Add all ingredients in an airtight container or a bowl. Either shake the container to fully mix, or stir in a bowl with a whisk.

200 g 1 1/2 KuliKuli Balls ((Peanut flour as substitute))

Tbsp Smoked Paprika Powder

Strands Grains Of Selim Pods

African Nutmeg ((1 Classic nutmeg

whole Alligator Pepper Pod Seeds ((about 1 Tbsp seeds))

Salt

Using an electric blender, grind the alligator peppers, African nutmeg and grains of Selim until smooth. You can also use a pestle &amp; mortar or a grinding stone ware which is what was used originally in the olden days.

Crush in the kulikuli balls or peanut powder and give it a quick blitz just so it’s well combined.

Heat a dry pan over medium heat and pour in the combined mixture with the other seasonings (ginger, garlic, chilli powder, smoked paprika powder and salt ).

Using a wooden spoon, toss the spice mixture in the pan for about 5 minutes or until you can smell a pungent aroma.

Turn the heat off, set the pan aside and let it cool.

Store the spice mixture in a jar. (You can use it immediately or store in a cool &amp; dry area)

Heat oven to 150C/130C fan/gas 2, then sit the pork belly in a deep roasting dish. Mix the remaining ingredients with 1 tsp salt, then rub all over the pork. Cover, roast for 3 hrs, then uncover, slice the pork into 16 short, fat chops. Spoon over the sauce from the dish, then roast, uncovered, for another hour, turning the strips halfway. Cool, cover, then chill for up to 24 hours.

About 15 mins before you are ready to barbecue, pop the pork into a low oven to melt the sauce making sure the strips are nicely coated in it. Barbecue, skin-side down first, to crisp up, then cook for just a few mins, turning, until heated through and the sauce is sticky.

Baharat – Middle Eastern Spice Mix [Ready in 2 Minutes]

A quick and easy grilled salmon recipe using a homemade spice rub you will want to put on everything!

Simple Grilled Salmon Recipe with Spice Rub

sugar

curry powder

yogurt

mayonnaise

herbs

garlic (minced)

lemon juice

salmon filets (160 grams/5-6 oz each)

olive oil

Avocado or vegetable oil

In a medium bowl combine all ingredients and mix well. Store in an airtight container in the cupboard away from heat and light. Makes about ¾ cup.

In a medium bowl, mix all ingredients together until well combined. Cover and refrigerate until ready to serve.

Pat salmon dry with paper towel. Rub fillets evenly with olive oil and sprinkle with spice rub. Rub the spice mixture into the fish to coat evenly.

Preheat your outdoor grill for 15 minutes on high heat. Fold paper towels into a thick pad. Holding paper towel with tongs, dip it in the avocado or vegetable oil, and wipe the hot grill. Dip again and oil grill again. Close lid and let heat back up for 5 minutes before cooking the salmon.

Place the salmon flesh side down. Close the lid and cook (reduce heat to medium if your grill runs very hot), without moving filets, until the flesh side has grill marks and the flesh releases easily, 4-5 minutes.

Using tongs and a spatula, gently flip the fish and continue cooking, covered, until centers are translucent when checked with a fork or paring knife or the internal temperature reaches 125 degrees F for medium-rare (the salmon will continue cooking once removed from the heat). 2 to 3 minutes. Transfer to a platter and let rest for 5 minutes before serving.

Cooked 2 racks this weekend, 1 with this rub and one with a well known semi commercial rub (rib rocker). This was the unanimous winner so it went on a bbq pork shoulder for pulled pork - another hit.

Low-fat crispy chicken wings

150.00 gm self-raising flour

2.40 gm onion salt

2.40 gm chicken salt

lemon pepper

tsp white pepper

chicken wings

olive oil spray

Step 1

Preheat oven to 220°C. Line 2 baking trays with baking paper. Combine flour, onion salt, chicken salt, peppers and mixed herbs in a large plastic bag.

Step 2

Spray chicken wings with oil. Add one-third of wings to flour mixture. Shake until well coated. Place onto prepared baking trays. Repeat with remaining ingredients.

Step 3

Spray chicken with oil again. Bake for 25 to 35 minutes or until crisp and cooked through. Serve with fries or salad.

Use this spicy chipotle rub when you grill chicken for an easy way to to add explosive flavor! Then use the chicken to top a southwest inspired salad with black beans, corn, and guacamole for a main dish salad everyone will love.

Chipotle Spice Rubbed Grilled Chicken Salad with Guacamole, Corn &amp; Black Beans

chipotle

½ tablespoons kosher salt, ((or 2 ½ teaspoons sea salt))

boneless chicken thighs (or 3 boneless chicken breasts*)

lettuce

corn

guacamole

salsa

Prepare spice rub by mixing all the spices and seasonings together in a small bowl.

30 minutes to up to 4 hours before grilling, rub the chicken all over with the chipotle spice rub and place in refrigerator.

Spice Rub Marinade:

Grill the chicken over medium heat, about 8-10 minutes on each side, or until the thickest part of the meat reads reads 165°F on a thermometer. *

Serve on it's own or slice the chicken for the salad.

Grill Chicken:

Prepare salad by dividing the lettuce between 4 to 6 plates.

Evenly distribute the remaining salad ingredients, except the guacamole and salsa, on top of the lettuce (alternately, layer the salad ingredients on a large platter).

Keep plates refrigerated while the chicken cooks and then divide the sliced chicken among the plates. Top each with a dollop of guacamole.

Serve with salsa and tortilla chips.
