This easy recipes for slow cooker carnitas is always a win. Robust spices rubbed into the meat create incredible flavor as the meat slow cooks over several hours. The resulting meat can be used in many dishes including Carnitas Tacos.

Pineapple Citrus Slow Cooker Carnitas &amp; Carnitas Tacos

Yellow Onion (peeled, quartered and layers separated)

Garlic Cloves (peeled)

Cumin

Chili Powder

Oregano

Kosher Salt

Black Pepper

Cinnamon

Pork Butt or Pork Shoulder (large pieces of fat removed)

Pineapple Juice

Orange Juice

Lime Juice

Corn Tortillas

Red Pickled Onion

Cojita Cheese (crumbled)

Cilantro leaves (torn)

Lime wedges

Line the bottom of a 6 quart or larger slow cooker insert with the onions. Add the garlic cloves.

In a small mixing bowl combine the cumin, chili powder, oregano, salt, pepper and cinnamon. Rub to cover the pork shoulder and place on top of the onions in the slow cooker.

Pour the pineapple juice, orange juice and lime juice into the slow cooker avoiding pouring it onto the pork and displacing the rub. Cover and cook for 8 hours on LOW.

Line a large rimmed baking sheet with foil and preheat the broiler. Move the top oven rack to the second rack position.

Remove meat from the slow cooker (reserve liquids) and place on a cutting board. Using two forks shred the meat. Put the shredded meat onto the prepared baking sheet evenly spreading it into one layer.

Broil for 2 minutes, flip the meat and broil another 2 minutes. Drizzle with ¼ cup of the cooking liquids, toss and broil for a final 2 minutes.

Serve hot. Leftovers can be stored sealed in the refrigerator and are best broiled again for 2 minutes before serving.

Add some of the carnitas to a corn tortilla, with pickled red onion, cojita cheese and torn cilantro leaves. Serve with lime wedge.

pork shoulder ((also known as 'pork butt'))

coarse sea salt

cumin

Cut the pork shoulder into large 4-inch chunks. Place in the slow cooker.

Add the lime juice, salt, ground cumin, chili powder, garlic powder, dried oregano, onion powder and black pepper. Mix thoroughly to coat the meat with all the seasonings.

Cover and cook on high for 4 hours, or on low for 7-8 hours. When tender, shred the meat by pulling it apart with two forks.

Mix in freshly chopped cilantro if desired and serve in tacos, gorditas, tostadas, burrito bowls and salads.

Slow Cooker Instructions

Lock the lid and set the steam release vent to the &quot;sealing&quot; position. Press the &quot;manual&quot; button and set the timer on high pressure for 40 minutes.

When the 40 minutes are up, let the pressure naturally release for 15 minutes. Then manually release the remaining pressure by moving the steam release vent to the &quot;venting&quot; position.

Open the lid and shred the meat with two forks. Mix in freshly chopped cilantro if desired and serve in tacos, gorditas, tostadas, burrito bowls and salads.

Stir

In a small bowl place oregano, cumin, black pepper, salt, and chili powder, then stir together.

Trim any excess fat from the pork shoulder (but remember that some fat is good), then rub the spice mixture generously around the entire pork shoulder and place in the slow cooker.

Cook

Add the onion, minced garlic, jalapeno and orange juice in the slow cooker. Cover and cook on the low setting for 8-10 hours, or high heat for 5-6 hours (until the meat falls apart).

Shred

Remove the pork from the slow cooker to a large cutting board and use two forks to shred the meat. Don&#039;t get rid of the liquid as you will be using it later.

How to Make Carnitas

Place

Place the shredded pork on a baking sheet. Pour 1 cup of the reserved slow cooker liquid over the pork to keep it moist and tender.

Broil

Broil for 5-10 minutes or until the meat becomes golden browned and crispy on the edges.

Carnitas, the Mexican meat of the gods! This Best Slow Cooker Carnitas recipe is loaded with flavor and perfect for making tacos, salads and wraps.

Best Slow Cooker Carnitas

pork butt roast

bacon grease (or oil)

onion,

garlic, (peeled and smashed)

orange juice

liquid smoke

sea salt

ancho chile powder

Smear the bacon grease on the bottom of a large slow cooker. Cut the pork into large chunks and place inside the slow cooker. Then add ALL remaining ingredients around the pork.

