Chop the tempeh into chicken nugget-sized pieces and transfer to a mixing bowl.

Add the cornstarch, paprika, ginger, garlic, sesame oil, rice wine, and soy sauce to the bowl. Mix until incorporated. Cover and chill in fridge for 1 hour minimum.

Add oil to a pan on medium-high heat and pan-fry tempeh until browned on both sides. Remove from pan.

In the same pan, add in oil and sesame oil on medium-high heat.

Add the garlic, ginger, and red pepper flakes, and cook until golden brown and aromatic, about 1 minute.

Add the tomato paste and vegetable broth, and stir until incorporated.

Add the soy sauce, rice vinegar, and honey, and stir until all are incorporated.

Add the cornstarch slurry (mix the cornstarch with the water in a small bowl until paste forms) into sauce mixture and stir until sauce thickens.

Return the tempeh to the pan and allow to incorporate with the sauce. Top with sesame seeds (optional).

How To Make Tempeh

(about 2 1/2 cups) dried whole soybeans (see Recipe Note)

Soak the beans: Place the beans in a large bowl and cover by 3 inches with water. Let stand overnight or at least 12 hours.

De-hull and split the beans: The hulls or skins need to be removed in order for the spores to inoculate the beans. Using your hands or a potato masher, knead and squeeze the beans so that the hulls fall off and the beans split in half. This is the most labor-intensive part of the tempeh-making process and may take 10 to 20 minutes. Don&#x27;t worry about de-hulling and splitting every last bean, but do try to get a majority of them. Periodically stir the water so the hulls to float to the surface; skim them off and discard them.

Cook the beans: Drain the beans, transfer them to a large pot, and cover by 2 inches with fresh water. Bring to a boil. Skim off and discard any foam or hulls that rise to the surface. Reduce the heat and simmer, partially covered, until the beans are tender but not mushy, about 45 minutes.

Prepare the zip-top bags: While the beans are cooking, prepare the bags. Using the skewer or a large needle, prick holes in the bags at 1-inch intervals.

Dry the beans: Drain the beans. Spread them out on two towel-lined baking sheets and pat them dry.

Cool the beans: Let the beans cool to below body temperature.

Add the vinegar: Transfer the beans to a clean, dry bowl. Sprinkle the vinegar over the beans and mix well. Adding vinegar lowers the pH and prevents the growth of unwanted bacteria.

Add the tempeh starter: Sprinkle the tempeh starter over the beans and mix for about a minute to distribute evenly.

Fill the bags: Divide the beans between the two bags.

Flatten the bags: Seal the bags and flatten the beans out evenly.

Incubate the tempeh: Place the bags in the incubator. The temperature must be between 85°F and 90°F for the next 24 to 48 hours, so periodically check to make sure the temperature is consistent.

Check at 12 hours: Between 12 and 24 hours you should start to see some white mycelium growing on the beans. You may want to lower the heat source because the beans will start generating their own heat as the mold grows; an instant-read thermometer is handy for checking the internal temperature of the fermenting tempeh.

Continue to incubate up to 48 hours: Depending on your conditions, the tempeh may take up to 48 hours total. The mycelium will continue to thicken, forming a white layer around the beans and binding them into a dense, firm cake. The tempeh is done when the entire surface is covered with dense, white mycelium (some black or gray spots are okay), as well as the spaces between the beans. The beans should be bound together firmly as a cake. You may want to slice a small piece off the edge to make sure the cake is firm all the way through. The tempeh should smell pleasantly nutty and mushroomy. It may also have a light ammonia smell.

Stop the fermentation: Remove the bags from the incubator and let the tempeh cool to room temperature. Transfer the tempeh cakes to airtight bags or containers and store in the refrigerator up to 1 week.

Using tempeh: Use freshly-made tempeh in your recipes! Tempeh can be eaten raw or cooked. Cooking brings out the nutty flavor, and some people prefer cooked because it can be slightly bitter raw.

Freezing tempeh: To freeze the tempeh, steam it for 20 minutes and then freeze in an airtight container up to 3 months.

Troubleshooting: You may see some black or gray spots on the tempeh, especially near the air holes — this is completely normal and safe. If you see any other colors or if the tempeh is mushy, slimy, or smells bad, you should discard it.

Marinated Baked Tempeh

Cut the tempeh into cubes, place in a steamer basket, and set over a pot with 1-inch of water. Bring the water to a simmer, cover, and let steam for 10 minutes. This helps it become tender and ready to soak up more flavor from the marinade.

In a small bowl, whisk together the tamari, vinegar, maple syrup, olive oil, sriracha, and several grinds of pepper. Place the tempeh in a shallow dish and pour the marinade on top to coat. Marinate for at least 30 minutes.

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Arrange the cubes onto the baking sheet, reserving the excess marinade.

