Preheat oven to 350 degrees F. Butter a 9x13'' pan. 

Add crumbled sausage into a large casserole frying pan over medium heat. 

Brown for 2-3 minutes, breaking into small pieces, and then add the celery, onions and garlic.&nbsp;

Cook until onions are translucent and then stir in the mushrooms and grated apple. Cook for 1-2 minutes and add the cubed stuffing mix.&nbsp;

Toss to combine. Slowly add the chicken broth and toss to combine. Fold in pecans and cranberries.&nbsp;

Transfer mixture to prepared 9x13'' pan and cover with foil. Bake for 10 minutes. Remove foil and bake for 10 more minutes.&nbsp;

Heat oven to 350-375°F.

Cook the onion and celery in 2 Tbsp butter until softened. Remove from the pan and set aside.

In the same pan, cook the mushrooms in 2 Tbsp butter until browned.

Toss the cooked veggies and mushrooms with the parsley and seasonings in a large mixing bowl. Add the sausage and stuffing.

Add the stock and mix in eggs. Transfer mixture to a 13x9 baking dish sprayed with cooking spray, and cover with foil.

Bake 30 minutes at 350-375°F. Remove foil, and bake another 30 minutes.

A day or two in advance, make the skillet bread and cube into 1/2 inch pieces.  Preheat oven to 200F.

Spread bread cubes on a large baking sheet and bake 2 to 3 hours, until well dried and crisp.  Let sit out overnight to continue to dry.

Heat a large skillet over medium heat and add sausage; sauté until just cooked through, about 6 minutes, breaking up large chunks with a wooden spoon.

Using a slotted spoon, transfer sausage to a large bowl.  Add celery, onion, garlic, sage, salt and pepper to skillet and sauté until tender, about 5 minutes.  Add to sausage.

Preheat oven to 350F and butter a large 13x9 inch glass baking dish.  Add cubed bread to sausage mixture.  Add chicken broth and toss to combine.

In a medium bowl, whisk eggs with cream and pour over mixture in bowl.  Toss until well combined and transfer to prepared baking dish.  Bake 35 minutes, uncovered, until top is crusty and browned.

Traditional Sausage Stuffing Recipe

Preheat oven to 425 degrees. Lightly grease a 9x13 pan.

Heat a large skillet over medium high heat. Add in ground sausage and cook until browned, about 5 minutes.

Add in onion and celery and saute until onions are soft and translucent, about 5 to 7 minutes, and sausage is cooked. Add in butter and allow it to melt.

Whisk in flour until all white specks disappear and cook 2 minutes. Pour in the chicken broth, season with salt and pepper, and whisk to combine. Bring to a boil. Once boiling the mixture will thicken quickly. Once it thickens remove from heat and set aside.

In a small bowl whisk together the egg and heavy cream. Set aside.

In a large mixing bowl mix together the stale diced bread*, dried cranberries, and fresh herbs. Slowly pour the cream mixture over it and stir to moisten everything. Then pour the chicken broth and sausage mixture over and stir to combine. Immediately transfer it to the prepared 9x13 pan and spread it out in an even layer.

Bake at 425 degrees for 30 minutes, until the top starts to brown. Serve hot.

Melt 1 tablespoon of the butter in a large pan over medium heat. Add the sausage and cook for 5-6 minutes or until done, breaking up the meat with a spatula.

Add the remaining 7 tablespoons of butter, onion and celery to the pan. Cook for an additional 4-5 minutes or until vegetables are tender.

Add the garlic and cook for 30 seconds.

Place the bread cubes in a large bowl. Add the sausage mixture, chicken broth, eggs, sage, parsley and salt and pepper to the bowl.

Gently stir until everything is well combined. Pour the stuffing into the prepared pan.

Bake for 60 minutes. If the top starts to get overly browned before the cooking time is over, then cover the pan with foil.

Remove from the oven. Sprinkle with additional parsley, then serve.

