Brown

Brown up the ground sirloin over medium-high heat, crumbling the beef up into small chunks. Once completely browned, drain off any excess fat and blot with a paper towel to get any residual grease.

Simmer

Return meat to heat and add in tomato sauce, water, and spices. Bring to a boil and then reduce heat to medium and simmer for 5-7 minutes.

Line 2 large rimmed baking sheets with parchment paper. Toss the sweet potato slices with oil. Place slices in a single layer on the baking sheet taking care not to crowd them then sprinkle with salt.

Place baking sheets in the oven and bake for 10-12 minutes, rotating the sheets halfway through cooking time, or until slices are lightly browned and crisp on the edges.

Remove chips to a wire cooling rack to rest while you repeat with the remaining sweet potato slices.

To Make the Sweet Potato Chips:

Layer ½ of the sweet potato chips (homemade or store-bought) onto a baking sheet or in a glass baking dish. 

Top with ½ of the chicken or taco meat, beans or corn if using, and cheese. 

Repeat with this layer, ending with cheese on top. Place baking sheet or dish into the oven and bake 5-10 minutes or until cheese is melted.

While the nachos are baking, combine all of the dressing ingredients in a small bowl and whisk to combine.

Remove pan from oven, add salsa, diced tomatoes, sliced or diced onions, chopped cilantro, avocado or guacamole, etc.

Drizzle Southwest Ranch Dressing over nachos and serve with lime wedges, if desired.

Carefully pierce potatoes with a fork. On a baking sheet oil the potatoes well and sprinkle with salt.

Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.

Add the 1/2 cup tomato sauce and taco seasoning. Stir together until the meat is coated in the sauce.

Allow to simmer for 5 minutes.

93/7 organic Fulton Farms ground turkey (one pack from Costco -671 g)

Tbsp chili powder

Heat a heavy-bottomed pan over medium-high heat.  (I love my enamel cast iron.) Add a mist of 100% olive oil spray and let it heat up for a few seconds. Add the ground turkey, breaking it apart into pieces. Let it sit for a couple of minutes to get some color, then continue to break apart. Add all of your seasonings and enchilada sauce (or water)  and combine well.  Cook and crumble for a few more minutes until it’s cooked through.

Open the package of tofu and drain out the excess liquid. Use your hands to crumble the tofu into a medium bowl.

Add in all of the remaining ingredients (onion, garlic, tomato sauce, tamari, apple cider vinegar, oil, nutritional yeast, chili powder, cumin, smoked paprika, black pepper and oregano) and mix through until well-combined.

Transfer the tofu mixture (and all of the liquid) to your baking sheet and use a spatula to spread it out into a single layer.

Bake for 40-45 minutes, stirring halfway through, or until golden.