Ginger Sesame Tempeh Vegan Lettuce Wraps

(8 ounce) package tempeh, (cut into 1/2 inch cubes)

lettuce leaves, (such as bibb or romaine)

scallions, (chopped)

sesame seeds

In a small bowl, stir together the soy sauce, lemon juice, sesame oil, maple syrup or, sambal oelek, ginger and garlic. Add the cubed tempeh and toss to coat.

If you've got some time, let the tempeh marinade for a half hour or so, tossing it every so often to recoat. Otherwise, you can skip this step.

Coat the bottom of a medium skillet with oil and place it over medium heat. Add the tempeh along with any excess marinade. Cook for about 10 minutes, flipping once or twice until the liquid has cooked off and the tempeh is browned on multiple sides.

Add the carrots, raise the heat to high, and stir-fry for about a minute, until the carrots are tender-crisp.

Divide the mixture onto lettuce leaves and top with scallions and sesame seeds. Serve.

Easy Tempeh Marinade + How to Cook Tempeh 3 Ways

Cut tempeh into 4 triangles.

Steam tempeh using a rice cooker or steamer basket on the stovetop. To steam using your rice cooker, add 1 cup of water to the rice cooker pot. Then, place the tempeh triangles in the steamer basket. Close the lid and press the steam or steam cook button (depending on your brand of rice cooker) and select 10 minutes for the steaming time. To steam using a steamer basket, boil 1-2 inches of water in a pot that fits your steamer basket. Place the tempeh triangles in the basket and carefully place the basket into the pot. Cover and steam for 10 minutes.

For either method, after steaming, turn off the heat and allow the tempeh to cool for about 5 minutes before removing from the rice cooker or steamer basket.

While tempeh is steaming, make the marinade. Use a shallow container that has a tight fitting lid and that is just big enough to fit the tempeh. I used a 7.5 x 5 x 1.5 inch rectangular glass Pyrex dish with lid that holds 3 cups (750 ml.) of liquid. Add tamari, olive oil, rice vinegar, garlic powder and onion powder, and then whisk together with a fork.

Carefully place each triangle into the marinade in the container. Then, carefully flip each piece so that the other side gets covered as well. You can use your hands or gently use a fork to do so.

Then, seal the container with the lid. Hold the container with two hands with your thumbs tightly securing the lid and gently shake up and down and side to side a few times to fully coat the tempeh.

Refrigerate for at least 30 minutes. You can flip the tempeh triangles again halfway during marinating, if desired, but it’s not entirely necessary.

Using tongs, carefully place the marinated tempeh triangles on a grill that has been prepared for medium heat cooking.

Spoon or baste whatever marinade is left onto the triangles.

Grill for approximately 5 minutes on each side, carefully flipping with tongs, until browned and heated through.

FOR GRILLED TEMPEH

To bake tempeh, preheat your oven to 375° F.

Place the marinated tempeh triangles on a parchment-lined baking sheet. Spoon or baste any remaining marinade onto the triangles.

Bake for 10 minutes. Use tongs to carefully flip each triangle, and then return to the oven for another 10 minutes.

FOR BAKED TEMPEH

To saute tempeh, heat 2 teaspoons of olive oil over medium-high heat in a nonstick skillet. Use tongs to place the tempeh triangles into the skillet, and spoon on or baste any leftover marinade onto each piece.

Cook on medium-high for approximately 4 minutes per side, carefully using tongs to flip, until browned and heated through.

After cooking and removing from the pan, you can carefully blot the excess oil using paper towels, if desired.

Easy Marinated Tempeh

Smoky, savory, and slathered in sweet and zippy homemade barbecue sauce, these barbecue ribs are made from tempeh! Cook them in the oven or on the grill for a meatless summer feast!

Barbecue Tempeh Vegan Ribs

(8 ounce) package tempeh

canola oil, (or another high-heat vegetable oil)

ketchup

brown sugar

Worcestershire sauce

apple cider vinegar

cayenne pepper, (or to taste)

salt, (or to taste)

Chopped scallions, (for topping)

Stir the water, soy sauce, maple syrup, paprika, onion powder, and garlic powder together in a small bowl.

Place the entire block of tempeh into a medium skillet or saucepan, and pour the soy sauce mixture over the tempeh.

Place the pan over medium heat and bring the liquid to a simmer.

Allow the liquid to simmer for about 5 minutes, flip the tempeh, and then allow it to simmer for another 5 minutes. Spoon some liquid over the tempeh every so often while cooking, and add water to the pan if the liquid dries up before 10 minutes is up.

While the tempeh cooks, combine all of the barbecue sauce ingredients together in a small saucepan and place it over medium heat.

Bring the mixture to a simmer. Allow it to cook for about 10 minutes, adding a splash of water if it gets too thick.

When the tempeh is finished cooking, remove it from the pan, and if needed, deglaze the pan with a bit of water.&nbsp;

Wipe out the pan and coat the bottom with the oil.&nbsp;

Place the pan over medium heat. When the oil is hot, add the tempeh. Cook for about 5 minutes on each side, until browned and crisp.&nbsp;

Remove the tempeh from the pan and transfer it to a plate.

