Queso Blanco Dip with Chorizo

canola oil

lb Mexican style chorizo sausage

Vidalia onion (minced)

jalapeno

tsp cumin

Salt

red chili pepper

tbsp flour

heavy whipping cream

American cheese (chopped)

oz Monterrey Jack cheese (chopped)

Take the sausage out of the skin and break it apart as much as possible.

Heat a little bit of oil in a medium pan, over medium heat.

Add diced onion, minced jalapeno, and sausage to the pan. Saute everything mixing and breaking up the clumps of chorizo as much as possible.

Season with cumin and salt, mix well, cook until chorizo is done. Take off heat.

Chorizo:

In a bottom-heavy sauce pot, heat up a little bit of oil over medium heat.

Saute diced onions, jalapeno, and chili pepper until softened. Sprinkle flour over the vegetables and stir well.

Slowly pour in heavy whipping cream while stirring.

When heavy cream is heated through but not simmering, start adding cheeses one handful at a time. Keep stirring slowly until cheese is melted and smooth. Stir in salt and cumin and take off heat.

Transfer queso blanco into a serving dish and top it off with cooked chorizo. (Make sure the bowl is big enough to fit both.)

Queso Blanco is a quick and easy white cheese dip with a kick of heat. It&#039;s made with 2 kinds of white cheese, green chiles and spices.

Queso Blanco

butter

all-purpose flour

milk

monterey jack cheese (freshly grated)

pepper jack cheese (freshly grated)

can diced green chiles

red pepper flakes

chili powder

onion flakes

garlic powder

salt

jalapenos, cilantro, diced tomatoes (optional)

Tortilla chips,

In a large saucepan over medium-low heat, melt the butter. Whisk in the flour and cook for 2 minutes or until lumpy.

Whisk in the milk and bring to a simmer (small bubbles). Continue to cook until slightly thickened.

Remove the pan from the heat source. Add the shredded monterey jack and pepper jack cheeses to the milk mixture and stir to melt.

Add the diced chiles, red pepper flakes, chili powder, minced onion, garlic powder, and salt. Mix one final time, garnish as desired, and serve warm.

10 oz can Original Rotel diced tomatoes and green chiles (undrained)

Put all the ingredients in a small slow cooker.

Heat on high, stirring occasionally, until cheese is melted and mixture is smooth.

Preparation in a slow cooker

Put all the ingredients in a medium saucepan.

Heat on low/medium-low, stirring often, until cheese is melted and mixture is smooth.

Preparation on the stove-top

Put all the ingredients in a microwave safe dish or bowl.

Heat on high for 1 minute, stir, and repeat until cheese is melted and mixture is smooth.
