Combine the quinoa and water in a medium pot. Bring to a boil, cover, reduce the heat, and simmer for 15 minutes.

Quinoa Recipes: Healthy Quinoa & Veggie Salad

quinoa (thoroughly rinsed)

spinach, (stems removed and coarsely chopped)

(15 ounces) corn, (drained and rinsed)

(15 ounces) black beans, (drained and rinsed)

cherry tomatoes, (halved)

green onions, (chopped)

cilantro, (finely chopped)

Salt and pepper, (to taste)

limes, (juiced)

olive oil

cumin

red pepper flakes

Follow package instructions to cook the quinoa. Transfer to a large bowl and aside to cool completely.

To the bowl with the cooled quinoa, add the chopped spinach, rinsed corn, rinsed black beans, cherry tomatoes, chopped green onions, and finely chopped cilantro.

Toss together.

In a small bowl whisk together the lime juice, olive oil, about 1 teaspoon salt, 1/4 teaspoon pepper, ground cumin, and red pepper flakes. Pour over the salad and toss to coat.*

Store leftovers in the fridge in an airtight container.

Take a bite into this refreshing, gluten-free quinoa spinach salad bursting with colourful tomatoes, cucumbers and raisins dressed with a lemon vinaigrette. 

Quinoa Spinach Power Salad with Lemon Vinaigrette

quinoa, uncooked

spinach, finely chopped

tomato, diced

cucumbers, diced

raisins

lemon juice

salt

black pepper

In a medium bowl, rinse the quinoa a few times. In a medium saucepan, boil 2 cups of salted water. Add the quinoa and continue to boil for about 10 minutes until the quinoa is tender. Drain the quinoa and let it cool.

In a large bowl, combine the spinach, tomatoes, cucumbers, raisins and cooled quinoa.

In a small bowl, make your lemon vinaigrette. Combine the lemon juice, olive oil, salt and pepper. Pour onto the salad and toss to coat.

Season to taste with more salt and pepper, if needed.

I made a double batch as directed in the recipe but then I added feta cheese crumbles. So delicious, fresh, healthy and satisfying! I will be making it again to bring to a gathering Memorial Day weekend!

Quinoa Khichdi Recipe in Pressure Cooker

Yellow moong dal/dhuli moong dal

Quinoa

Salt

tsp Red Chili powder

tsp Turmeric powder

tbsp Ghee

cumin seeds

Potato (medium-sized)

green chili (chopped)

tsp ginger

Red Chilies Whole

tsp Crushed peppercorns and cloves

To prepare quinoa khichdi, start with preparing the ingredients. In a bowl add half a cup of yellow moong dal and wash it

In another bowl wash a ¾ cup of quinoa. Wash the quinoa too until the water comes out clean. When done, keep it aside.

In a cooker add quinoa, yellow moong dal, salt, turmeric powder, and red chili powder.

Add 3 and a half (3 ½) cup water and mix them well.

Now, pressure cooks the khichdi till 2 whistles. After 2 whistle turn off the heat and allow the pressure cooker to cool naturally.

In another pan heat tablespoon of ghee. Reduce the heat.

Add cumin seeds in the ghee and cook for a minute.

When cumin seeds to crackle and then add chopped onions in it.

After that add chopped green chilies, chopped ginger and saute them until the onion is golden brown.

Add 2 whole red chilies, chopped potatoes, beans and carrots in the pan.

With a mortar and pestle, crush 4 peppercorns and 6 cloves and add them to the pan.

Now, cook the vegetables covered for 5-6 minutes till they are tender enough. You can add a tablespoon or two of water if required.

After cooking vegetables add a teaspoon of coriander powder.

Add salt to taste and mix well.

Now, add pressure cooked quinoa khichdi (that we cooked earlieand mix all the ingredients well.

Add water to adjust the consistency of khichdi as per your preference and allow the khichdi to cook well.

Cover and cook for another 4-5 minutes.

When the khichdi is cooked, turn off the heat and prepare the tempering.

For tempering, heat a tablespoon of ghee and add few cashews in it.

Fry the cashews/kaju and keep aside.

Now, in the same tempering pan add a teaspoon of cumin, asafoetida and whole red chilies.

Add this tempering/tadka in the khichdi and top it with fried cashews.

Drizzle a teaspoon of ghee in the khichdi and serve with papad, pickles and fresh dahi/curd.

For Making Khichdi Tadka

Instant Pot Quinoa

(190 grams) quinoa

(250 milliliters) unsalted chicken stock

Rinse Quinoa: Most packaged quinoa has been pre-rinsed to remove the saponin to reduce the bitterness. If necessary, give it a quick rinse with cold water, and drain really well.

