La recette traditionnelle de la tarte tatin, ainsi que toutes mes astuces pour réussir la fameuse tarte renversée aux pommes caramélisées.

Tarte Tatin Classique

200 g de farine

g de beurre froid

g de sel

g de sucre en poudre

oeuf

g de beurre

160 g de sucre en poudre

cuillère à café de vanille en poudre

Tarte tatin classique

Dans un cul de poule ou le bol du robot, versez la farine, le sel, le sucre en poudre et le beurre froid.Avec les mains ou la feuille du robot, mélangez les ingrédients pour obtenir une texture sableuse.

Ajoutez l'oeuf et mélangez à nouveau jusqu'à ce que la pâte forme une boule.Aplatissez la boule de pâte, filmez la au contact et réservez au réfrigérateur.

Préparez la pâte sablée

Pelez les pommes et coupez les en 6 quartiers en leur enlevant le trognon.

Dans une casserole, faites chauffer le beurre, le sucre en poudre et la vanille en poudre jusqu'à obtenir un caramel ambré.Ajoutez les morceaux de pommes et faites les cuire 10 minutes en les remuant délicatement avec une spatule.

Préchauffez le four à 180° (th6) chaleur tournante et versez le caramel au fond du moule.Avec une pince ou une fourchette posez les pommes au fond du moule, sur la tranche en les serrant bien.Mon envie de tarte tatin était plus forte que mon panier de fruits, je n'avais que 4 pommes. Avec 8 pommes vous obtiendrez une tatin bien plus garnie et plus gourmande ;-)

Enfournez les pommes pour 20 minutes de cuisson.&nbsp;Les pommes vont devenir fondantes et le caramel va épaissir.

Etalez la pâte sablée au rouleau entre deux feuilles de papier sulfurisé puis remettez la au réfrigérateur.

Sortez les pommes du four et posez la pâte sur les pommes en la repliant sous les pommes tout le tour du moule.Faites un petit trou au centre avec un couteau pour que la vapeur s'échappe à la cuisson.

Enfournez à nouveau la tarte tatin pour 20 minutes supplémentaires.La pâte sablée doit être bien dorée.

A la sortie du four, laissez la tarte tatin refroidir 10 minutes à température ambiante puis retournez la sur le plat de cuisson.La tarte tatin se déguste tiède avec une quenelle de crème fraîche ou de glace vanille.

This subtly scented ice cream is found in South East Asia and often in the UK too. The no-churn version in this recipe goes really well with the sweet tatin, but will also go further, leaving enough for a few extra desserts.


Banana tarte tatin 

397 grams/14 ounces tin condensed milk

500 milliliters/18fl oz double cream

cardamom pods, seeds removed and crushed

puff pastry

grams/3½oz brown sugar

grams/2½oz butter

30–50 grams/1–1¾oz chopped hazelnuts

4–5 bananas, sliced into 2cm/¾in coins

Préchauffer le four à thermostat 7 (200°C).

Eplucher les poires, les couper en 4 (ou plus selon la grosseur), et les épépiner.

Faire fondre le beurre dans une poêle, et ajouter les poires jusqu'à ce qu'elles dorent.

Dans le moule à tarte, répartir les 4 cuillères de sucre et le sucre vanillé.

Disposer les poires de façon harmonieuse; la pâte par dessus, en rentrant bien les bords dans le moule. 

Enfourner à 200°C (thermostat 7) pendant 10 min, puis 20 min à 150°C (thermostat 5)... Bien surveiller la pâte, afin qu'elle ne brûle pas!

Si elle commence à foncer, mettre de l'aluminium au dessus.

Retourner la tarte à la sortie du four (attention à ne pas se brûler les doigts!).

An apple tarte tatin is as classic as they come. The addition of gin and juniper keeps this dessert feeling fresh and new.

Tarte tatin is a traditional French dessert and Raymond Blanc&#8217;s recipe is divine – dark caramel, sweet apple and crisp pastry. Serve with crème fraîche or a scoop of vanilla ice cream.

Raymond Blanc&#8217;s tarte tatin

(around 6) Braeburn apples, peeled, cored and

Pre-heat your oven to 180°C/160°C/gas 6.

Put the tarte tatin dish on the hob, and over a medium heat cook the sugar and diced butter to a brown caramel. The Emile Henry dish is ideal for making sure the caramel stays dark but doesn&#8217;t burn.

Arrange the apple quarters very tight, around the edges first, with the core facing up and towards the centre, then fill in the middle part of the mould the same way, press with your hands gently to ensure there are no gaps, and brush with melted butter.

Cook in the preheated oven for 30 minutes.

Remove from the oven and place the disc of puff pastry on top, tuck in the edges and, with a knife, prick a few holes in the top to allow some of the steam to escape during cooking.

Cook in the oven for a further 40 – 45 minutes until the puff pastry is golden brown and crisp.

Allow to cool at room temperature for about 1 hour before de-moulding, apple-side up, on to the serving platter.

Préchauffer le four à 180°C (thermostat 6).

Dans un moule à tarte rond antiadhésif, faire fondre le beurre directement sur le feu.

