Scalloped potatoes cooked in buttery stock the pressed and baked in butter for this popular French side dish.

Crispy Potatoes Pavé

1.5 kg potatoes (such as Maris Piper)

g butter

garlic (minced)

80 ml chicken (or vegetable)

tbsp thyme leaves (chopped + extra for garnish)

Grease and line a 20cm loose bottom cake tin

Melt 50g of butter in a saucepan and add the garlic for 1 minute. Add the thyme.

Peel the potatoes  then slice in a food processor on the thinnest setting.

Layer the potatoes in the tin evenly adding the buttery stock from time to time.

Cover with foil and cook 180 for 1 hour or until completely tender.

Leave to cool then fold the foil in half. Add two pieces of cardboard or a tin that fits and weigh down with more tins.

Refrigerate overnight.

Cut into 12 pieces and place on baking paper or a silicone mat.

Melt the butter and brush the potatoes.

Roast 200 C  for 40 minutes then add thyme sprigs if using. Roast for a further 10 minutes.

Start by taking out your jar of sauce and add the cream, garlic and thyme. Cook over medium heat until it heats up. In the meantime, start cutting your potatoes into thin slices. It takes a little time, but your patience will pay off as you dig these delicious potatoes.

Preheat your oven to 375 degrees. Butter your baking dish. I like to use a classic pie dish for this, and I&#039;m going to use about four layers on the thinly sliced potatoes, so use your judgment. Add a layer of potatoes on the bottom, overlapping the pieces slightly. Sprinkle with salt, pepper and parmesan, then add a little hot cream on top. Repeat the process three more times. Garnish with about half a cup of grated Parmesan cheese, making sure to cover the top of the potatoes.

Place in a preheated oven for about 50 to 55 minutes, or until the sauce is bubbling and the top is golden brown. Remove from the oven and let stand for about 10 minutes before digging in. This will allow the cream to thicken and won&#039;t burn your mouth when digging in. I know it&#039;s hard to resist, but waiting pays off.

The creamy, garlic and excellent parmesan cheese make these scalloped potatoes a great combination that can stand on its own for a late night snack, but goes really well with a baked ham.

This Vegan Scalloped Potatoes is made with vegan sausages, making it the perfect comfort food dinner. You will only need 6 ingredients to make this creamy heaven!

Vegan Scalloped Potatoes with Sausages

potatoes ((1 kg))

vegan plain yogurt

sausages

tbsp oil

tbsp salt

tsp pepper

Cut the potatoes into thin slices and cook them in salted water (1 tbsp salt) for approximately 30 minutes.

While the potatoes are cooking, cut the vegan sausages as well.

Mix together the sour cream, oil, salt and pepper.

In a clear glass oven dish, start layering the ingredients. First the sour cream mixture, then 1 layer potatoes, sour cream, 1 layer sausages, sour cream and so on. The last layer should be sour cream. Drizzle some oil on top.

Preheat your oven to 400° Fahrenheit (200° Celsius) and bake the scalloped potatoes for about 1 hour. (The top and edges should be golden brown.)

When it's done baking, let it cool for a while and serve with dill pickles.

Instant Pot Scalloped Potatoes

potatoes

oz sliced deli ham

heavy whipping cream

garlic

all-purpose flour

cheddar cheese (shredded, divided)

Thinly slice the potatoes and cut the ham into small squares.

In a medium bowl whisk together the heavy cream, milk, garlic, flour, salt, black pepper and cilantro.

Spray a round pan that can easily fit inside your pressure cooker (I used 8" round with 2" high sides) with non stick spray. Layer half of the potatoes and ham in the round pan, followed by half of the cheese. Pour half of the liquid over the top. Repeat with the rest of the potatoes, ham and liquid, reserving the remaining cheese for later.

Pour 1 1/2 cups of water into the liner of your pressure cooker and place the round pan on top of your trivet. Carefully lower your pan down into the liner of your pressure cooker. Close the lid and ensure the pressure release valve is closed as well. Cook on HIGH pressure for 25 minutes, followed by a QUICK RELEASE of the pressure.

Carefully pull the pan out by the trivet handles and place pan on a baking sheet. Top with the remaining cheese and place under the broiler in your oven for 3 minutes. (Or if you don't want to turn on your oven you can just leave the potatoes in the pressure cooker, top with cheese and cover for 5 minutes before removing from liner).

Let the potatoes sit for about 5 minutes before serving. Enjoy!
