Heat the oil in a large skillet over medium heat. Add the broccoli, garlic, salt, and several grinds of pepper and sauté for 3 to 4 minutes. Add 2 tablespoons water, cover, and cook until the broccoli is tender, 2 to 4 more minutes.

Turn off the heat and add a squeeze of lemon juice and a pinch of red pepper flakes, if using. Season to taste with more salt and pepper.

Simple Sauteed Broccoli

Chop the broccoli into medium sized florets (leave a good amount of the stem for a nice shape; see the photo). Thinly slice the green onions.

In a large skillet over medium heat, heat the olive oil. Add the broccoli florets and sauté for 5 minutes, stirring occasionally (the broccoli will lightly brown in parts). Stir in the green onion, Italian seasoning, garlic powder, and kosher salt.

Cover and cook for 2 to 3 minutes more, until crisp tender but still bright green. Taste and add a few pinches of salt if needed (make the flavor pop!) and fresh ground pepper. Remove the broccoli to a bowl and serve immediately. Sprinkle with the lemon zest, if using.

In a medium skillet with a lid, heat the olive oil over medium high heat, then add the garlic (1 teaspoon for a milder garlicky flavor, 2 teaspoons for a full-on garlicky flavor) and swish it around for about 30 seconds until you can smell it.  Add the broccoli and stir and toss to coat with the oil.  Season with salt and pepper, add 1/4 cup of water, cover the pan, and steam until the water is evaporated and the broccoli is tender.  Sprinkle with the red pepper flakes if desired. Serve hot.

Easy Sauteed Garlic Broccolini

Rinse and pat dry the broccolini.

Cut off the bottom third of the broccolini and discard. Set broccolini aside.

Melt butter in a skillet set over medium-high heat.

Once butter is heated, add broccolini to the butter and saute for 5 to 6 minutes, or until bright green and stems are lightly browned. Stir occasionally.

Season broccolini with salt and pepper.

Stir in garlic and toss around to coat.

Add water to the skillet; cover and cook for 1-½ to 2 minutes, or until broccolini is crisp-tender.

Transfer broccolini to a plate.

Garnish with parsley and lemon zest; serve with lemon wedges.

15-Minute Sauteed Broccoli with Garlic and Parmesan

Place a large (12-inch) nonstick skillet over medium-high heat until the pan is hot.

Add the olive oil, broccoli and salt to the pan. Arrange the pieces in one layer on the bottom of the pan as much as possible — this will help them sear better.

Cook the broccoli without stirring 5-8 minutes, until the broccoli is nicely browned on one side. Shake or stir the broccoli around and lower the heat to medium.

Add the water, garlic and chili flakes. Cover the pan and cook 5 minutes, or just until the broccoli is bright green and the stalks can be pierced with the tip of a sharp knife.

Transfer the broccoli to a serving dish. Squeeze the lemon wedges over the broccoli and sprinkle with the grated cheese.
