Roasted Fingerling Potatoes

½ lbs fingerling potatoes (sliced in half lengthwise)

tbsp butter (unsalted, melted)

garlic (minced)

Italian seasoning

salt

½ tsp pepper

olive oil

tbsp parsley (fresh, chopped, for garnish)

Preheat your oven to 425 F degrees.

Toss the potatoes with the butter, garlic, Italian seasoning, salt, and pepper. Add the olive oil to a large skillet, then spread the potatoes evenly in a large cast iron skillet.&nbsp;

Bake for 20 to 25 minutes, or until crispy. Garnish with parsley and serve.

Roasted Fingerling Potatoes with Chipotle Garlic Sauce

lbs fingerling potatoes, washed and patted dry

sour cream

mayonnaise

chipotle peppers

garlic cloves, minced (minced)

cumin

smoked paprika

white wine vinegar vinegar

Preheat the oven to 400 degrees. Place the potatoes on a large baking sheet and prick holes in each one with a fork. Drizzle them with oil and then use your hands to coat them thoroughly. Sprinkle the potatoes with salt.

Roast the potatoes until they are fork tender, about 25 minutes. While the potatoes are cooking, whisk together the sauce. Transfer to an airtight container and chill until ready to serve. Enjoy!

Oven Baked Fingerling Potatoes

fingerling potatoes (cut in half lengthwise)

¼ teaspoon dried thyme leaves (or 2 sprigs fresh thyme)

Preheat oven to 400°F.

Combine potatoes, oil, garlic, salt, and pepper in a large bowl and mix until evenly coated.

Spread onto a baking sheet flat side down and bake for 15 minutes.

Remove from the oven and sprinkle parmesan cheese on top, return to the oven and cook for another 10-15 minutes or until potatoes are golden brown in color.

For roasting the potatoes, use the largest oven-safe skillet you have (a straight-sided 12-inch cast iron pan is ideal) or use a baking sheet lined with parchment paper or foil.

I just made this and loved it!! The minute I put the smoked paprika on you could smell the spice starting to bloom from the heat of the potatoes. And the dipping sauce was a great complement.

This is also my first time leaving a comment on a recipe.  The sauce with those potatoes was EPIC.  Also loved the addition of the vinegar and smoked paprika on the potatoes.  We have a bit of sauce left over today so plant to make some shrimp for lunch and use the sauce with those.  Thank you for sharing.  IT was SO delicious!

These smoky roasted fingerling potatoes are one of my favorite potato recipes. Smoky, creamy, and perfectly golden brown potatoes served with a ridiculously tasty potato salad inspired dipping sauce.

Roasted Fingerling Potatoes with Craveable Dipping Sauce

Roasted Fingerling Potatoes are a dinner side dish superstar and they are made even better with this secret hack!

lb. fingerling potatoes

Cooking spray

vegetable oil

cornstarch

tbsp. fresh rosemary, finely chopped

garlic,

Kosher salt

Preheat oven to 425º. Scrub fingerlings clean, pat dry then halve lengthwise. Spray a large baking sheet with cooking spray, then drizzle vegetable oil, tilting the pan to make sure the oil is evenly distributed.

In a large microwave-safe bowl, whisk cornstarch and ½ cup water until evenly  combined. Microwave the cornstarch slurry in 20 second bursts, whisking after each interval, until sticky like pudding, about 1 to 1 ½ minutes total.

Add potatoes  to the cornstarch slurry and toss to coat. (The potatoes will look a little strange but this coating ensures maximum crispiness.)

Place the potatoes cut side down on the baking sheet, leaving a bit of space in between each one. Cover the sheet tightly with aluminum foil and transfer to the oven. Roast for 12 minutes.

Remove the foil and continue to roast until the cut side of each potato is golden brown, 15 to 20 minutes. Toss potatoes with rosemary, garlic, salt and pepper. Return to the oven and cook until the garlic is fragrant and golden brown, about&nbsp; 5 minutes. Transfer the potatoes to a bowl, give them a quick toss, and serve.

An easy side dish with less than 10 ingredients, these garlic herb roasted fingerling potatoes turn out perfectly crispy and golden brown at the edges.

Garlic Herb Roasted Fingerling Potatoes

Preheat the oven to 400 degrees F.

Slice the fingerling potatoes lengthwise, so they are about 1/4-inch thick.

Toss the potatoes and garlic with 2 tablespoons olive oil, salt and pepper. Spread them over 2 sheet pans, arranging the potatoes in a single layer.

Roast the garlic and potatoes for 30-35 minutes. When they are browning on one side, flip them to the other side and continue roasting for 10-15 minutes until golden brown on both sides. Transfer the potatoes to a large bowl.
