Homemade Spicy Chipotle Mayo

avocado oil

dijon mustard

chipotle paste

lemon juice

apple cider vinegar

cayenne pepper,

salt,

Place all ingredients in order listed in a wide mouth jar. Place immersion blender in the bottom of the jar over the egg yolk and turn it on high. You will see the emulsion start and the oil will begin to thicken and turn off-white while it blends with the egg yolk.

Slowly bring the immersion blender after about 30-45 seconds to make sure all the oil is incorporated. This should take no longer than 1 minute.

Store in a glass jar in the fridge (the jar that you blend it in would work great with the lid)*. Mayo will keep until the expiration date on the eggs. Enjoy on your food of choice!

Spicy Gochujang Mayo

mayonnaise

lime juice (or lemon juice (optional))

Combine

Combine all ingredients in a medium sized bowl and whisk well until the sauce turns and evenly tangerine (orange) color.

Serve

A family favorite, this recipe is as easy as it is delicious! Savory chicken is baked topped with a smokey flavorful panko coating until it is tender and juicy on the inside and perfectly crisp and flavor filled on the outside.

Baked Panko Crusted Chicken with Honey Drizzle

lbs chicken breast cutlets ((about 6 thin chicken breast pieces))

salt and pepper (to taste)

panko bread crumbs (unseasoned)

butter

tsp smoked paprika

garlic powder

onion powder

tbsp honey

tsp red pepper flakes ((optional))

Prepare the panko mixture by combining the panko with the paprika, garlic powder, salt, and onion powder. Pour the butter over the seasoned crumbs and mix until combined. Set aside.

Season each side of the chicken with salt and pepper to taste. Then lay them flat on a large baking sheet and spread a very thin coat of mayonnaise over the top of each chicken breast.

Turn each chicken breast mayo side down into the crumb mixture to coat the top, then return it to the baking sheet. Spoon any remaining crumbs over the top of each chicken breast and pat to secure to the chicken.

Bake at 425˚F for 10-15 minutes, until cooked through to an internal temp of 165˚F. The time w vary based on the thickness of your chicken.

While the chicken cooks mix the honey with the red pepper flakes. Drizzle the honey over the chicken right before serving. Enjoy!

Looking for an easy, quick low-carb﻿ snack? Look no further than these BLT egglets. They’re like a cross between a BLT﻿﻿ sandwich and egg salad, but portable!



BLT Egglets

eggs

bacon,

chives

hot sauce (such as Cholula)

red wine vinegar

Kosher salt

black pepper

c. quartered grape tomatoes

c. shredded romaine lettuce

What do you crave when you're feeling peckish?

Place eggs in a large pot and cover with cold water by about 1". Place pot on stove and bring to a boil. Immediately remove from. heat&nbsp;and cover pot. Let sit 11 minutes. Meanwhile, prepare a medium bowl of ice water. When time is up, drain eggs and submerge in ice water.

Meanwhile, heat a large skillet over medium heat. Cook bacon, stirring occasionally, until crisp, about 4 minutes per side. Transfer to&nbsp;a paper towel–lined plate.

In a medium bowl, whisk mayonnaise, chives, hot sauce, and&nbsp;vinegar; season with salt and black pepper.

Peel and halve eggs. Spread mayonnaise mixture on cut side of one egg&nbsp;half. Top with tomatoes, lettuce, and bacon.&nbsp;then top with other half of egg; season with salt and black pepper.

These were AMAZING!! The only change we made was to combine the yolks with the mayo mixture making it more like Deviled Eggs and made 1/2 egg a serving. I only used 4 eggs so the mixture was a little runnier than usual but the flavor was FABULOUS!! Got massive thumbs up from my peeps!!

Made these and they are delicious! Messy but tasty. Next time I will assemble using toothpicks.

This was really good & satisfying!  A few things I did different... 
 instead of making it a "sandwich", I left them open faced and spread a little of the mayo on each side of the egg.  I crumbled the bacon and used thin slices of local Creole tomatoes on each half.  The topped with shredded cheese.

These are excellent. I do then open faced and I chop the bacon into bacon but size pieces to sprinkle on top. Makes them easier to eat.

These Vegan Thai Beef Tacos are an explosion of flavor - filled with soy beef crumbles in a Thai-inspired sauce, spicy mayo, avocado &amp; cabbage!

Vegan Thai Beef Tacos

sesame oil

garlic (minced)

onion

ginger

red bell pepper (thinly sliced)

vegan beef crumbles (see notes)

sweet chili sauce

soy sauce

pepper

Thai basil (or sub Italian basil)

lime

taco-sized flour tortillas (or sub corn tortillas)

head red cabbage (shredded)

avocados (sliced)

cilantro (chopped)

spicy mayo (optional, see notes)

Heat the oil in a skillet over medium heat. Add the garlic, onion, ginger and bell pepper. Cook down for 3 minutes, or until the veggies start to get tender.

