oh my lord was this recipe amazing. We were lookin for something new to try as we usually make the same few meals over and over again, and I stumbled across this gem. I followed the recipe sans cleaning out the pan after initial cooking for the pork. I don't know how this would taste otherwise, but i sure as heck don't want to find out. The extra fat and drippings from the pork really added extra falvor to the entire meal.

I followed the advice from the comments and used the drippings from the pan to cook the onions and added a little more chicken broth. It was delicious!

These pork chops were delicious! I followed other reviewers' advice and sauteed the onions in the pork drippings and 1/4 cup of vegetable oil rather than wiping the pan clean and adding yet another 3 tablespoons of oil. I also had to cook the pork chops double the time in the directions, but perhaps they were too thick.

Very goid. Instead of wiping out the pan where I fried the chops, I sautéed the onions in there too. So much flavor.

Family Favorite! Didn’t need quite as much oil bc like other reviewers have said - of course you cook the onion in the drippings! Came out perfectly smothered with gravy to pour over mashed potatoes!

This is the best pork chop recipe I've made in a long time!  Coming from a farm family that raises pigs in MN.

The 4 pork chops that I purchased were thick and large and I did not have a pan large enough.  I cycled two and two for the browning.  Then, I used a two burner skillet to saute the onions and then complete the recipe.  It all turned out juicy and yummy and appreciated by our guest.

If you want more flavor, season the chops with some garlic powder, onion powder, and a sprinkle of seasoning salt before dusting with flour. My son hates pork chops but loved this recipe!

This is by far one of our favorite meals and recipes. I follow exactly as written adding baby Bella’s.

Smothered Pork Chops Are Way Better Than A Boyfriend

Juicy Smothered Pork Chops seared and cooked in a rich onion gravy is delicious and easy dinner recipe perfect for any night of the week! Not for the faint hearted, you can serve them with anything... think mashed potatoes or white rice to soak up the delicious sauce... OR roasted veggies to make a complete meal!

(500 grams) bone-in pork chops,* (about 3/4-1 inch thick.)

buttermilk or heavy cream

Chopped fresh flat-leaf parsley, (for garnish)

Pat the pork chops dry with paper towels to remove any moisture. Season pork chops with garlic powder, onion powder, cayenne, seasoning salt, pepper and olive oil.

Dredge each chop in the flour; shake off the excess and KEEP THE REMAINING FLOUR.

Heat 2 tablespoons olive oil and 2 tablespoons of butter in a skillet or pan over medium heat. When hot, fry the pork chops in a single layer on each side until golden browned, about 3-4 minutes per side.

Remove pork chops from the pan and keep warm.

FOR PORK CHOPS

In the same pan, heat 1 tablespoon of butter over medium heat.

Add in sliced onions and add a pinch of salt. Cook while stirring occasionally, until soft and caramelized, about 10 minutes. (Add in 1 tablespoon of the chicken broth if the pan becomes too dry.)

Add the garlic and thyme; cook until fragrant, about 30 seconds.

Add 2 tablespoons of the remaining flour to the pan. Mix the flour into the onions and cook to dissolve, about 2 minutes.

Pour in the chicken broth, scraping up the browned bits from the bottom of the pan. Let the liquid reduce and thicken slightly, about 2 minutes.

Whisk in the buttermilk (or cream) and simmer for 1-2 minutes until thick and creamy.

Return the pork chops to the pan. Coat them in the sauce and let simmer until the pork is completely cooked through, about 5 minutes (or until the pork is cooked to your desired doneness). (The sauce will continue to thicken due the coating on the pork. If too thick, add a little cream or broth to thin out until reaching your desired consistency.)

Taste test and season with salt and pepper, if needed. Garnish with the chopped parsley before serving. Serve warm.

Easy Smothered Pork Chops

Preheat oven to 350 degrees. Heat a heavy, oven safe skillet over medium-high heat. Season the pork chops on both side generously with salt and pepper.

Sear the chops for 3 to 4 minutes per side over high heat. For thick chops (over 1-inch thick) transfer them to a 9x13 pan and finish cooking in the preheated 350 degree oven until  the pork reaches an internal temperature of 145 degrees Fahrenheit, about 15 minutes.

Return the skillet to medium-high heat. Add in the olive oil, onion, and mushrooms and saute for 5-7 minutes until mushrooms and onions are soft and translucent.

Add in butter and garlic and cook garlic for 60 seconds.

Sprinkle in flour and stir until all white specks have disappeared, about 1 minute. Pour in the chicken broth and bring to  a simmer, stirring until the sauce thickens.

When pork is cooked through, return the pork to the skillet. Serve hot smothered with the onion and mushroom gravy.

Farmhouse Smothered Pork Chops

Stir garlic powder and chili powder into flour.

Dry pork chops with a paper towel, season with salt and pepper then dip in flour.  Cover generously with flour.  Set aside 2 tablespoons of extra seasoned flour.

Heat skillet and a couple tablespoons of vegetable oil over medium high heat.

When oil is hot add pork chops, cover with a lid and cook 4 to 5 minutes.

