Remove the giblets from the chicken cavity. Pat the chicken dry all over with paper towels, including the cavity.

Generously season the entire chicken with salt and pepper. With the tip of a toothpick, poke the skin of the chicken all over, creating at least 20 tiny holes.

Transfer the chicken to a rimmed baking dish and let sit in the refrigerator, uncovered, for 8-12 hours.

Remove the chicken from the refrigerator and let it warm to room temperature for 1 hour.

Truss the chicken legs. Using butcher’s twine, tie the legs together, then slip the twine under each leg, pull up to the top of the chicken, and flip the bird over. Pull the twine under the wings, loop around the neck, and then tie to secure and cut off any excess twine. Flip the bird over again and tuck the wings under the breasts.

Set the chicken, breast-side up, on a roasting rack set over a roasting pan.

Roast for 1 hour, or until a meat thermometer inserted in the thickest part of the chicken reaches 165˚F (75˚C).

Let the chicken rest at room temperature for 20 minutes.

To carve, remove the twine. Using a sharp knife, cut between the leg and the breast. When you reach the joint, bend it back and cut right through. Twist off the wings. To remove the breasts, cut straight down along the keel bone. Then, angling your knife outward, remove the breast. Break the legs down into thighs and drumsticks, if desired. Pull off the oysters from the underside of the chicken.

If you’d like, make chicken stock from the carcass. Add the carcass to a large pot with onions, celery, carrots, garlic, and other aromatics of your choice. Cover with water and bring to a boil over high heat. Reduce the heat to low and simmer for about 8 hours, skimming off the fat as needed. Store in the fridge for a few days or freeze for a few months.

If garlic isn't peeled, peel it by hand, or by using a peeler tube or by using the shaking method inside a mason jar. Just place unpeeled garlic cloves inside a clear mason jar, screw on the lid and shake vigorously until all the peel is removed.

Using a paring knife, remove any green sprouts or brown stems from the individual peeled garlic cloves.

Add the garlic cloves to a food processor fitted with a metal blade. Process in short pulses until the garlic is evenly minced. Be sure to stop and scrape down the sides as needed. You can stop when its just minced or continue until it becomes a paste. I prefer the paste.

Transfer the garlic paste into small freezer safe storage bags. You can use a knife to draw lines to partition small 1 inch squares, which will be equivalent to about 1 teaspoon of garlic paste.

Our original contribution to the no-knead bread revolution: substitute live sourdough starter for instant yeast to create the ultimate no knead artisan bread loaf.

If you’re familiar with the “traditional” no knead recipe, I think you will find the results of this significantly different. This crust has a nice crunch to it but is much thinner and easier to chew and the interior crumb is tighter (smaller holes) and softer.

Riced Veggies work really well in a stir fry, as a flour/filling base (like in this falafel), in risotto, soups, etc.

If you simply want to bake and eat, toss the rice with a few teaspoons of olive oil, spread evenly onto a large baking pan, and bake at 350 F for 10-12 minutes

This is my favorite rye bread recipe of all time… so far. I could have just as easily called it Swedish Rye Bread or Aroma Therapy Bread for that matter (takes the coveted baking bread smell to another level). Covers both sourdough and instant yeast versions.

Artisan Sourdough Rye Bread

Water: 400 grams, 1 2/3 cups

Sourdough Starter: 70 grams, 1/3 cup (omit if making the instant yeast version)

Instant Yeast: 1 tsp (omit if making sourdough leavened version)

Whole Rye Flour: 245 grams, heaping 1 3/4 cups

Bread Flour: 245 grams, heaping 1 3/4 cups

Molasses: 44 grams, 2 Tbs

Fennel Seed: 8 grams, 1 Tbs

Anise Seed: 2 grams, 1 tsp

Caraway Seed: 3 grams, 1 tsp

Salt: 12 grams, 1 3/4 tsp

Fill a wide, high-sided skillet with 2 inches (5 cm) of water. Bring to a boil over medium-high heat. Line a bamboo steamer with parchment paper and cut slits in it to allow steam to escape.

Meanwhile, gently roll out the biscuits into 3-inch (7.62 cm) rounds. If desired, use a cutter or glass to cut out uniform circles, discarding the scraps. Spray the biscuits with nonstick spray and fold in half.

Set the steamer basket over the boiling water. Add the biscuits to the basket, spacing evenly. Cover and steam for 5–7 minutes, until cooked through and puffed.

Gently transfer the buns to a wire rack to cool slightly.

Fill each bun with pickled vegetables, a slice of pork belly, cilantro, and mint.

After 20 minutes, turn off the heat and remove the lid. Fluff the rice with a fork. Note: the rice will stay hot for a good 30 minutes (with no impact to the texture/flavour) if the lid is left on the pan.

Make sure all utensils and pots are sanitized.

In a large pot, add milk.

Slowly heat until milk reaches 180 F.

Remove from heat and let the milk cool to 100-115 F. (Mine is usually 110 F.)

Place 1 cup of the milk in a bowl and stir in the yogurt until smooth.

Pour yogurt mixture into the milk.

Pour everything into your instant pot.

Press the "yogurt" setting and select the "8 hours" option. (select 24 hours for tangier yogurt)

Place the lid on and let the yogurt incubate for 8 hours.

Once the yogurt is ready, place it into a container and chill until ready to eat.

You can also strain the yogurt in cheesecloth or a tea towel for a thicker texture.

Use plain or sweeten with sugar, honey, fruits, or preserves.

Great pizza at home with sourdough crust baked in a standard backyard barbecue grill!
