This recipe combines sweet butternut squash with savory cheese and kale to make a perfectly matched super power dinner.

Butternut Squash and Kale Roll-ups

butternut squash

onion

garlic

nutmeg

salt

black pepper,

lasagna noodles, dry

kale

ricotta cheese, part skim milk

cottage cheese

Parmesan cheese, shredded

colby-jack cheese, shredded

Cook lasagna noodles according to package.  You will need about 9 for this recipe.

Peel and dice butternut squash. Chop onion; mince garlic.

Add butternut squash to a large pot of boiling water, and cook until soft. Drain squash and set aside.

Saute onions and garlic together until onions are translucent and soft. Combine with squash in a blender along with nutmeg, salt and pepper. Blend until smooth. Ladle about 1/2 cup butternut sauce sauce on the bottom of a 9 x 12 baking dish.

Rinse and dry baby kale, and chop into small pieces. In a medium bowl, combine kale, ricotta, cottage cheese, Parmesan, egg, salt and pepper.

On a piece of wax paper or tin foil, lay out lasagna noodles. Spread the cheese mixture evenly over noodle. Roll and place seam side down onto the baking dish. Repeat with remaining noodles.

Pour remaining sauce over the roll-ups in the baking dish and top each one with your choice of shredded cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts and everything is hot and bubbly.

These Tortilla Roll-Ups are the perfect Christmas appetizer recipe. Stacked into a tree shape and served with salsa, they are an easy-to-make, crowd-pleasing snack.

Tortilla Roll-ups with Salsa

In a large bowl, mix together the softened cream cheese and the ranch dressing mix until evenly combined.

Then add the pimentos, green chilis, black olives, green onions, yellow pepper, and cheddar cheese. Stir gently until they evenly distributed in the cream cheese.

Divide the cream cheese mixture on the four tortillas. Then, using a spatula, spread the mixture on each tortilla in an even layer. Keep the mixture a 1/2 inch from the edge.

Roll up the tortillas. Set them on a plate and cover it with plastic wrap. Chill in the refrigerator for about 2 hours or until firm. Then using a serrated knife, cut the tortillas into 1/2-inch slices.

Stack in layers to form a "tree." Garnish with cherry tomato "ornaments" and a yellow pepper "star." Serve with salsa.

Spinach Stuffed Flank Steak Rolls

lb. flank steak (butterflied)

Salt and pepper (to taste)

Preheat oven to 375F degrees. Butterfly Steak by slicing horizontally across and pounding. Season with salt and pepper. Set aside.

Heat 2 tablespoons oil to a small saucepan over medium-high heat. Add onion and cook for 2-3 minutes or until tender and almost golden. Add the garlic and sautee for another minute. Remove from and stir in cream cheese until fully combined. Season with salt and pepper.

Spread the cream cheese mixture on the steak, then layer the spinach and cheese. Roll up steak and tie with kitchen twine or pierce with toothpicks or short kabob skewers&nbsp;to keep the roll intact. Using a sharp knife, slice roll between pieces of toothpicks or twine. Season pinwheels lightly with salt and black pepper.

Heat a large heavy-duty pan to medium-high heat. Add the steak pinwheels and sear for 2-3 minutes per side. Transfer to a baking dish or place the entire pan in the oven if it is oven safe, and bake for 10 minutes. Remove from oven, tent with aluminum foil and let rest for 5 minutes before serving.

I substituted chive cream cheese for sour cream and chives, used chopped Costco rotisserie chicken and pico de gallo for our company  picnic.  It was well received.

3 instead of 4 stars only because per previous reviews, it really does need some additions or it would be bland.  But I really, really like it with my fixes & it will be on my permanent rotation!  I added 1/2 tsp each salt & cumin, 1/4 tsp each garlic powder & pepper, & a couple shakes Cayenne.  To reviewer Red Butterfly--the chicken is cooked before shredding.  Raw chicken won't shred.

Delicious! My family was impressed. Every oven is different and I had to bake mine longer. We had no swiss so i used cheddar. The dijon.fresh parsley .Cheddar cheese and buttery flavors were great.

I made this recipe and my family loved it. Thinking about making it tonight. I didn't use Swiss cheese or the poppy seeds. I didn't have any problems with it being soggy though.

Way too many adjustments needed. Too much ham, too much cheese, too much butter, not enough baking time. Waste of time and expensive ingredients.

I read what several other said about these being soggy so I only used 6 slices of cheese (1-1/2 slices per roll), 3 super thin slices Virginia ham per roll and very little butter/garlic mixture. I also cut each roll into 4.  Baked on a 9 x 13 baking sheet with space between each.  They turned out just fine.  Would make them again if my family likes them.

I cooked them for 20 minutes and they never got crispy mmm mushy just how NO ONE LIKES THEM

I made these today and left out the dijon mustard and only added parsley and poppy seeds to some of the rolls since I have a very picky 11 year old. I also noticed that they were not ready at 15 mins. So I left them in for about 15 more mins. and that did the trick. I did leave a small space in between the rolls, they were pretty tasty.

What would be the best way to reheat refrigerated leftovers? I don't like using the microwave to reheat ham. It dries out. 

Should I pop them back in the oven at the same temp. they baked in for a few minutes?

Just made these last night, shared with a neighbor......wonderful.....but didn't use poppy seeds, and used TWO cookie sheets, so they were spread out better, came out really crisp. Will make these again!! HINT: use quality swiss and ham

Hi it’s delicious looking and I’m going to try it and I hope it taste real good with a glass of wine with a bunch of friends in the afternoon between lunch and shopping and getting together and enjoying the day Irene

These were tasty, but 350 degrees won’t bake them in 12-15 minutes. I had to leave them in the oven for several minutes longer in order for them to get golden and not mushy. I will try 375 next time. Flavor was great, but I agree with previous reviews that you don’t need 4 T. butter. Could easily get by with 2. I’m giving them 4 stars because of the wrong baking temp.

Velveeta cheese, sliced

butter (two sticks), divided

oz imitation crab meat

white bread (the cheap stuff!)

Sesame Seeds

In a medium bowl, melt cheese and ½ cup butter. Stir until fully combined.

Break crab into small pieces. Add to the butter mixture and stir.

Cut the crust off of the bread slices and roll out with a rolling pin until completely flattened.

Spread a line of the crab mixture across the flattened bread slice and roll tightly.

Place rolls in a prepared 9x13 baking dish and refrigerate for a minimum of 1 hour.

Remove dish from fridge and cut each roll in half.

Dip each roll in the remaining melted butter then place back in baking dish seam down. Sprinkle sesame seeds across top.

Broil on medium high for 3-5 minutes or until golden brown.

Veggie Pizza Roll-Ups

(8 ounce) cream cheese (softened)

broccoli

cauliflower

carrots

red pepper

(8-inch) flour tortillas

In a medium bowl beat together the cream cheese, sour cream, and ranch dressing mix until smooth.

In a large bowl combine the broccoli, cauliflower, carrots, and red pepper. Mix to combine.

Evenly divide your cream cheese mixture (about 1/3 cup each) onto your six tortillas. Spread into an even layer leaving about a 1/2" boarder clear around the edges.
