145°F.