Toast Quinoa (Optional Step): Press the Saute button on Instant Pot, then wait 1 minute. Pour in 1 tbsp (15ml) olive oil, then add in the quinoa. Toast the quinoa until fragrant (~2 - 3 mins).

Pressure Cook Quinoa: Add in ¼ tsp fine salt + 1 cup (250ml) unsalted chicken stock or cold water. Use a wooden spoon to scrub the bottom to make sure no quinoa is stuck to the bottom. Close lid and pressure cook:Pressure Cooking Method:-Toasted Quinoa: High Pressure 0 minute, then 10 minutes Natural Release-Non-Toasted Quinoa: High Pressure 0 minute, then 12 minutes Natural ReleaseRelease the remaining pressure after the natural release time.

Serve Quinoa: Fluff quinoa &amp; serve. You can use quinoa as a side dish, toss into your salads or soups. Enjoy~

I tried the lemony chickpea quinoa salad and it was good. I thought the preserved lemons added a bitterness to the salad because of the rind so next time, I might just use lemon juice instead. If anyone has tips on how to make my quinoa less clumpy though, I'm all ears:)

How to Cook Perfect Quinoa on the Stove

Place the quinoa in a fine-mesh sieve and rinse with cold water (unless your quinoa is labeled pre-rinsed).

Pour the quinoa into a medium saucepan over medium high heat. You can toast the quinoa for a couple of minutes, stirring occasionally. Or add the broth or water immediately and season with salt. Bring to a simmer, cover the pot, and simmer for 15 to 20 minutes until the liquid is absorbed and the quinoa grains have sprouted their little tendrils. Remove from the heat.

let sit, fluff, and serve

Allow the quinoa to sit, covered, for about 5 minutes, then lift the lid, fluff the quinoa, and serve, or cool. If you want to cool the quinoa, your best bet is to spread it out on a large platter or baking sheet.

Garden Vegetable Quinoa Soup

Mince the garlic and dice the onion. Add the olive oil, garlic, and onion to a large pot and sauté over medium-low heat until the onions are soft and transparent.

While the garlic and onion are cooking, wash and peel the carrots, then slice into 1/4-inch thick rounds. Wash the celery and slice into 1/4-inch pieces. Add the carrots and celery to the pot and continue to sauté until they just begin to soften (about 5 minutes).

While the carrots and celery are cooking, rinse the quinoa well with cool running water in a wire mesh sieve. Drain and rinse the kidney beans. Add the quinoa, kidney beans, diced tomatoes (with juices), basil, oregano, smoked paprika, and some freshly cracked pepper (about 20 cranks of a pepper mill) to the pot.

Add the vegetable broth and water to the pot, place a lid on top, and turn the heat up to medium-high. Allow the pot to come to a boil, then turn the heat down to low and let simmer for 25 minutes (make sure it's simmering the entire time, turning the heat up just slightly if it stops).

After simmering for 25 minutes the quinoa should be slightly translucent and tender. If not, let simmer a few minutes longer. Stir in 1/4 lb. of frozen spinach until heated through. Taste the soup and add salt or adjust the seasonings if necessary. Serve hot.

A simple easy recipe for  Quinoa with Lemon, Shallot and Herbs- a delicious healthy side dish that is vegan, gluten-free and full of protein. Can be made-ahead...make a big batch on Sunday for weekday meals, or bring to a potluck!

Perfect Quinoa

shallot (or ¼ of an onion),

teaspoons olive oil

quinoa, rinsed well, and drained (rinsing removes bitterness)

water or broth

salt,

garlic garlic cloves with the shallot)

oregano

lemon lemon

toasted slivered almonds or pinenuts

olive oil– optional but good.

In a medium pot, over medium heat, sauté the shallot in the olive oil, until golden and fragrant, about 2-3 minutes. Set half aside for the garnish.

To the pot, add rinsed/drained quinoa, water, salt, cumin, granulated garlic and dried herbs, and give a good stir. Bring to a boil. Reduce heat to low, cover well, and cook for 15 minutes. Check to see that the quinoa has soaked up all the water.  If not, continue cooking 2-5 more minutes. Once you see steam holes, turn the heat off and let it sit covered 5-10 more minutes.

To serve: Fluff with a fork, place in a serving bowl and toss gently with lemon zest, taste and adjust salt, adding more as necessary.

Sprinkle with fresh herbs, remaining sauteed shallots, and optional nuts. Don&#8217;t over-mix.
