Slow Cooker Mexican Street Corn Chowder

chicken breasts

garlic,

chicken stock

(14.75 ounces) fire-roasted corn (or regular canned corn), drained

(4 ounces) fire-roasted diced green chiles, undrained

Spray a large slow cooker with nonstick spray.

Cut each chicken breast into 2-3 pieces so it can cook faster/more evenly.

Add chicken, garlic, chicken stock, creamed cans of corn, fire-roasted corn, black beans, diced green chiles, chili powder, paprika, and cumin to the slow cooker.

Stir well. Cover and cook on high for 3-5 hours or low for 4-6 hours, until the chicken shreds easily.

Remove the chicken and shred. While shredding the chicken add in the freshly grated cheese and heavy whipping cream.

Return the shredded chicken and mix. Season to taste with salt and pepper. Serve with desired toppings.

Gently stir a few times during the cooking process.

If serving immediately, garnish with parsley and add a few squirts of freshly squeezed lemon juice.

Can be stored in the refrigerator for up to one week or for up to three months frozen in individual containers.

Crockpot Garlic Butter Chicken Meatballs with Creamy Orzo

1. Add the chicken, Italian seasoning, dijon, and 1/2 cup parmesan to a bowl. Season with salt, and pepper. Mix to combine. Coat your hands with oil, and roll the meat into tablespoon-size balls (will make 15-16 meatballs). Add olive oil and place the meatballs in the bowl of your crockpot. 2. Pour over the wine and 1/2 cup water. Add the onion and garlic. Cover and cook on low for 3-4 hours or on high for 1-2 hours.2. Preheat the broiler to high. Remove the meatballs and garlic from the slow cooker and place on a baking sheet.3. Crank the heat on the slow cooker to high. Stir in the orzo, and 1 cup water. Cover and cook 20-30 minutes, or until the orzo is al dente. If the orzo needs more liquid, add additional water. Stir in the spinach, sun-dried tomatoes, cream, and 1/2 cup parmesan.4. Arrange the butter and the rosemary around the meatballs and garlic, then broil 1-3 minutes, until crisp. Peel away the garlic skin, then chop and mix with the butter and rosemary on the sheet pan. Toss the meatballs in the butter.  5. Serve the meatballs over the orzo.

Cook 6-8 minutes, until the orzo is al dente. Stir in the spinach, tomatoes, cream, and parmesan.4. Meanwhile, brown the butter on the stove with the rosemary. Chop the garlic and mix with the butter. Stir the butter into the orzo. 5. Serve the meatballs over the orzo.

Add olive oil, then add the meatballs and sear until browned, about 5 minutes. Add 1 chopped onion and 4 cloves chopped garlic. Reduce the heat to medium. Pour in the wine.3. Stir in the orzo and 1 1/2 cups water. Cook, stirring often, another 6-8 minutes, until the orzo is al dente. Stir in the spinach, tomatoes, cream, and 1/2 cup parmesan.4. Serve the chicken over the orzo. Enjoy!

Grease the slow cooker with nonstick spray, add all of the ingredients into the slow cooker stir well. Cook on LOW for 3-5 hours or HIGH for 2 hours.

Place the chicken breasts in the slow cooker.

Pour the condensed soup overtop.

Cover and cook on low for 3-4 hours or until the chicken is shreddable.

Shred the chicken, then add the stuffing mix.

Mix well, cover and cook for 15-20 minutes or until the bread crumbs are moistened.

If you’d like the mixture thinner, add a little bit of chicken broth until it is the consistency you’d like.

Crockpot Chicken and Stuffing

chicken breasts (2 ½ pounds)

cream of chicken soup (10.5 ounces each)

sour cream (122 grams)

white onion

parsley flakes

chicken stuffing mix (6 ounces)

parsley (for garnishing)

Place the chicken breasts in a 6 quart slow cooker liner.

Pour the condensed cream of chicken soup over the chicken breasts.

Add the sour cream and use a rubber spatula to gently swirl the soup and sour cream together.

Sprinkle the diced onion and dried parsley over the top.

In a small bowl, toss together the dry stuffing mix and melted butter. Sprinkle evenly over the top.

Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.

If desired, uncover the last 45 minutes of cooking so that the stuffing firms up a little. It won’t be a “crispy” stuffing topping, but can help the texture. This isn’t necessary though and tastes just as good without.

Season with salt and pepper and serve with mashed potatoes and a vegetable.

Store leftovers in an airtight container in the fridge for up to 3 days.
