In a food processor, process fresh garlic until minced. Add fresh parsley and fresh cilantro and pulse until uniformly chopped. Add in remaining ingredients and pulse until well combined. Transfer to an airtight container and keep in the fridge.

Mushroom Sauce for Steak

Melt butter in a skillet over medium-high heat.

Stir in mushrooms and garlic. Saute 3-4 minutes until mushrooms are browned.

Stir in broth, cream, dijon, worcestershire, salt, and pepper. Continue to stir periodically for 5-8 minutes until liquid is reduced and thickened and creamy.

Taste, add salt and pepper if needed. Serve over steak and top with additional cracked black pepper if desired - enjoy!

Blue Cheese Sauce Recipe

banana shallot

minced garlic

150 ml (½ cup + 2tbsp) double (heavy) cream

tsp black pepper

Melt the butter in a large frying pan over a medium heat.

Add the chopped shallot and fry for 3-4 minutes, until softened.

Add the minced garlic and cook for a further 1 minute.

Add cream and Stilton, and heat over a low heat, stirring often until the Stilton melts and the sauce thickens slightly. This should take about 5 minutes. You can help the Stilton to melt down easier by crushing it with the back of your spoon when stirring.

Stir in the Worcestershire sauce and pepper.

You can serve right away, it let it continue to cook over a low heat (stirring often) for a few more minutes if you would like the sauce to thicken up further.

Prep. Finely chop enough onion to create 1/2 cup (57.6g). Mince the garlic.

Cook. In a saucepan, whisk together all the ingredients, bring to a boil, reduce the heat, partially cover, and gently simmer until the sauce is thick, chunky, and very aromatic, about 45 minutes.

In most recipes you soak dried mushrooms first, but much of their flavor is lost in the water (notice how it turns brown?). For this recipe, you do not need to soak the mushrooms first. They will soften and give up their flavor in the sauce while it simmers, and nothing will be lost in the soaking liquid.

Pass it through a fine-mesh sieve to remove the solids.

Serve. Chill then serve or refrigerate for up to 2 months.

Creamy peppercorn sauce has a lovely rich warmth to it that goes so well with a juicy steak. Ready in 10 minutes!

Peppercorn Sauce Recipe

tsp black peppercorns

½ tbsp sunflower oil

shallots (peeled and chopped finely)

salt

brandy

180 ml (3/4 cup) beef stock

120 ml (1/2 cup) double (heavy) cream

Place 3 teaspoons of the peppercorns in a zip-lock back, and roughly crush with a rolling pin (or use a pestle and mortar if you have one). Don’t bash too much – we want a bit of texture, rather than a fine powder. Put to one side.

Add the butter and oil to a frying pan and heat over a medium heat.

When the butter has melted, add the shallots, salt the crushed peppers from earlier and the remaining 1 teaspoon of whole peppercorns. Cook for 2-3 minutes until the shallots are just starting to soften.

Add the brandy to the pan, bubble for 1 minute, then add in the stock and Worcestershire sauce. Bring to the boil and simmer rapidly for 5 minutes until reduced by half.

Stir in the cream (if you have any juices from resting your steak, add them to the pan now too). Bring back to a simmer, then turn off the heat.
