Low Carb Keto Induction Cornbread

bacon grease

Dry Ingredients

pork rinds (Bakenets)

Parmesan cheese

whey protein isolate, unflavored (Designer Whey)

baking powder

kosher salt

Wet Ingredients

sour cream

egg—or egg

Amoretti Popcorn Extract or Amoretti Sweet Corn Extract

apple cider vinegar

drop concentrated stevia drops (optional)

Have your cookie and eat it too. These low carb chocolate chip cookies are as close to the real thing as you can get. Plus the base is great for any flavor and even muffins!

Low Carb Chocolate Chip Cookies

unsalted butter, softened

sweetener, I used granulated erythritol

eggs

vanilla

tsp psyllium husk powder, vital wheat gluten

carbquick *

tsp baking powder

Add-ins of your choice- we used Lily’s sugar free chocolate chips

LOW CARB CHOCOLATE CHIP COOKIES

In a large bowl, using an electric mixer cream butter, sweetener, eggs and vanilla.

Whip in sour cream. Stir in chocolate chips.

Spoon onto a greased sheet pan. (about 3″ scoops)

Bake for 10 mins or until edges are golden and cookies are set.

NOTE* these will not brown on top as much as they do on the bottom. You may peek in the oven and think they aren’t cookies. Lightly tough with your fingers for firmness, check bottom for browning.

Roasted Country Style Pork Ribs are so simple to make, only 2 minutes of prep and about 2 1/2 to 3 hours of slow roasting yields meat that is succulently juicy insides and crusty on the outside. The pan drippings are the bomb!

Cheesy Sausage and Cabbage Casserole

tbsp grass-fed butter

quartered,

yellow bell pepper, chopped

onion, diced

garlic,

sea salt and black pepper,

14.5 oz can diced tomatoes

tomatoes

oz smoked sausage,

mozzarella cheese, shredded

Italian flat leaf parsley, rough chopped

Heat olive oil and butter in a large skillet over medium heat.

Once the butter is melted and the pan is heated, add the cabbage, bell pepper, onion garlic, sea salt and black pepper. Sauté until the vegetable are crisp tender and the cabbage is wilted. About 10 minutes.

Mix in diced tomatoes, crushed tomatoes and smoked sausage. Sauté for 10 minutes.

Transer to a large casserole dish, top with cheese and bake for 15 minutes.

We thought this was fantastic.... just goes to show, everyone has different tastes!

This was very simple to make! I added the sausage before the tomatoes to allow it to cook through first.

This is a keeper hubby says ! Only change was home can tomatoes . Keep up the great recipes .

I really enjoyed this recipe and took it upon myself to add some dried Italian herbs to enhance the flavor of this dish. Im not sure if anyone else had this problem, but my dish came out pretty watery. Are there any steps that I can take to prevent this?

This recipe was delicious.  I made mine w/ Jalapeno cheddar sausage and halved the recipe.  I will absolutely be making this again!

Thank you so much for posting this and so many other recipes on line.  As a result of chemo, my 13 year old has developed high blood sugar, but not quite diabetes.  They have had us switch him to a low carb diet to try to bring it under control without more medication.  His reaction to most recipes has been, "Wow, I thought chemo killed my taste buds.  Low carb must have destroyed all of theirs."  Thankfully, what we have tried from your site has been met with positive responses including, "Can we have that again?"  Money remains tight so I cannot run out and buy a bunch of low carb cook books.  So, all that said, I truly appreciate your site.  God bless.

Delicious!  Only thing I did differently was used sweet Italian sausage instead of smoked.  I cooked the sausage prior to adding it to the cabbage mixture and it was amazing!  My 13 yr old wants leftovers for lunch!

This was AWESOME! My husband (who doesn’t know I’m making him eat Keto lol) asked that it be on the weekly rotation. I’m practicing mostly OMAD Keto, so mixed in some smoked Gouda to up the caloric content since it is my only meal today and finished with a dollop of (this is going to sound weird) aioli. Also added some crushed red pepper for a little kick. 
It was a touch runny and the hubby doesn’t like anything runny, but I do, so used a slotted spoon to scoop his out and a soup ladle to scoop mine. 
Thank you for making dinner more interesting than chicken and broccoli.

Loved this casserole! Made it a couple nights ago and definitely will put it in our regular rotation. Leftovers heated up well also. It turned out a little watery but not enough to be a big deal - it appears the key there is simply to cook down the cabbage enough on the stove before transferring it to the casserole dish. I also added italian seasoning and browned the sausage pieces in the pot before adding the other ingredients.

If I could give this dish 10 stars, I would! I made this meal for my family (none of who follow a keto lifestyle) and they all absolutely loved it. A huge win for me of course and honestly at least once a month, my husband requests it for dinner: In fact, I have the ingredients ready to go for dinner tomorrow (per his request).

This dish is a household favorite! I’ve made it as the recipe is written, but I’ve also substituted the smoked sausage for andouille sausage. My Louisiana family prefers the andouille, but either way is delicious!

Easy Kiwi Sorbet Recipe - Only TWO ingredients needed!

Peel the kiwis and slice them into rounds. Place the slices on a lined baking sheet and pop them into the freezer until solid - approximately 1-2 hours.

Transfer the frozen kiwi slices to a food processor or high-speed blender and add the fresh lime juice. Pulse the fruit until it reaches the consistency of sorbet. You may have to scrape the sides down a few times to break up any chunks.

Serve immediately or freeze. If you are freezing it will need 15 - 20 minutes to thaw enough to eat.

This recipe can easily be doubled, tripled, or quadrupled!
