This easy Taco Pie is a guaranteed dinner winner made with simple ingredients like chicken (or ground beef), tomatoes, black beans, cheese and tortillas.

cream of chicken soup ((or homemade))

tomatoes

can black beans

green bell pepper (, diced)

taco seasoning

chicken (, chopped (rotisserie chicken works great))

Mexican blend cheese

Sour cream

chopped cilantro

Preheat oven to 350 degrees F.  Lightly grease a 9-inch pie dish.

In a large bowl, combine the chicken soup, diced tomatoes with green chilies, black beans, green bell pepper, taco seasoning and chicken. Set aside.

Tear 5 corn tortillas and line them on the bottom of the pie dish.

Spread half of the chicken mixture over the tortillas. Top with 3/4 cup of cheese.

Tear remaining 5 corn tortillas and place on top. Add remaining filling, then top with remaining cheese.

Bake for 30 minutes or until cheese is bubbly and mixture is warmed through. Serve topped with sour cream, chopped cilantro and avocado.

Thaw frozen pie crust for 10 minutes. Prick bottom and sides of crust with a fork. Pre-bake at 400 degrees F for 10 minutes. Remove from oven, and reduce heat to 350 degrees F.

Brown ground beef and onions; drain excess grease if needed. Add taco packet and 3/4 cup water, simmer until thickened.

Mix refried beans and taco sauce.

Spread half the refried beans in the pre-baked pie crust. Top with half the ground beef, 1 cup cheese and all the crushed tortilla chips.

Repeat with the remaining beans, ground beef and cheese.

Bake for 20 to 25 minutes or until the cheese is melted and the pie is hot in the center.

Top with your favorite taco toppings such as lettuce, tomatoes, taco sauce and olives.

Preheat oven to 350F and grease a glass or ceramic 9-inch pie pan.

Brown ground beef in a large skillet over medium heat until no longer pink, about 7 minutes, breaking up clumps with the back of a wooden spoon.

Add taco seasoning and stir until combined, then reduce heat to medium low and cook a few minutes longer until sauce is thickened.

Spread beef in prepared pie pan.

In a large bowl, combine eggs, cream, garlic, salt and pepper. Pour over beef.

Sprinkle with shredded cheese and bake 30 minutes, or until centre is set and cheese is browned.

Remove and let sit 5 minutes before slicing and serving.

Top with sour cream, chopped tomatoes and chopped avocado, if desired.

Bisquick mix

Preheat oven to 400°F and grease a 9-inch pie plate with nonstick spray.

Place a skillet over medium heat and brown the ground beef until no longer pink. Drain off any fat and season the beef with taco seasoning.

Add green chiles and salsa and stir to combine. Transfer mixture to prepared pie plate and spread out. Sprinkle cheddar cheese over the top.

In a medium bowl, whisk together the Bisquick, milk, and eggs. Pour over beef and cheese.

Bake until the top is golden brown, 25-30 minutes.

Serve garnished with your favorite taco toppings and enjoy!

Spoon beef mixture into a 9-inch deep-dish pie plate (or other 2-quart baking dish) that has been sprayed with cooking spray.

In a medium bowl, combine corn muffin mix, egg, and milk; mix well. Spoon batter over top of pie.

Bake for 22-24 minutes, or until top is golden brown and a toothpick inserted in the center of the cornbread crust comes out clean. If the topping starts to brown too quickly before it has cooked through, just cover the top lightly with foil and continue baking.

Let stand about 5 minutes before serving.
