DRESSING:

Bavarian Sauerkraut Salad

c granulated sugar,more or less to taste

c apple cider vinegar,more

c water,optional

c vegetable oil

salt and pepper

oz bag,sauerkraut,

green bell pepper,

carrots,

tsp celery seed

tsp caraway seed, optional

This was my grandmother's dressing recipe.  To this day, it's still a hit with family and friends.

Trifles are a super easy dessert to prepare and we loved this summertime strawberry shortcake one. It's almost too pretty to eat. Layered with fresh strawberries, cake, and a creamy vanilla cream, each bite is delicious.

Strawberry Shortcake Trifle

c cold whole milk

sour cream (8 oz)

vanilla pudding mix (3.4 oz)

c heavy whipping cream, whipped

shortcakes (used for strawberry shortcakes)

This coleslaw twist really does have everything but the kitchen sink. It's crunchy, sweet, and tart.  The longer it sits, the better it gets. If you want extra saucy goodness, double the dressing recipe.

We love a delicious no-bake dessert in the summertime. This is a quick and easy cream cheese pie that can be made for any occasion. The sweet and tart raspberry filling goes nicely with the tangy cream cheese filling. A store-bought graham cracker crust adds a little crunch to every bite. Just make sure to keep this summer dessert refrigerated or it will get mushy. Blueberry, strawberry, or cherry pie filling would be tasty too.

I have been making this for years, and we usually took it camping because it is a 2 step process, and was easy to throw together the next day.
The recipe originally came from muy sisters employee cook book St Law Psychiatric Center Centenial Cookbook. The cook was JoAnn Whitford.
It's a really sweet salad, almost a dessert.

Acini DI Pepe Salad

cup(s) acini di pepe. uncooked

chunk pineapple, drained reserve juice

mandarin oranges, drained reserve juice

We love that Judy made this into a coconut cream sheet pie rather than a regular pie. Each layer is delicious! The bottom is crunchy and nutty. The next layer has a hint of tanginess from the cream cheese. Sweet and creamy, the coconut pie filling layer is luscious. Fluffy with sweet bits of toasted coconut in every bite, the top layer is divine.

Coconut Cream Pie Deluxe

ounce(s) Cool Whip lite, thawed

3 3/4 cup(s) half and half

package(s) coconut cream

This is a recipe that I use when I make a coconut creme pie but I converted it to a 13x9. It is very rich but you just want to keep eating it. The nutty crust is the real stand-out in this recipe along with the creamy coconut pie filling. This is achieved by using the half and half instead of milk.

At least 20 years ago, Phyllis Diller contributed this recipe to a community  cookbook. My daughter went wild for it - she was a pre-teen at the time. Although I prefer the more traditional type of potato salad. this is tasty, too!
