Baked Reuben Casserole is like a huge reuben sandwich for a crowd! Layers of rye bread, pastrami, sauerkraut, Swiss cheese and special sauce!

BAKED REUBEN CASSEROLE

rye bread (dark

sauerkraut (drained well)

Swiss cheese (divided use)

tsp caraway seeds (divided use)

dill pickles

milk

eggs (beaten)

thousand island dressing

mustard

Preheat oven to 350f degrees. Spray 11x7 baking dish with nonstick cooking spray. Take four slices of rye bread and cut them into 2-inch cubes.

Place remaining slices of rye bread into food processor and pulse into fine breadcrumbs and set aside.

Spread cubed bread into the bottom of the prepared baking dish.

Cover evenly with half of the pastrami.

Then evenly top with drained sauerkraut, chopped pickles and 1 tsp. caraway seeds.

Sprinkle 2 cups of shredded Swiss cheese on top of sauerkraut layer.

Next, top with remaining pastrami. I gently push down to help compact it all a bit.

Sprinkle remaining 2 cups Swiss cheese and 1 tsp. caraway seeds on top of pastrami.

In a medium bowl, whisk together milk, eggs, thousand island dressing and mustard.

Pour mixture evenly over the casserole.

Top with breadcrumbs.

Cover with foil.

Bake for 45 minutes.

Remove from oven, let rest for 5 minutes then slice and serve.

Tender noodles, corned beef, sauerkraut, and fresh cabbage are all cooked in a creamy swiss cheese sauce!

cabbage (thinly sliced)

butter

corned beef (diced, about 2 cups)

onion (about 1 cup, chopped)

sauerkraut (squeezed and chopped)

flour

¾ teaspoon pepper (or

salt (to taste)

chicken broth

Worcestershire

swiss cheese (shredded)

Panko Crumbs

butter (melted)

parmesan cheese (shredded)

parsley (chopped)

Preheat oven to 375°F.

Cook rotini according to package directions (about 9 minutes). Add the cabbage during the last 5 minutes of cook time. Drain and set aside.

Meanwhile, heat butter in a pan over medium heat. Add corned beef and onion and cook until onion is tender, about 5 minutes. Set aside.

Melt butter in a saucepan. Whisk in flour, salt, and pepper and cook for about 2  minutes.  Gradually add chicken broth and milk a little bit at a time while whisking.

Add dijon and Worcestershire sauce. Continue whisking over medium heat until thickened and bubbly.

Remove from heat and stir in the swiss cheese until melted.

SAUCE

In a large bowl, combine the pasta/cabbage mixture, sauerkraut, and the corned beef mixture. Add the sauce and mix well.

Spread into a greased 9×13 baking dish. Combine all topping ingredients and sprinkle over pasta.

Bake uncovered for 18-22 minutes or until hot and bubbly.

ASSEMBLY

This Reuben Casserole is a classic sandwich-turned-casserole situation and you don't want to miss it! Butter-soaked pumpernickel bread, pulls of Swiss cheese, tender corned beef, briney sauerkraut, and lots of Thousand Island sauciness. Let's dive in!

Preheat oven to 350 degrees F. Toss bread cubes with melted butter in a bowl.

Whisk ingredients for the reuben sauce; taste and adjust.

In a separate bowl, combine the sauerkraut, parsley, and caraway seeds.

Layer half of the bread/butter mixture on the bottom of a 9&#215;13 baking dish. Bake for 10 minutes and remove from the oven.

Layer the remaining ingredients on top of the baked bread cubes. This is the order I usually follow: sauerkraut, cheese, sauce, corned beef, sauerkraut, cheese, sauce. Finish with a little more cheese and the remainder of bread cubes. Bake for 35 minutes.

Drizzle with sauce, sprinkle with parsley, and serve!

I have been making this for years since a more casual post on Pinch of Yum quite some time ago. I’m always asked for the recipe! I use brisket corned beef cooked in the crock pot then shredded into the casserole. This has become a St. Patty’s Day tradition in my house, thank you!!

This was delicious! The homemade sauce totally makes the recipe. We used a fresh corned beef brisket instead of deli meat. I’m the vegetarian in our house so my portion had sliced beets instead of meet.

pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes

(6 ounces) sliced corned beef, cut into 1/2-inch pieces

(14 1/2 ounces) sauerkraut

Swiss cheese (8 ounces)

caraway seed, if desired

Thousand Island Dressing,

Heat oven to 350°F. Grease or spray 2 1/2-qt baking dish.

Heat water and butter to rapid boil in 3-quart saucepan; remove from heat. Stir in milk and mustard. Stir in 2 pouches potatoes  just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth.

Spread about 3 cups of the potatoes in baking dish. Top with corned beef. Spread sauerkraut over corned beef and sprinkle with 2 teaspoons caraway seed, if desired. Spoon remaining potatoes over top; spread gently. Sprinkle potatoes with cheese and remaining caraway seed.

Bake uncovered about 20 minutes or until cheese is light golden brown.

Corned beef, sauerkraut, Swiss cheese, Thousand Island dressing and Rye bread all make this Reuben Casserole taste just like the sandwich.

Preheat oven to 400 degrees.

Layer corned beef on the bottom of a 9x13 baking dish.

Make sure the sauerkraut is drained and patted dry. Sprinkle it on top of the beef.

Drizzle the dressing on top of the sauerkraut and sprinkle the Swiss cheese on top.

Arrange the diced bread on top of the casserole and lightly spray it with cooking spray so that it toasts up nicely (or you can butter the bread).

Bake for 20-25 minutes or until bread is toasted and cheese has melted.

Mix all ingredients together in a large bowl. (You will want an extra large bowl for this one!)

Pour everything into a 9x13 casserole dish, scraping the sides well to get all the casserole ingredients out.

Using a large spoon or spatula, press casserole into dish so everything is tightly packed.

Bake uncovered on the center oven rack at 350 degrees for 30 - 45 minutes, or until casserole is heated through and top is browned to your liking.

pumpernickel bread (about 10 slices)

lb thinly sliced deli corned beef, coarsely chopped

Annie’s™ organic Thousand Island dressing

(14 oz) sauerkraut, thoroughly drained

caraway seed

Swiss cheese (8 oz)

Annie’s™ organic Thousand Island dressing,

Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix bread cubes and melted butter; toss to mix well.

Place 4 cups of the bread cubes in baking dish. Top with layers as follows: 2 cups of the corned beef, 1/2 cup dressing, the sauerkraut, caraway seed, 1 cup of the cheese, remaining corned beef and remaining 3 cups bread cubes. Cover with foil; bake 25 minutes.

Preheat your oven to 375°F (190°C). Lightly grease a 9&#215;13-inch baking dish or line it with parchment paper.

Unroll half of the crescent roll dough and press it into the bottom of the prepared dish.

Spread Dijon mustard over the dough. Layer corned beef (or pastrami) evenly, followed by slices of Swiss cheese.
