This fresh, fruity salad combines peppery rocket leaves, tangy citrus and a punchy mustard dressing for a full-flavoured side dish

Orange, fennel & rocket salad

fennel

oranges

red onion, thinly sliced

rocket

olive oil

tbsp wholegrain mustard

Using a mandolin or a sharp knife, shred the fennel into thin slices.

Remove the skin of the oranges with a knife and gently cut out the segments. Do this over a bowl to catch all the juice for the dressing. Squeeze any excess from the oranges after they have been segmented.

Tip the onion into a bowl with the fennel, orange segments and rocket leaves.

To make the dressing, combine the juice from the oranges with the olive oil and mustard. Drizzle over the salad and serve.

Make the dressing

Grate the Parmesan cheese as finely as possible (it’s helpful to use a microplane or the finest holes in a grater). Grate the garlic, or finely mince it. Juice the lemon. Whisk together all the dressing ingredients in a bowl. Store refrigerated (keeps at least 1 week).

Prep the romaine and avocado

Wash and dry the romaine. Cut each romaine heart in half lengthwise. Drizzle each side liberally with olive oil. To the top, drizzle with balsamic vinegar, and add several pinches kosher salt and plenty of fresh ground black pepper.

Slice the avocados in half and remove the pits (see the video for safe pit removal). Season the cut sides of the avocado halves lightly with kosher salt and lightly drizzle with olive oil.

Grill the romaine and avocado

Place the romaine hearts on the grill, and grill for about 3 minutes on each side, until slightly charred. Grill the avocado halves cut sides down for 4 to 6 minutes total, until grill marks form.

To serve, place romaine halves on individual plates or a serving platter. Garnish with Caesar dressing, chopped cherry tomatoes, dollops of avocado, and Parmesan shavings. Serve with steak knives to make it easy to cut!

This quick and easy Thai beef salad recipe is tasty and substantial enough to satisfy as a main course.

Hot Thai beef salad

sirloin

garlic

brown sugar

lime juice

tbsp light soy sauce

cucumber

beansprouts

red chilli

First make the dressing. In a bowl, whisk a chopped garlic clove, brown sugar, lime juice and light soy sauce. Set aside.

Halve and deseed cucumber, cut into sticks and put into a bowl. Add a handful of beansprouts, a deseeded and finely sliced red chilli, a good handful of mint leaves and the torn-up leaves of a little gem lettuce. Toss well and divide between 2 plates.

Griddle, pan-fry or grill seasoned sirloin or rump steaks for 2-5 minutes each side, depending on how well done you like them. Place on a board and cut into slices, then divide between the plates and drizzle with the dressing.

Cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.

This is our family&#39;s simple &amp; classic macaroni salad recipe that we love serving at picnics!

Classic Tuna Macaroni Salad

elbow macaroni

eggs

white albacore tuna fish (drained)

peas (defrosted)

mayonnaise (or Miracle Whip if you prefer)

Prepare the macaroni noodles according to the package directions. Rinse with cold water and drain well.&nbsp;

Add in the diced hard boiled eggs, tuna, peas and mayonnaise. Mix well.

Store in the fridge until serving. Add salt and pepper to taste.

Optional add-ins: mustard, celery, onion, cucumber. You can add in just about anything you&#39;d like!

This Tomato Orzo Pasta Salad is a simple yet delicious summer salad recipe with fresh tomatoes, orzo pasta and feta cheese tossed in a basil vinaigrette.

Tomato Orzo Salad

Ounces Orzo Pasta ((Cooked))

Cup Olive Oil ((divided))

Red Wine Vinegar

Toss cooked orzo with 2 tablespoons of the olive oil. Chill.

Combine the orzo, dressing, tomatoes and feta.
