Easy One Skillet Lasagna

olive oil

onion (finely chopped)

23 oz pasta sauce

Tbs Italian Seasoning

cottage cheese

flat-leaf parsley

salt and pepper (to taste)

lasagna noodles

Heat oven to 400 degrees F.

Heat the oil in a cast-iron skillet over medium heat. Add the onion and saute 5-6 mins til onion is soft, add the garlic and cook a further minute.

Add the ground beef and cook 4-5 mins until no longer pink.

Add the pasta sauce and Italian Seasoning and simmer, stirring occasionally around 5-6 mins.

Transfer 2/3 of the meat sauce to a bowl, leaving 1/3 the sauce in the skillet

Lay half the noodles over the sauce in the skillet, spoon half the cottage cheese mixture over the noodles, sprinkle 1/2 cup of mozzarella, then repeat with sauce, noodles, cottage cheese,1/2 cup mozzarella and last 1/3 of the sauce.

Cover the pan tightly with foil and bake until the noodles are tender, 25 to 30 mins.

Remove from the oven, and let it rest a few minutes - broiling the top if desired.

Garnish with chopped parsley.

Ricotta cheese

Add the ground sausage to a large skillet and cook over medium heat while stirring.  Once the sausage is mostly cooked add the diced onion to cook.

When the onion is translucent and soft and sausage is cooked through add the minced garlic.  Cook for an additional 30 seconds.

Add the tomato sauce and diced tomato to the skillet.  Stir to combine.

Add seasonings and stir.  Break the lasagna noodles over the skillet and add to the sauce.  Press the noodles down as much as possible into the sauce.  Cover the pan and allow to simmer over medium heat for about 15-20 minutes stirring occasionally.

Once the noodles are softened add in a cup of mozzarella cheese.  Stir to combine.

Serve and top with additional mozzarella cheese, ricotta cheese, and fresh parsley.

This skillet lasagna recipe is a fast and delicious meal that only takes an hour to bake. As a bonus,&nbsp; you can freeze the leftovers and enjoy this iron skillet lasagna down again and again!

turkey Italian sausage

medium size shells

tomato paste

Preheat oven to 350 degrees F.

Using large oven safe skillet, heat oil over high flame.

Brown sausage, reduce heat and add onion and garlic, saute till soft and translucent.

Add tomato sauce and paste along with wine and seasoning to pan of sausage and stir well while simmering.

Meanwhile, prepare pasta in boiling water, as directed on package.

While pasta is boiling, combine ricotta cheese, spinach, and egg in small mixing bowl. Mix together thoroughly.

Transfer sausage and sauce to large bowl, reserving skillet.

Remove pasta from heat when done, and drain thoroughly.

Take about a half cup of sauce and coat bottom of skillet.

Place drained pasta shells in skillet and distribute evenly.

Spread ricotta mixture over shells, using the back of a wooden spoon to spread evenly.

Pour sausage and sauce mixture on top of ricotta, spread evenly.

Sprinkle mozzarella over sauce.

Bake for 1 hours.

Remove from oven and allow to set for 15 minutes prior to serving.

Kale and Artichoke Skillet Lasagna 

spicy pork sausage

kale leaves (I like lacitano kale)

(15 ounce) can artichoke hearts, coarsely chopped

oregano

red pepper flakes,

red wine, (optional – chicken stock

(28 ounce) can crushed tomatoes

sugar

water

(a 9-ounce box) lasagna noodles

whole milk ricotta cheese

Place a rack in the upper third of the oven and preheat oven to 375 degrees F.

Heat an ovenproof 10-inch skillet over medium heat. Add olive oil and sausage. Break up the sausage as it browns. Brown until deeply golden and crispy. Add onions and cook until onions are translucent, about 6 minutes. Add garlic and cook for 1 minute more.

Add the kale leaves and artichoke hearts and stir around the pan until the spinach wilts.

Add tomato paste, dried herbs, salt, and red pepper flakes and stir for 3 minutes. Deglaze the pan with red wine (or stock or water).

Add canned tomatoes and all of their juices. Stir in sugar. Add water. Taste and season with salt and pepper.

Break up lasagna noodles into the mixture, stirring to coat. Cover and bring to a simmer. Simmer until noodles are al dente, about 12 minutes. Remove lid and stir occasionally to ensure noodles don’t stick together. Add a few tablespoons of water if the mixture seems too dry.

Once the noodles are al dente, remove the lid and stir in the mozzarella cheese. Dollop seasoned ricotta over the top of the lasagna. Place in the oven and bake until the cheese has melted, about 6 minute. Remove from the oven and enjoy warm. Store leftover in the refrigerator for up tot 4 days.&nbsp;

Classic lasagna made in a 12 inch cast iron skillet. This recipe features a meat sauce, mozzarella and ricotta filling, and a final layer of broiled fresh mozzarella.

