These vegetable cream cheese tortilla roll ups are the most fun little pinwheel sandwich bites ever! They&#x27;re a great school lunch option but also make the most amazing appetizer or back to school snack!

Vegetable Cream Cheese Tortilla Roll Ups

veggies: broccoli, carrots, red bell pepper

oz cream cheese ((softened))

mayo

garlic powder

dill

tsp salt

tsp black pepper

burrito-sized flour tortillas

cheddar cheese

TBSP chopped green onion

Choose and chop your veggies. I mince mine extra small so there&#x27;s a little bit of everything in each tasty bite.

Allow cream cheese to soften for easy mixing. In a medium bowl, combine cream cheese, mayo, garlic powder, dill, salt and pepper.

For easy rolling, microwave tortillas for 15-20 seconds first. Spread on cream cheese mixture and sprinkle evenly with veggies, cheese, and chopped onion.

Start at the edge of the tortilla and roll it, tightly, until you reach the opposite side.

The cream cheese will help it stick. Fasten with a toothpick or two and chill in the freezer for 20 minutes to set.. Feel free to chill overnight in the fridge (tightly wrapped or in a storage container) if making these in advance for easy. meal/snack prep.

All that&#x27;s left is to slice into pinwheels and serve!

Easy Pinwheel Recipe

(5 ounces) fresh baby spinach leaves spinach

flour tortillas

cream cheese goat cheese

tomatoes red peppers

basil

oregano

salt

mozzarella cheese

Cook the spinach

Place the spinach leaves in a skillet with 1/4 cup water. Heat over medium heat for a few minutes until the spinach completely wilts down, about 2 to 3 minutes, stirring occasionally. Remove the spinach to a bowl. Add cold water to instantly cool it, then squeeze out as much water as possible. Finely chop the spinach. (If using frozen spinach, defrost it, squeeze out the liquid and finely chop it.) 

Chop the filling ingredients

Chop the sundried tomatoes or bell peppers. 

Make the filling

To a medium bowl, add the spinach, sundried tomatoes, cream cheese or goat cheese, basil, oregano, garlic powder, and salt. Mix it until it comes together into a smooth filling (we found it’s easiest to use clean hands to help break up clumps). Taste and add a pinch of salt if desired.

Roll the pinwheels

Place a tortilla on a cutting board, and spread it with 1/3 cup of the filling. Sprinkle with 3 tablespoons of the shredded mozzarella cheese. Roll up the tortilla very tightly, making sure to keep the roll very tight at the beginning (to avoid a hole in the middle!). Repeat for all tortillas. Refrigerate in a sealed container for at least 2 hours to allow the filling to set. Slice off the ends of the rolls and discard, then slice into 3/4-inch slices to make pinwheels. They last up to 3 days refrigerated, but they taste best day of because the tortillas become softer over time.

For the first three pinwheels: Place the tortillas on a large cutting board. Add the spreadable ingredient (hummus, cream cheese or pesto to each tortilla, spreading into an even layer all over the surface of the tortilla.

Divide any of the remaining ingredients evenly between each tortilla, layering them in the center of the tortilla.

For the chicken salad pinwheel: Place the tortillas on a large cutting board. Add four leaves of butter lettuce to each tortilla. In a medium bowl, combine chicken, Greek yogurt, lemon juice, dill, Dijon, celery, salt and pepper. Stir until all of the chicken is evenly coated with the yogurt mixture. Add half of the prepared chicken salad on top of each, spreading it into an even layer.

To roll the pinwheels: Take the bottom portion of the tortilla, and fold it about ⅔ of the way up and over the vegetables. Using your fingers, pull back on the folded over portion of the tortilla to create the start of a tight spiral.

In a medium bowl, mix the cream cheese, ranch mix, and shredded cheese together.

Spread

Spread ⅕ of the cream cheese mixture onto each tortilla in a ¼-inch layer.

Roll

Sprinkle each tortilla with ham and onion. Roll each tortilla tight to make sure the cream cheese binds the tortilla together.

Choll

Place in the refrigerator until fully chilled, about 1-2 hours.

Let the flavored cream cheese come to room temperature.

Spread the cream cheese evenly over one tortilla wrap.&nbsp;

Place slices of one of the meats over the cream cheese. Leave some room at the end so that you can roll up the meat and have it stick.&nbsp;

Sprinkle the greens over the meat.&nbsp;

Starting at one end, tightly roll up the meat to form a log. Put the log on a piece of plastic wrap and roll it up. Put it in the fridge to set.&nbsp;

This was so delicious, and my husband had a fantastic idea to use the spread as a dip for chips. So of course that is going to happen in our near future! As a roll-up sandwich, they're very rich. Too salty for me. I'd eliminate the mayo next time. I added thin slices of avocado. I was hoping they'd be better.
