This Queso Recipe is the most delicious white cheese dip you will ever taste. Just like at your favorite Mexican restaurant, but made easy at home.

White Queso Dip Recipe

evaporated milk ((1 can))

cornstarch

mozzarella cheese (shredded)

jalapenos (chopped, or chopped green chiles)

chili powder (you could also use cumin if you prefer that taste)

nutmeg

red pepper flakes

salt

black pepper

cilantro

Heat evaporated milk over medium/high heat in a small saucepan. Stir in the cornstarch and whisk to combine.

Once simmering (bring to JUST before boil...when it starts bubbling up the sides it's ready), reduce heat to low immediately.

Immediately stir in the cheese in batches, starting with the white american cheese. As you stir in the cheese, increase heat to medium/low and whisk CONSTANTLY while the cheese melts. Once each batch is melted/creamy, add more. Don't stop stirring, you have to whisk the entire time while adding cheese.

Once done with the white American, add in the shredded fontina or mozzarella. Again, whisk CONSTANTLY while the cheese melts, insuring you have a creamy blend. If you prefer the cheese a bit thicker, add a bit more of the mozzarella.&nbsp;

Once all the cheese is melted, stir in the jalapenos, chili powder, nutmeg, red pepper, and salt and pepper. *** (see note)

If you want the queso to be browned like in my pictures, pour the queso into a small nonstick skillet and place in the oven. Broil for 3-4 minutes or until cheese begins to bubble and brown (optional)

Top with cilantro, tomatoes, and more jalapenos if desired.

Serve with tortilla chips and enjoy!

In a large saucepan over medium-low heat, melt the butter. Whisk in the flour and cook for 2 minutes or until lumpy.

Remove the pan from the heat source. Add the shredded monterey jack and pepper jack cheeses to the milk mixture and stir to melt.

Cream Cheese or Neufchatel Cheese ((Neufchatel is has 1/3 less fat))

Mild

Jalapeno Chile Pepper ((approximately 3-inches long ¾ inch diameter), seeded and diced)

Unsalted Butter

Red Onion

Garlic Cloves (, diced)

Suggested ‘dippers’: multi-colored Corn Chips

Spray the insert of a 4 quart (or higher) slow cooker with non-stick spray.

In a mixing bowl toss the Asadero cheese cubes with the flour and add to the slow cooker.

Also add the cream cheese or Neufchatel cheese, green chilies, and jalapeno.

In a skillet melt the butter and sauté the onion and garlic only until they begin to soften (a few minutes).  Add them to the slow cooker.

Pour the milk over the mixture in the slow cooker.  Cook on LOW temperature for 2 hours, stirring periodically to combine the ingredients as the cheese melts.

The dip is best served in a slow cooker to keep the cheese from solidifying.

½ cup whole milk, (plus more as needed)

¼ teaspoon freshly ground ground pepper

Melt the butter in a small skillet over medium heat. Add the diced onion and cook for 5-8 minutes until softened and beginning to caramelize. Add the garlic and stir, cooking for an additional 30 seconds until fragrant. Remove from the heat and set aside.

Heat the milk in a medium saucepan over medium heat until small bubbles form on the edges of the saucepan. Reduce the heat to low.

Add the cheese cubes ½ cup at a time and continuously stir into the heated milk with a whisk until they are fully incorporated and melted. Continue this process until all the cheese cubes are melted, making sure to gently and continuously whisk the queso dip until it is smooth and silky.

Remove the saucepan from the heat and gently stir in the cooked onions and garlic, the diced green chiles, salt, and black pepper. Stir in any additional milk as needed if the queso becomes too thick.

Garnish with chopped tomatoes and jalapeños, and serve with your favorite tortilla chips.