Cut and Dry Bread Cubes. With a sharp serrated knife cut the loaf of bread in 1/2” cubes using 3-4 pieces of bread at a time.  Try not to smash the bread too much as you cut. Spread bread cubes out onto a baking sheet to dry out. Leave them on your counter for 2-3 days, OR set your oven to 200 degrees F and place them in the preheated oven for 1-2 hours to dry, tossing them occasionally.

Chop veggies. Finely dice the onion and celery. Grate the carrot and squeeze it out tightly inside a paper towel.  Mince the parsley and sage.

Cook Sausage. In a saute pan, brown the sausage breaking it into small pieces as it cooks. Drain the sausage well and pour it onto a paper towel to soak up any excess grease.

Cook veggies. In a large sauté pan melt the butter on medium heat. Add the onions and celery and cook for 2-3 minutes until translucent. Add the carrots and cook for 2 more minutes. Add the sage and gently stir in, allowing the sage to wilt and release its flavor.

To a large mixing bowl: Add the dried bread cubes. Sprinkle the fresh parsley on top, and add the cooked and drained sausage. Toss to combine. Pour sauté pan with the butter and veggies over the dried bread cubes and sausage and toss to combine.

SLOWLY add chicken broth. Start with 1 1/2 cups of the chicken broth and drizzle it very slowly all over the bread mixture, stirring gently as you go. It is important not to pour the liquid in all at once or it will make soggy spots in the bread. Add more chicken broth as needed, until all of the bread is lightly moistened, but the mixture is not overly wet. Season with salt and pepper, to taste.

Add to casserole dish. Pour stuffing into a greased 9x13 inch pan or similar size casserole dish.  Cover with tinfoil.

Bake at 350 degrees F for 30 minutes. Uncover and bake an additional 10-15 minutes.

Store leftover stuffing in an airtight container in the refrigerator for 3-4 days.

Add onion, celery, rosemary, sage, thyme, salt and pepper to skillet and cook over medium heat, stirring frequently, until onions are translucent.

Place dried bread cubes in a very large bowl. Add sausage, onion and herb mixture, apple, cranberries, eggs, 2 cups of stock or broth and 4 tablespoons of melted butter. Mix until combined.

Pour into a greased 9x13 baking dish and press down lightly. Cover with foil and bake for 45 minutes.

Remove stuffing from oven and remove foil. Check consistency of stuffing. Add additional stock as needed and drizzle with the remaining 4 tablespoons of melted butter.&nbsp;

Return stuffing to the oven, uncovered, and continue to bake for an additional 15 to 25 minutes or until stuffing is lightly golden brown on the top.

Top with additional fresh herbs and serve immediately.

To make the stuffing, melt the butter in a large non-stick pan, add the onions and gently cook for 10-15 mins until very soft. Stir in the sage for 1 min, then tip into a large mixing bowl. Pulse the chestnuts in a food processor until chopped into small bits, then tip these into the bowl with the onions and repeat with the hazelnuts. Add the breadcrumbs, mace, beaten egg, 1 tsp salt and some pepper, and mix everything together well.

Tear off a very large sheet of foil. Smear the butter in the middle, making a rectangle about 30 x 40cm. Lay the bacon rashers over in a row, overlapping a little. Use a rolling pin to slowly but firmly roll down the length of the bacon strips to stretch them a bit. Shape the stuffing into a log along the rashers. Using the foil to help you, roll up the stuffing so that it is completely wrapped in the bacon. Overwrap with the extra foil and twist the ends to tighten and seal. If it’s not very round, give it an extra roll or two on your work surface. Chill until ready to roast. Can be made up to 2 days ahead and kept in the fridge.

To cook, bake at 200C/180C fan/gas 6 (when you turn up the heat for the turkey) for 30 mins. When the turkey comes out, turn up the heat to 220C/200C fan/gas 7, unwrap the stuffing and continue to cook for 30 mins more until crisp. Keep warm, then slice and serve with sage leaves fried in butter, if you like.
