This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

Crack the eggs into a small bowl and beat to combine.

Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3–4 minutes.

Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2–3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.

Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.

Perfect Scrambled Eggs

Crack the eggs into a small bowl and whisk together until very well combined. Add salt and pepper. (Start with about 1/4 teaspoon salt.)

Put a medium-sized nonstick skillet over medium heat and add the butter. Swirl the butter around until melted completely, then reduce the heat to medium low. Add the eggs. Use a spatula to stir the eggs around the pan. It may take a few minutes before the eggs start to form curds. Use the spatula to push and fold the eggs over on themselves, being sure to push the liquidy parts of the egg to make contact with the skillet. Stir frequently. Once the eggs are mainly set but still wet, remove the pan from the heat. Then continue to stir until they are done to your liking*. Serve immediately.

My go-to low FODMAP breakfast is an egg scramble filled with roasted potatoes, leafy greens, and turkey sausage crumbles. With a little prep work, you can have a satisfying morning meal in less than 10.

My Go-To Low FODMAP Breakfast

butter (I use ghee)

cooked Low FODMAP Breakfast Sausage crumbles (instead of patties)

leftover Low FODMAP Roasted Potatoes

Salt and pepper

Melt butter in a large frying pan over medium-high heat. Add sausage crumbles and potatoes. Cook 3-5 minutes or until warm.

Add leafy greens and cook 2-3 minutes or until the greens are just starting to wilt.

Add eggs. Using a silicone (heat-resistant) spatula, scramble the eggs into the potato mixture. Once the eggs are cooked, about 1-2 minutes, remove from heat. Season with salt and pepper.

Air Fryer Tofu Scramble and Home Fries

535 g yellow potatoes (cubed)

tbsp (1 tbsp) steak spice seasoning

mL (1 tbsp) oil

400 g (1 block) extra firm tofu

yeast

g (2 tsp) chili lime powder*

g (2 tsp) steak spice seasoning

22 mL (1½ tbsp) oil

g (1 tsp) turmeric

g (¼ tsp) black salt

mL (¼ tsp) liquid smoke

spinach (to taste)

cremini mushrooms (to taste)

cherry tomatoes (to taste)

Prep Potatoes

Peel and dice potatoes into small cubes. Add to a bowl and drizzle with oil to coat. Sprinkle on steak spice and toss until evenly coated.

Cook Potatoes

Cook the prepped potatoes in air fryer at 360°F for 20 minutes with rotating paddle in or tossing the potatoes halfway through if your air fryer doesn&#039;t have a paddle.

Prep Seasoning

In a small bowl, mix together oil, liquid smoke, nutritional yeast, chili lime powder, steak spice, turmeric, and black salt. Stir to combine.

Prep Tofu

Crumble the tofu into a large bowl and pour the seasoning mixture on top, tossing until it’s all evenly coated.

Cook Tofu

Once the potatoes are cooked, add in the crumbled tofu. Cook for another 10 minutes, tossing halfway through if your air fryer doesn’t have a paddle. Once the potatoes are golden brown and crispy, the scramble is done.

Serve

We&#039;re serving with some sautéed spinach with roasted tomatoes and mushrooms. But you can serve as is or with whatever other ingredients you want.

EASY POTATO RECIPES | Crispy Roasted Potatoes & Air Fryer Scramble

The quickest and healthiest meal you will have in 15 minutes! It brings together the richness of tofu, complemented by a vibrant ensemble of Kale, broccoli, tomatoes, and an array of seasonings. It&#39;s a dream come true for those looking to add plant-based and protein-rich meals to their diet without compromising on flavor.

Quick Tofu and Greens Scramble

tomato (diced)

CUPS Broccoli florets

Make sure to squeeze the excess water from the previously frozen tofu. You may actually squeeze it with your hands very easily as it is like a sponge after freezing. Once excess water is removed, crumble the tofu into small peices.

On medium heat, warm the pan with oil breifly before adding tofu to the pan. To get a nice sear on the tofu I recommend not stirring or moving it for 3 minutes.

After the first stir, make a small space in the pan by moving the tofu aside to add the garlic. Cook for 2-3 minutes without stirring until it is fragrant. Resist the urge to stir continually. Tofu has a much better texture when it is allowed to sear properly and it will only sear by having prolonged contact with a hot surface.

Now add the seasonings and tomatoes and cook for 3 minutes.

add broccoli, stir into cooking scramble, then add the kale, the water and cover the pan. Set the timer for 4 minutes. Do not open the pan for 4 minutes. Whhen the timer goes off, uncover the scramble and stir it. I like my kale to have some textural integrity so for me this is a good ready point. If you like your kale softer, simply stir and cook covered for an additional 2-3 minutes.

Serve with sliced avocado and chili flakes for some heat.

The ultimate savory plant-based breakfast.  Tofu scramble is simple to make, gluten-free, packed with protein, and fully customizable.

Basic Tofu Scramble (6-Ingredients + Gluten-Free)

tofu,

garlic,

nutritional yeast

turmeric

kala namak (Indian black salt

In a medium skillet over medium-low heat, add in the oil. Once heated, add the onions and garlic, and sauté for 3-4 minutes or until fragrant and translucent.

Push the onions and garlic to the side of the pan and add in the nutritional yeast. Toast over medium heat for about 1 minute, mixing often to prevent burning.

Using clean hands, finely crumble the tofu into the pan and mix until well combined. Evenly sprinkle the turmeric over the mixture and mix until the turmeric is well coated and the tofu has turned yellow, like eggs. Cook for 3-5 minutes more, or until the egg mixture has dried out to your desired consistency.

Remove the scramble from heat and mix in the kala namak. Adjust seasonings to taste and serve warm. Enjoy!

This recipe is magic! It tastes just like scrambled eggs to me but it’s even better because it’s cruelty free and has a much more appetizing  texture! So delicious and easy.

This Creole spiced skillet meal is an easy one-pan wonder that promises a delicious Creole dinner in just 30 minutes! Quickly cooked pinto beans and pearl couscous with pan-seared cauliflower, red onions and bell peppers, cherry tomatoes, cilantro, and green onions. Serve with salsa, avocado, and fresh spinach, and watch your non-vegan guests fall for it.

Creole Spiced Skillet Meal

Heat pan with oil over medium and add the onions and garlic, cook for 3-4 minutes stirring occasionally until fragrant

Add the cauliflower, bell peppers, salt and smoked paprika and cook for 6-8 minutes until cauliflower gets some color and bell peppers are getting soft

Add pinto beans, cous cous, water, and creole seasoning and cover, bring to a boil and lower heat. SImmer for 10 minutes until cous cous has absorbed the water.

Last, toss in the cherry tomatoes, cilantro and green onion.

I made it just as it was written and it was absolutely delicious! I should’ve made more. I will double it next time!

This tasty vegetarian tofu scramble has Mexican flavours to give it a boost of warmth and spice

Smoky paprika tofu scramble

frozen shelled edamame beans, thawed

firm Japanese tofu (I used Morinaga)

salt-reduced soy sauce

½ cup salt-reduced vegetable stock

tomato passata

rocket leaves

corn tortillas

chilli sauce (we used chipotle)

1 Spray a large pan with oil and set over a medium-high heat. Add spring onion and garlic and cook, stirring, for 2 minutes. Add corn and edamame and stir to combine, then crumble in tofu and spices. Cook, stirring gently, for 2 minutes.

2 Add soy sauce, stock and passata. Cook a further 3-4 minutes, until sauce reduces slightly. Add rocket leaves and cook until just wilted.

3 Warm tortillas, and serve scramble with tortillas, garnished with chilli sauce and coriander.