Eplucher les 8 pommes golden entières. Les couper en deux et enlever le coeur sans défaire les moitiés. Disposer les pommes reconstituées en couronne dans le plat,

en mettre une ou deux au milieu.
Aplatir avec une spatule de temps en temps, les pommes doivent pocher dans le caramel, qui ne doit pas devenir noir, mais tout juste doré.

Saupoudrer les pommes de sucre vanillé et de cannelle.

Sortir le tout du feu et recouvrir de pâte feuilletée en appuyant bien sur les bords.

Mettre au four moyen pendant 35 à 40 minutes.

200 g de sucre en poudre

1. Pour la pâte à tarte : mélangez la farine et le sucre dans un saladier. Incorporez le beurre coupé en petits dés et sablez la pâte du bout des doigts. Puis incorporez l'oeuf et ramassez la pâte en boule. Filmez-la et mettez-la 30 min au réfrigérateur.

2. Pour les pommes : retirez le coeur à l'aide d'un vide-pomme. Puis pelez-les et coupez-les en quatre. Faites chauffer l'eau avec le beurre et le sucre. Plongez les pommes dans l'eau bouillante et laissez cuire 2 min. Retirez-les délicatement avec une écumoire. (Difficile de donner une quantité d'eau exacte, cela dépendra de la taille de vos pommes et de votre casserole. Placez les pommes dans la casserole, couvrez-les d'eau à hauteur puis retirez les pommes et ajoutez le beurre et le sucre pour la porter à ébullition et y faire pocher les pommes. Si votre casserole est trop petite, vous pouvez bien sûr les pocher ne plusieurs fois).

3. Pour le caramel : répartissez le sucre dans une grande casserole à fond épais. Faites-le cuire sur feu moyen jusqu'à ce qu'il fonde. N'ajoutez pas d'eau, le sucre va fondre et caraméliser à sec. Attention de ne pas trop le colorer. Dès qu'il est prêt, versez-le dans le moule manqué (ce n'est pas grave s'il ne couvre pas toute la surface).

4. Déposez les quartiers de pommes en rosace, bien serrés, dans le moule.

5. Etalez la pâte à tarte sur un plan de travail fariné. Déposez-la sur les pommes. Coupez l'excédent de pâte.

6. Faites cuire la tarte tatin aux pommes 30 min dans le four préchauffé à 180°C.

Give tarte tatin a tropical twist by swapping apple for pineapple.

Pineapple tarte tatin with rum syrup

100 grams/3½oz demerara sugar

tinned pineapple, reserve the tinned syrup

320 grams/11½oz ready rolled puff pastry

Some dishes need no introduction. Sweet pears, fragrant warming spices and crisp pastry. Heaven.

For this Apple Tarte Tatin, tart Granny Smith apples are caramelized in a buttery apple cider caramel, and cooked with a buttery pie crust on top. Then flip and serve!

Apple Tarte Tatin

Preheat the oven to 400F.

Place the sugar, apple cider, and vanilla bean pod AND seeds in a 10 inch stainless steel skillet.* Turn the heat to low and let it sit while you prepare the apples.

Peel and core the apples to remove all the skin, seeds, and stems. Slice each apple in half, then each half into quarters. You should have eight pieces per apple.

Return to the caramel. At this point the sugar should be dissolved. Turn the heat up to medium, and watch as the mixture begins to turn light brown, which should take about 5 minutes. Do not stir at any point. Cook the mixture for another minute or two until it become a deep amber color, making sure to use your eyes and nose to check for any signs of potential burning. Once the caramel is a deep amber, turn the heat to low and add the butter, two tablespoons at a time. Use a spatula to stir the butter in until incorporated.

Add the apple slices carefully to the caramel, making sure not to burn your fingers. Keep in mind that it will look like too many apples at first, but they will cook down. Turn the heat back to medium and cook for 15 minutes, until the apples have cooked down and softened slightly.

Lightly flour a work surface and roll the pie crust big enough that you can cut a 10 inch circle. I lay another 10&quot; skillet on top and trace around it using a paring knife to get a perfectly circular piece. If you don&#039;t get a nice circle, don&#039;t worry, you can just tuck the excess pastry inside the frying pan.

Place the pie crust on top of the apples, then bake for 20 minutes, until the crust is golden brown.

Let the tart cool for 20 minutes, then place your serving platter on top of the pan, and invert using oven mitts. If the tart doesn’t seem to want to come out, let it cool for 10 more minutes and try again. Serve** and enjoy!

Helppo Tarte Tatin

1–1½ dl sokeria

noin 300 g pieniä päärynöitä tai pieniä hapokkaita omenoita

½ pkt (à 500 g) voitaikinalevyjä

Valitse Tarte Tatinin valmistukseen kokonaan valurautainen pannu, joka sopii myös uuniin. Kuvan piirakka on tehty halkaisijaltaan 22-senttiseen pannuun. Ota tarvitsemasi määrä taikinalevyjä sulamaan työlaudalle. (Saat kaksi piirakkaa yhdestä paketillisesta taikinaa.)