Skillet Lasagna Recipe

lasagna noodles (1 box)

mozzarella,

85% beef

sweet Italian sausage

yellow onion, diced

marinara sauce (2 24 ounce jars)

2 tablespoons tomato paste

parmesan cheese

fresh parsley, chopped

Preheat oven to 350°F. Bring a large pot of salted water to a boil. Cook lasagna noodles for 8 minutes, strain, rinse with cool water, and set aside.

Meanwhile, combine ricotta filling ingredients in a bowl and mix well. Set aside.

Heat oil over medium heat in a 12 inch cast iron skillet. Cook onions until softened, about 4 minutes. Add beef and pork and cook until browned and no longer pink. Use the tip of a spatula to break up the meat into very small chunks. Discard the fat and add the marinara, garlic, and tomato paste. Simmer for 5-7 minutes until thickened.

Transfer the meat sauce to a large bowl, reserving about one cup in the skillet. Evenly spread to coat the bottom of the pan. Top with a layer of noodles without overlapping. Trim the noodles with a knife or scissors to roughly fit the circular shape (it does not need to be perfect). Layer with 1/3 of the ricotta filling and 1 heaping cup of meat sauce. Repeat twice more.

Finish lasagna with a final layer of noodles and another layer of sauce. Cover with aluminum foil and bake for 45 minutes.

Remove from oven, top with fresh mozzarella cubes, and return to the oven uncovered for another 15 minutes. Broil for the last 1-2 minutes to give the cheese a nice bubbly finish.

Let rest for 15 minutes before cutting so the lasagna can set. Garnish with fresh chopped parsley and serve.

Bring sauce to a simmer and stir in pasta and water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.

Remove from heat. Stir in parmesan and mozzarella cheese.&nbsp;

Spoon a few scoops of ricotta on the top, and cover for a few minutes to allow the cheese to warm.&nbsp;

Top with fresh basil. Serve immediately.

This stovetop, one-pan Skillet Lasagna with Spinach and Mushrooms is packed with delicious flavors from hearty tomato sauce, plant-based ground meat, spinach, mushrooms, lots of spices and ricotta cheese.

Skillet Lasagna with Spinach and Mushrooms

olive oil (extra virgin)

oz package baby bella mushrooms (sliced)

lb plant-based ground meat (or ground beef, chicken

salt + black pepper (to taste)

herbs de provence (or Italian seasoning)

24 oz jar pasta sauce

worcestershire sauce (optional)

balsamic vinegar (optional)

brown sugar (optional)

noodles

baby spinach leaves (packed)

basil leaves (for garnish)

Heat olive oil in a large, deep skillet over medium-high heat. I used a 12-inch cast iron skillet.

Add onion and mushrooms and cook until onion begins to soften, about 2-3 minutes. Add garlic and cook until fragrant, about another minute.

Add plant-based ground meat and break up with a wooden spoon. I used Impossible Foods Plant-Based Meat. You can also use ground beef, turkey or chicken.

Season meat and veggies with salt, black pepper, garlic powder, herbs de provence or Italian seasoning and red pepper flakes. Cook until meat is browned, stirring regularly. Drain excess fat if necessary.

Add pasta sauce, water, worcestershire sauce, balsamic vinegar and brown sugar to skillet and stir to combine. Add lasagna noodles and give everything another good stir. Season with more salt and pepper to taste.

Lower temperature to medium-low and simmer until noodles have reached al dente and sauce has thickened, stirring occasionally. This should take 15-20 minutes. Add additional cooking time as needed until lasagna noodles are cooked to your liking.

Once pasta is cooked to your liking, add spinach and cook until wilted. Remove the pan from heat and top with shredded mozzarella. Add dollops of ricotta on top of lasagna. Garnish with fresh basil if desired and enjoy!

Bring a large pot of water to boil. Salt the water and stir in pasta.

While pasta is cooking, heat a very large skillet to medium-high heat. Break meat apart in the hot pan and cook until brown. Stir in onions, garlic,&nbsp;and zucchini. Saute 5-6 minutes or until onions are tender.

Stir in pasta sauce, water and seasonings. Simmer until pasta is done.

Cook pasta until al dente (according to package instructions for al dente). Drain and immediately return pasta to cooking pot.

Stir in butter, ricotta cheese, and mozzarella cheese until well incorporated and cheese starts to melt. Remove bay leaf from pasta sauce. Pour the entire pot of pasta into the hot sauce and stir to coat everything thoroughly. Top with more cheese if desired and serve hot topped with a bit of fresh parsley.

Break up pasta and toss into the skillet.   Cook for approximately 15 to 20 minutes, or until the pasta cooks.  If the liquid cooks out, you may need to add an additional 1/4 to 1//2 cup of water.  Add ricotta cheese.   Stir in cheese if desired.  You can top with additional cheese.