Turn the slow cooker on: Low for 8-10 hours, or High for 4-6 hours. Once the pork is fork-tender, use 2 forks to shred the meat into the juices.

If you like your carnitas crispy on the edges (like it's served in restaurants) use a slotted spoon to scoop the meat out of the juices and spread in a thin layer on a baking sheet(s). Place on the upper oven rack and broil for 2-5 minutes, until darker crispy edges form. Do not take your eyes off the broiler, you can burn the carnitas quickly. Serve over rice, taco, or on top of salads!

Trim roast and slice into 1/4 inch thick pieces. Put directly into crock pot (or baking pan).

Add spices

Add in the vegetable oil. Yes, it is a lot of oil, but fear not. If you skimp you won't get the same results.

Toss together

Toss together using hands until evenly coated with spice and oil goodness.

Cook on low setting for 6-8 hours until the meat can easily be shredded with a fork.

Killer Crockpot Carnitas

Slow Cooker Carnitas come together effortlessly in the crockpot with only a handful of ingredients, an inexpensive cut of pork, and a flavorful braising liquid.

Slow Cooker Carnitas

½ lb pork butt

tsp kosher salt (divided)

tsp cumin

tsp black pepper

tsp ground cayenne pepper (optional)

beer ((or chicken stock))

Season

Cut the pork roast into 3-4 inch chunks and season with the pepper and 1/2 teaspoon of salt.

Layer ingredients the slow cooker.

Combine the beer (or stock), orange juice, remaining salt, garlic, cumin, chili, and cayenne together in the slow cooker, and then nestle the pork into the liquid.

Slow cook pork.

Set the crockpot to cook on low for 10-12 hours or on high 5-7 hours. 

Shred meat.

Once cooked, shred the meat with two forks, and mix into the juices that were rendered while cooking.

Broil meat (optional)

For crispy pork, place shredded pork along with 1/2 cup of the cooking liquid onto a rimmed sheet pan and broil until lightly charred.

Serve Carnitas

These slow cooker carnitas are cooked low and slow for perfectly tender meat to pile high on tortillas with lots of extra toppings!

Sweet and Spicy Slow Cooker Carnitas

3.5 lbs pork shoulder, pork butt, or pork blade roast

brown sugar

tsp ancho chile pepper

tsp smoked paprika

tsp white pepper

cilantro

coriander

½ tsp red pepper flakes

oz Coke

oz water (this can be omitted if you like)

oranges (halved)

limes (halved)

corn or flour tortilla

tomatoes

green onions (diced)

avocado (sliced thinly)

cilantro (to taste)

salsa

lettuce

Remove pork shoulder from fridge. Set aside.

In a medium sized bowl combine the brown sugar, ancho chile pepper, smoked paprika, coarse salt, white pepper, dried cilantro, cumin, coriander, and red pepper flakes. Mix well so all the spices combine thoroughly. Carefully rub the entire pork shoulder with the spice rub, making sure to coat all the sides.

Place the pork shoulder in you slow cooker.

Pour the Coke and water around the side of the roast, but not over top of it.

Cut the oranges in half, squeeze the juice out over the roast. Place the pieces inside the slow cooker.

Cut the limes in half, squeeze the juice out over the roast. Place the pieces inside the slow cooker.

Place the garlic cloves in the liquid as well.

Cover and cook for 8 to 10 hours, you want the meat to be moist, and to pull apart easily.

Transfer the meat to a cutting board and pull it apart with two forks.

Place the meat in a large frying pan with a touch of olive oil. Cook over medium-high heat for about 3 to 5 minutes. I find adding just a touch of brown sugar helps to caramelize quickly. The key to great carnitas is having the meat be moist, but the edges crispy. Remove from heat and transfer to a large bowl.

To make Tacos:

Cut up all the toppings ahead of time, with the exception of the avocado. Do that at the last minute so it does not brown before serving.

Heat the tortillas by placing them in a frying pan, one at a time, flipping so you warm each side. Alternately you can warm them in the microwave all at once for about 30 to 45 seconds.

Top each tortilla with meat and toppings of your choice.

Serve with a big old sweet and spicy smile!

Oh wow!  This was awesome and it is family and friends approved! I made this last night (7LBS) and my son (17 yrs old) and his buddies tore through this today! I've made this several times and I can attest that it is awesome!  I scored a bone in pork roast at a deep discount..  I deboned it and froze the bone.  I know what to do with a frozen ham bone.