Pese päärynät tai omenat. Kuori omenat halutessasi, pehmeäkuoriset päärynät kannattaa käyttää kuorineen.

Sulata voi pannulla ja lisää sokeri. Päärynöille riittää desi sokeria, hapokkaammat omenat tarvitsevat hieman enemmän. Pyöräytä sekaisin.

Leikkaa hedelmät paloiksi niin, että siemenkota jää jäljelle. Mitä isompia paloja, sitä hauskemman näköinen piirakasta tulee. Asettele hedelmäpalat pannulle kupera puoli alaspäin. Paista omenoita pari minuuttia keskilämmöllä. Päärynöitä tai pehmeähköjä omenoita ei tarvitse paistaa, sillä ne kypsyvät uunissa samalla kuin taikinakin.

Nosta hedelmien päälle kaksi taikinalevyä. Leikkaa puolikkaasta suikaleet pannun reunoille niin, että taikina peittää hedelmät kokonaan.

Paista uunin keskitasolla noin 20 minuuttia. Anna jäähtyä pari minuuttia ja kumoa piirakka reunalliselle vadille. Nosta vati pannun päälle ja keikauta pannu-vatiyhdistelmä ympäri. (Suojaudu hyvillä uunikintailla, koska pannulta saattaa roiskua kuumaa sokerilientä.) Nosta pannu varovasti pois.

This savory-sweet version of tarte tatin replaces apples for the young, tender alliums we call spring onions. Look for spring onions with bulbs about the size of a golf ball to give the tart topping body, but smaller or larger ones will work. 
Serves 4

Caramelized  Spring Onion Tarte Tatin

spring onions (about 1 pound total)

sugar (a scant 1/2 cup)

Take the puff pastry

out of the freezer to defrost if frozen. Preheat the oven to 425 degrees.

Trim roots and any dry

, papery dirty outer layers from the spring onions. Starting with the green ends, cut the spring onions into ½-inch green tubes and then ½-inch discs with the bulb and set aside.

Add the sugar and the salt

to the middle of a 12-inch ovenproof pan and pour ¼ cup water over the top. Turn the heat on to medium. Cook, constantly stirring until the sugar dissolves, about 2 minutes. Then turn the heat up to high and let sit, cooking, undisturbed until the sugar starts to turn into a pale golden caramel, about 3-5 minutes &#8211; If it just turns golden on the edge of the pan, swirl that into the rest of the melted sugar with a wooden spoon and turn off the heat.

Add the butter, vinegar, mustard, and thyme

to the caramel. Turn the heat back on to medium stir vigorously until (if using a steel pan, you can use a metal whisk) all the ingredients are combined, and the mustard is thoroughly mixed in with no visible droplets left. The caramel should be bubbling throughout this mixing. Turn off the heat once done.

Add the onion bulb discs to the pan first; arrange them flat in the caramel all over the pan and then fill in the spaces with caramel with the green tube pieces. If any onion pieces touch the sides of the pan, tuck them in so there’s room to create a lip of crust.

Make sure your puff pastry is fully defrosted

. If the dough is a circle, great—lightly flour a workspace and roll it out to 11-inches in diameter (this will fit the inside of a 12-inch pan, cover the onions, and allow for a lip of crust). If working with a pastry sheet, roll it out to 11-inches across and cut an 11-inch circle.

Gently lay the pastry dough

over the top of the onions in the pan. The onions should be fully covered, leaving a little extra dough around the edge. Use that little extra dough and fold it onto itself to create a thicker edge. With a knife, poke holes in the pastry spaced about 1-inch apart.

Place on the oven’s middle rack and bake

until the pastry is puffed and golden with bubbling caramel coming up the sides, about 20-25 minutes. Let cool for 1-2 minutes and quickly invert over a parchment-lined workspace or cutting board.

To serve

, cut into slices and grate Parmesan over the top.

This variation on a classic French apple tarte tatin is so delicious and makes the most of the stone fruit season.

Plum tarte tatin

150 g caster sugar

plums

To make the pastry, put the flour in a food processor with 125g butter, cut into small cubes, and 25g caster sugar. Pulse until the mixture resembles fine crumbs, then add 2-3tbsp cold water and pulse until the mixture begins to form a ball. Wrap and chill for 30min.&nbsp;

Melt the remaining butter and sugar in a heavy-based frying pan. Cook, stirring, for 2-3min until the sugar begins to turn light brown. Immediately add the halved and stoned plums and cook for 5min or until the juices begin to run and the plums start to soften. During this time incorporate the plum juices into the sugar mixture. Increase the heat and bubble until the juices are very syrupy. Lift the plums out of the pan into a 23cm diameter, shallow ovenproof dish or cake tin, cut-side up, and pour the juice over. Allow to cool.&nbsp;

On a lightly floured work surface roll the pastry into a circle slightly larger than the dish and about 5mm thick. Lay the pastry over the plums, tuck the edges down into the dish and make a few slits through the pastry with a knife to allow steam to escape. Chill for 20min.&nbsp;

Bake at 220°C, mark 7 for 20min or until the pastry is golden. Cool for 5min before carefully inverting on to a plate. Serve sliced with a sorbet.&nbsp;
