Spicy Sausage Pasta

Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

This is my second recipe review EVER and I am 56yrs. old. This was a VERY tasty quick, one pot meal that I made today. I followed this recipe exactly as written and it turned out mighty tasty for sure. My only problem with the whole thing was that it wasn't spicy enough for me. However, this  is SO versatile and excellent as a base recipe . After my first bowl I sprinkled some Tony Chachere's Original Creole seasoning on my second bowl and it was even better. Of course I will be making this again but I will add peas, broccoli or green peppers to it for a veggie flair as well as my Tony C . for an added kick. My friend suggested adding shrimp to the combo for a little Cajun twist which sounds great. Overall I gave this 4 stars because it truly is good as is and it is a great starting point for anything you might want to add in.

Bring a large pot of salted water to a boil.  Cook the pasta according to package instructions. Save ¼ cup (60 ml) of pasta water, then drain.

Add the olive oil and garlic to a large cold sauté pan. Turn the heat to medium-low and slowly heat up until the garlic is fragrant and lightly colored, about 3 minutes.

Add the chile flakes and cook for another minute.

Add the reserved pasta water and bring to a simmer. Add the cooked spaghetti and parsley, if using. Stir until the pasta is well-coated. Season with salt to taste.

Giada&#039;s Calabrian Chili Pasta is a super quick dinner to whip up on any weeknight, but it has tons of bright, vibrant flavor.

Calabrian Chili Pasta

14 oz can pomodorini tomatoes, (such as Corbara)

Calabrian chili paste*

dried oregano, (such as Filliponne)

salt

lemon zest, (from 1 lemon)

lemon juice, (from 1/2 lemon)

unsalted butter

short pasta, (such as capricci, penne, or rigatoni)

Heat a large skillet over medium heat. Add 2 tablespoons of the oil to the pan and heat another 30 seconds. Add the pomodorini tomatoes to the skillet, then fill the can up with 1/4 cup of water to release the extra tomato sauce in the can, and add to the pan as well. Either crush with the tomatoes with the back of a wooden spoon, or gently cut them with kitchen scissors. Add the Calabrian chili paste, dried oregano, salt,  lemon zest and lemon juice. Allow the sauce to simmer for 10 minutes, stirring occasionally. Add the tablespoon of butter and gently stir until melted. Taste and adjust seasoning if necessary.

Meanwhile, bring a large pot of water to a boil over high heat. Season generously with salt. Cook the pasta for 1 minute less than package directions, about 10 minutes, or until not quite al dente. Using a spider, spoon the pasta directly from the water into the sauce over medium heat. Sprinkle the Parmesan directly over the pasta, and toss to coat. If needed, add pasta water a few tablespoons at a time to loosen up the sauce.

Top with more cheese before serving if desired.

Bring a large pot of salted water to a boil. Cook the pasta for 1 minute less than the package instructs, until al dente. Save 1 cup (240 ml) pasta water, then drain.

Heat a large sauté pan over medium heat. Add the olive oil, butter, and pepper, and stir to combine.

Toss in the cooked pasta. Reduce the heat to low.

Add tomato sauce, cream, chipotle chilies, and garlic into a blender.

Add 1 cup of chicken stock and blend until smooth. Set aside.

Add chicken and cook over medium heat until browned on all sides (about 5 minutes).

Drain and add it to the pan with the sauce.

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain.

In a large skillet, heat the olive oil over medium heat. Add in the shallots and garlic and cook until soft and aromatic, about 5 minutes.

Stir in the Calabrian chilies and tomato paste until smooth and continue to cook for another 2 minutes.

Slowly whisk in the heavy cream until fully combined, then reduce the heat to low. Stir occasionally and continue to cook until the sauce begins to simmer and thickens enough to coat the back of a spoon.

Then stir in the parmesan and fresh basil.

While the sauce is cooking, go ahead and cook your pasta according to package directions. Make sure you heavily salt the water and cook the pasta for about 1-2 minutes less than the listed time for perfect al dente pasta!

Before draining, scoop out about ¼ cup of the starchy pasta water and set aside. Then drain the pasta (but do NOT rinse it).

Add the al dente pasta and pasta water to the sauce and toss gently to combine for 1-2 minutes or until the sauce thickens up and coats the noodles.

Since the pasta water is salty, I like to wait to salt the sauce until after I&#39;ve added in the pasta water and noodles. Once the noodles are coated in the sauce, taste and adjust seasonings as needed.

Serve immediately and top with creamy Burrata and an extra drizzle of Calabrian chilies if desired!

Cook the pasta. Fill a large pot of water and salt and bring to a boil on high heat. Cook your pasta about 1 minute shy from package instructions or until al dente. Reserve about 1/2 cup of pasta water.

Saute the shallots and garlic. In a large skillet, melt your butter on medium heat. Then saute the minced garlic and diced shallots until golden brown and fragrant about 3 minutes.

Add gochujang. Next, add the gochujang. Stir and cook for an additional 2 minutes until combined. Cooking the gochujang will mellow out the heat from the spice.

Add sauces and heavy cream. Lastly, add in the soy sauce, fish sauce, sugar, and heavy cream. Mix until combined. Bring the heat to medium-high heat and continue cooking until the sauce thickens.

Add the pasta. Once the sauce thickens, cook the pasta and the sauce together for about 1-2 minutes. If the sauce is too thick, add the pasta water 1 tablespoon at a time as needed until the sauce has reached your ideal creamy consistency.

Serve. Top this gochujang pasta with green onions and freshly shredded parmesan cheese and enjoy!

Spicy Harissa Pasta Recipe

The Best Spicy Spaghetti Bolognese

Before you start cooking, peel and finely dice the carrot. Dice the celery stalk, finely chop the onion and mince the garlic cloves.

B﻿ring a large pot with generously salted water to a boil.

Heat oil and butter over medium in a large heavy bottomed pot. Add onion, garlic, carrot and celery stalk. Cook for 5 minutes until soft and fragrant. Reduce heat if needed. Add pancetta and cook for 3 minutes.

Add ground meat mixture, break up into pieces with a wooden spoon and cook until it starts to brown. Season with salt, pepper and sugar. Add &#x27;Nduja and continue to cook while stirring until the &#x27;Nduja is completely dissolved.

When ready, add milk and Parmesan to the sauce. Stir until combined. Toss with spaghetti and add a splash of cooking water, if needed. Enjoy!

Boil the pasta according to the package instructions. 

In a skillet, heat up olive oil over medium heat until it&#39;s warm.

Add peel and sliced onions, washed cherry tomatoes, and finely chopped garlic. Sautee for a few minutes, until the onion is soft and translucent.

Add harissa paste, lemon juice, and seasoning to the skillet with the onions and tomatoes, and stir to combine. Sautee for about a minute or two, or until the sauce becomes fragrant.

Turn the temperature down to low, and allow the sauce to rest while you stir occasionally until the pasta is boiled. If the sauce becomes dry, you can add a spoonful of pasta water to make it more creamy.

When the pasta is cooked, drain off most of the excess water. Transfer the drained pasta to the skillet with the sauce, along with a spoonful of leftover pasta water. Use tongs to coat the pasta evenly in the sauce.
