Baked Sweet Potato Chips

organic (~150 g each) sweet potatoes

olive oil

tsp sea salt ((optional))

Preheat oven to 250 degrees F (121 C) and position oven rack in the center of the oven.

Rinse and dry your sweet potatoes thoroughly and slice them as uniformly thin as possible (~1/8 inch thick slices). If you have a mandolin, use it. Otherwise, use a very sharp knife to get these uniformly thin. Know that chips that are too thick in parts won&#039;t crisp up all the way. Still delicious, just not &quot;chip&quot; crispiness.

Toss slices in a touch of olive oil to lightly coat, then sprinkle with salt. Lay out in a single layer on a parchment-lined baking sheet and bake for about 2 hours, flipping chips once at halfway point to ensure even cooking. I also rotated mine for more even cooking (optional but recommended). Note: thickness of slices will impact cooking time. Check at ~15 minute intervals during the second hour of cooking to ensure they aren&#039;t burning.

Remove once crisp and golden brown. Some may feel a little tender in the middle but take them out and let them rest for 10 minutes or so to crisp up before sampling. Serve immediately.

Line 2 large rimmed baking sheets with parchment paper. Toss the sweet potato slices with oil. Place slices in a single layer on the baking sheet taking care not to crowd them then sprinkle with salt.

Place baking sheets in the oven and bake for 10-12 minutes, rotating the sheets halfway through cooking time, or until slices are lightly browned and crisp on the edges.

Remove chips to a wire cooling rack to rest while you repeat with the remaining sweet potato slices.

To Make the Sweet Potato Chips:

Layer ½ of the sweet potato chips (homemade or store-bought) onto a baking sheet or in a glass baking dish. 

Top with ½ of the chicken or taco meat, beans or corn if using, and cheese. 

Repeat with this layer, ending with cheese on top. Place baking sheet or dish into the oven and bake 5-10 minutes or until cheese is melted.

While the nachos are baking, combine all of the dressing ingredients in a small bowl and whisk to combine.

Remove pan from oven, add salsa, diced tomatoes, sliced or diced onions, chopped cilantro, avocado or guacamole, etc.

Drizzle Southwest Ranch Dressing over nachos and serve with lime wedges, if desired.

These chips are tasty and easy to make. They’re a great afternoon snack or addition to a simple lunch. Eat them as they are, or pair them with your favorite salads, soups, sandwiches, or dips.

After baking your sweet potatoes, let them cool enough so that you can handle them.

Carefully peel the potatoes, leaving the skins in as big of pieces as possible.

Make sure your oven is preheated to 350 F, and line a cookie sheet with parchment paper or foil.

Lay the skins flesh side up on the pans, brush with butter or oil, and sprinkle with salt.

Bake for about 10 minutes, or until the desired crispness.

Let cool for a few minutes before devouring.

Using a mandolin slicer, slice the sweet potatoes into very thin slices.

Soak the sweet potato slices in cold water for 20 minutes to remove the additional starch from the potatoes.

Remove them from the water and pat dry with a paper towel.

Toss the air fryer slices in the olive oil and sprinkle with salt.

Lay the slices in an even layer in the air fryer. Cook at 350 degrees for 10-12 minutes or until crisp.

Remove from the air fryer and repeat until all of the sweet potato slices are used.

These baked sweet potato chips are crunchy, addictive and made with only three simple ingredients. Skip the store-bought chips and make these instead!