If you plan on baking your tempeh, preheat the oven to 400°. If you plan on grilling it, oil your grate, light your grill, and build a medium flame.&nbsp;

Brush the tempeh with about half of the barbecue sauce.

If baking the tempeh, place it on a baking sheet or in an oven safe skillet. Bake for about 10 minutes, until the sauce dries up in spots.

If grilling, place the tempeh directly on the grate and grill until lightly charred in spots, about 8 minutes.

Slice the tempeh into strips and serve with the remaining barbecue sauce on the side. Sprinkle with scallions if you like.

Creamy Peanut Noodles

peanut butter (creamy

oz (or 2 servings) rice noodles

green onions diced (plus more for serving)

kale

sesame seeds (for serving)

Start by whisking together the peanut butter, soy sauce, sriracha, maple syrup, and rice vinegar (this is your peanut sauce). Set aside.

Heat sesame oil in a large wok (a large saucepan should work too, you may just have to adjust cook time) over high heat.

Add chopped tofu or tempeh and let cook for 4-5 minutes (mixing periodically to ensure it does not burn).

While the tempeh is cooking, cook the noodles according to the instructions on the back of the packaging.

Turn the heat of the wok down to low-medium heat and add in the chopped green onions and kale. Mix.

Add in about 1 tbsp. of water and continue mixing. Let cook until the kale gets semi-wilted and the water has boiled off.

Add ~2/3 of the peanut sauce (we&#039;ll use the rest later) to the tofu or tempeh and veggies and mix.

Add the cooked noodles to the wok and mix well.

Split evenly amongst two plates.

Heat up the rest of the peanut sauce in the microwave or saucepan until warm.

Drizzle both plates of noodles with the extra sauce and top with more green onions and sesame seeds (if you desire)! Eat up!

Emma Galloway's Tempeh & Mushroom Burgers with Smashed Avocado

Heat a small saucepan over medium-high heat. Add oil and onion and cook, stirring often, for 4–5 minutes or until tender and golden. Add garlic, finely chopped mushroom and thyme and cook, stirring often, for a good 5–8 minutes or more, until the mushrooms have released their juices and these have evaporated, so that the mushrooms are almost dry, tender and golden (this is important because you don't want any excess moisture or your patties won't hold together). Add paprika and cook for a further 20–30 seconds.

Transfer to a food processor, add tempeh and breadcrumbs and pulse until finely ground. Season with salt and pepper. Shape into 4 large patties, cover and chill for at least 30 minutes, or up to 2 days if preparing ahead of time. If you don't have a food processor, finely chop the tempeh, add onion mixture and breadcrumbs then, using your hands, scrunch everything together until it holds its shape.

Heat a large saucepan over medium-high heat, add a splash of olive oil and cook the patties for 3–4 minutes on each side, or until golden. Grill buns on the cut side until golden. Spread a little mayonnaise and pesto onto the base of each burger bun, then add a patty, a few micro greens or lettuce, some onion slices. Top with smashed avocado and spread a little relish on the cut side of the top bun and place over.

How to Make Tempeh - Easy Method

Soak the beans overnight or for at least 8 hours. Then drain the water. (You may keep this water and feed it to the plants).

Rinse the beans a couple of times with fresh water then place them in a large pot and fill with fresh water to cover them so that the water level comes to about an inch above the beans.

Cover and cook on medium heat.

Keep an eye on the pot and if the water starts to boil over, place the lid at a slight angle to let more of the steam escape. Then lower the heat. Once the excess steam has gone down, you can cover the pot again.

Check for the water level every now and then. Check the beans for doneness as from 30 minutes. Add more water if needed to cook the beans for longer. Soybeans may take from 30 minutes to one hour to cook.

Cook the beans until they are almost done or to about 80% done. Then add in the vinegar. Continue to cook the beans until they are soft but not mushy.

Once the beans are cooked, drain almost all of the water.

Once drained, return the beans onto the heat and evaporate the remaining liquid from the pot. Make sure not to dry out the beans but all the liquid should be gone.

Allow the beans to cool to about 35°Celsius (or 95°Fahrenheit).

Then add the rhizopus mould to the beans and mix well.

Perforate the bag at one inch interval all over. Divide the beans in the portion size that you wish and fill them into perforated plastic zip lock bags. Close the bag and fold if necessary to reduce the size so that you get a nice thickness for the beans. Distribute the beans evenly.

If using a zip lock bag:

Cut the leaf to the required size (note: leave the stem of the leaf attach; this will prevent the leaf from being torn). Place a portion of beans on the leaf and fold the ends over to enclose them. Secure with a toothpick.

Place the bags or wrapped leaves in between two chopping board and keep in a warm place. You may place them in an incubator or in the oven with only the lights turn on for 12 hours.