Add the vegan beef crumbles, sweet chili sauce, soy sauce and pepper. Sauté for 5-10 minutes, or until the beef crumbles start to brown. Add the Thai basil and lime juice and give it one last stir.

Heat the tortillas over an open flame or in a skillet. Prepare the spicy mayo - see notes.

To assemble, add cabbage to each tortilla followed by vegan beef, avocado, cilantro and spicy mayo. Serve with lime wedges on the side.

This Shrimp Bowl recipe with spicy mayo is on repeat in our house almost weekly! Raw shrimp are quickly pan fried with ginger, garlic, soy sauce, and fresh lime juice. Serve over fluffy white or brown rice drizzled with spicy mayo and lots of avocado, cilantro, and seaweed squares. Truly my idea of comfort food, and a perfect shrimp recipe for busy weeknights! Gluten-free with use of tamari.

20-Minute Shrimp Bowls with Spicy Mayo

1½ lbs large raw shrimp, (peeled, deveined, tails removed)

Tbsp neutral oil, (such as grapeseed oil)

tsp black pepper

ginger ginger

garlic clove, (grated)

Tbsp reduced-sodium soy sauce

short grain white rice, (such as sushi rice (can substitute with brown rice))

Spicy mayo, (recipe below)

avocados,

scallions (3 scallions, thinly sliced)

cilantro

Sesame seeds

Seaweed squares, (optional, for serving)

Tbsp Sriracha

tsp reduced-sodium soy sauce

If you haven’t already, cook white rice and make spicy mayo. To make the spicy mayo, combine ⅓ cup of Kewpie mayonnaise in a small bowl with 1 Tbsp of Sriracha and 1 tsp soy sauce. Stir well, taste, then add more Sriracha if you want it spicier. Set aside.

Cook the shrimp. Heat 2 Tbsp neutral oil over medium-high heat in a large skillet. When hot, add 1½ lbs peeled, deveined raw shrimp. Season with 1 tsp Kosher salt and ¼ tsp black pepper. Cook for about 1-2 minutes, or until the shrimp turn pink. Flip the shrimp over, then add 2 tp ginger paste, 1 grated garlic clove, 2 Tbsp soy sauce, and the juice from 1 lime. Cook for an additional 1-2 minutes, stirring to mix together the sauce, then transfer to a large bowl.

Assemble, then serve. Divide the rice evenly between 4 bowls, then top each with some of the cooked shrimp. Add cubed avocado, then garnish with thinly sliced scallions, cilantro, and sesame seeds. Add any additional toppings you like, then drizzle generously with spicy mayo. Serve immediately with seaweed squares.

I promise these Rotisserie Chicken Hawaiian Sliders will quickly become a family favorite. Hawaiian rolls meet rotisserie chicken and melted pepper jack with spicy mayo... I mean 🤤 This is a sandwich you don’t want to miss out on. 

Rotisserie Chicken Hawaiian Sliders

Hawaiian rolls

rotisserie chicken (shredded)

pepper jack cheese

lettuce (shredded)

pickles (sliced)

avocado

½ tsp poppyseeds

Preheat your oven to 350°F.

Prepare the rotisserie chicken by removing all of the chicken from the bone and peeling off the skin. If you’d like an even quicker prep you can buy already disassembled rotisserie chicken.

Cut all of the Hawaiian rolls in half and layer the bottoms of the rolls in a casserole dish side by side.

Spread the spicy mayo across the bottom of the buns (you can do this to the top bun, too if you really like mayo!).

Layer HALF of the cheese next. Try not to have too many pieces over lap. Tear pieces if needed to fit the size of the buns.

Spread mashed avocado on top of the cheese in an even layer. You can instead use avocado slices or guacamole here, too.

Then add the shredded rotisserie chicken to each bun (finely shredded chicken is better for equal coverage across the slider. So if you need to use your hands to separate the larger chunks at this point).

Top with pickles and then the remaining cheese slices. Add any additional spicy mayo or sauce here if you&#39;d like.

Place the top of the roll. In a small bowl, melt butter. Add poppyseeds and mustard to the bowl. Stir. Use a food brush to spread the butter mixture on the top of the rolls.

Cover your baking dish with tinfoil and bake for 20-25 minutes, when the cheese is nice and melty. Then, remove the tinfoil, and allow for another 3-5 minutes of baking to get a golden top on your sliders.

Serve hot — or chilled. You can sneak the fresh lettuce onto the buns after cooking for that good crunch factor. Serve with extra dressing. Enjoy!