When pork chop is white half way up the side flip and cook another 4 to 5 minutes. Use a digital meat thermometer and insert in the side to the center of the pork chop.  When the thermometer reads 145°F set pork chops aside on a plate and cover with foil.

Turn heat to medium low and add remaining oil and onions.  Season with salt and pepper. Cover and stir occassionally until caramelized, about 10 minutes.

Create an opening in the center and add butter.  Stir onions into butter and then sprinkled the reserved 2 tablespoons of flour into the onions to coat them a bit. Cook until flour is no longer white.

Add chicken stock and heavy cream or milk and heat on medium heat.  Leave uncovered and stir occassionally until sauce is reduced and reaches desired serving consistency.  Add pork chops to skillet to warm and serve out of the skillet and enjoy!

French Onion Smothered Pork Chops

pork chops ((about 1.5 to 2 pounds))

Salt and black pepper

olive oil, plus extra if needed

Season the pork chops with salt, pepper, garlic powder and dried thyme on both sides. Set aside.

Heat a 10 inch skillet over medium heat (an oven safe or cast iron skillet if you are using the broiler to melt the cheese).&nbsp; Add the olive oil and butter. When the butter is melted, add the onions and cook stirring regularly for about 15 to 20 minutes or until the onions are golden brown and caramelized. If the skillet gets too hot, turn the heat to medium-low. You want the onions to cook slowly, not to get charred.&nbsp;

Remove the onions from the skillet and set aside. Drizzle a bit of olive oil into the skillet, if needed. Turn the heat to high and sear the pork chops for about 1 to 2 minutes per side or until golden brown. Remove onto a plate. At this point, the pork chops are not cooked through.

Turn the heat to medium and return the onions to the skillet. Stir in the garlic and 1 teaspoon of fresh thyme. Cook for a minute. Sprinkle in the flour and mix well. Cook for 2 minutes, stirring constantly.

Stir in the wine and mix well. Stir in the broth, Worcestershire sauce and Dijon mustard. Mix until well incorporated. Season to taste with salt and pepper.

When the sauce comes to a simmer, nestle the pork chops in the sauce. Cover and cook for about 5 minutes or until the pork internal temperature reaches 145 to 150 degrees Fahrenheit for medium rare. Top the pork chops with cheese, close the lid and wait a couple of minutes until the cheese melts OR follow my favorite method - BROIL. Turn the oven to broil and place the skillet about 4 inches from the heat source. Broil for a few minutes or until the cheese melts and gets gooey and a bit golden (keep an eye on it, it works fast!)

Garnish with fresh thyme sprigs and serve immediately.

Crock Pot Smothered Pork Chops

In a bowl, whisk together ketchup, broth, Worcestershire sauce, brown sugar, salt, chili powder, and ground mustard. Set aside.

Pat pork chops dry with a paper towel. Season both sides of the pork chops liberally with salt and pepper. Heat about 1 tablespoon of oil in a large skillet over high heat. When hot, add the pork chops to the skillet. Sear both sides of chops over high heat (about 3-5 minutes per side), and then transfer to slow cooker.

Pour sauce over the pork chops and add onion on top.

Cover and cook on LOW for about 4-5 hours or on HIGH for about 2-3 hours.

FOR THICK-CUT BONELESS PORK CHOPS:

Cover and cook on LOW for about 6-7 hours or on HIGH for about 3-4 hours.

You know that the pork chops are done when they reach an internal temperature of 145 degrees F.

Serve pork chops smothered in onions and sauce, and garnished with a squeeze of lemon juice and chopped fresh parsley.

FOR THICK-CUT BONE-IN PORK CHOPS:

A classic recipe for baked pork chops smothered and covered in an easy onion gravy.

Smothered Onion Pork Chops

pork chops (1/2" to 3/4" thick)

white onions (thinly sliced)

all purpose flour

TB all purpose seasoning blend

tsp black pepper

tsp salt

Preheat oven to 350 degrees. Spray a shallow baking dish with non stick spray. Set aside.

Sprinkle the pork chops on both sides with the all purpose seasoning blend. In a large skillet, melt 1 tablespoon of butter over medium high heat.

Brown the pork chops on each side. Cook each side for about 2-3 minutes, turn, and cook on the other side. Work in batches, and do not crowd the pan. Add 2 more tablespoons of the butter as needed to keep the pan greased.

Place the browned chops in a single layer in the bottom of the baking dish. Set aside.

In the same skillet you browned the pork chops in, add the remaining butter and the onions. Reduce heat to medium-low to medium. Stir and cook the onions until they are golden and tender, about 10 minutes.

Stir in the Worcestershire sauce until well combined. Add the flour. Stir and cook for 2 minutes until the flour is well incorporated.

Gradually stir in the water, salt and pepper. Cook and stir until thickened and bubbly. Taste and reseason as desired.

Pour the onion gravy over the pork chops. Cover the pan with foil, and bake for 30 to 40 minutes. (Cooking time will vary based on the thickness of your pork chops.)
