Cut the bananas into coins, then place in a resealable bag. Freeze overnight, or until solid.

It's possible to make a high carb, low fat sweet chocolate pudding using sweet potatoes. They're so sweet and have a great texture to make sweet recipes.

Low fat sweet potato chocolate pudding

sweet potatoes (450 g)

milk

cocoa powder (40 g)

Deglet Nour Medjool dates

Wash, peel and chop the sweet potatoes. Steam them for about 25 minutes or until they&#8217;re soft.

When they&#8217;re cold, place them in a blender with the rest of the ingredients and blend until smooth.

You can serve the pudding immediately, but we prefer to store it in the fridge for at least 1 hour.

We added some chopped pistachios and cacao nibs on top.

For a quick pudding recipe,  I open a can of organic sweet potato puree,  add some cocoa, sweetener of 
choice such as stevia and then flavor it with vanilla and cinnamon.  Yum!  Quick, convenient and very healthy.

Fantastic! Finally I found a way to enjoy sweet potatoes. They are so healthy but I couldn't convince my taste buds. But WOW! Fooled my mouth and we all ate as much as we wanted because it's so good for us. 

I doubled the recipe and it made 6 servings. I did make 2 changes - (1) I used water instead of plant milk, and (2) I used 3/4 cup xylitol + 2 Tbsp stevia instead of dates and maple syrup -- we are really focused on dental health right now and wanted it to be truly sugar-free. 

Do you think this could be used as icing as well? The texture seemed to fit.

The best vegan chocolate pudding - made without avocado, banana, or tofu! This is the real deal--chocolatey, rich, and creamy. 

The Best Vegan Chocolate Pudding

(13 ounces) can full fat coconut milk

Tbsp unsweetened cocoa or cacao powder

Tbsp arrowroot starch/arrowroot flour

coconut sugar

dairy free chocolate chips

tsp vanilla extract

tsp almond extract (optional)

salt

In a medium saucepan, whisk together cocoa powder, arrowroot, and sugar. Pour in the coconut and almond milk and whisk to combine. Bring to a bubble over medium heat, stirring regularly. The mixture will slowly thicken as it comes to a low boil. Whisk it for about 2 minutes after it starts bubbling. You&#8217;ll feel it thicken.

Remove from the heat and stir in chocolate chips, vanilla, almond (if using), and salt. Whisk until smooth.

Transfer to a container or serving cups. Press plastic wrap against the surface of the pudding (to prevent a &#8220;skin&#8221; from forming). Refrigerate until completely chilled. Pudding will continue to thicken as it cools.

If the pudding ends up thicker than you prefer, you can thin it out with a tiny drizzle of additional almond or coconut milk.

Vegan Chocolate Pudding

White Granulated Sugar ((150 grams))

Cocoa Powder ((28 grams) Unsweetened)

Tablespoons Cornstarch

Salt

Soy Milk ((540 milliliters)

Tablespoons Vegan Butter ((30 grams))

Add the sugar, cocoa powder, cornstarch and salt to a saucepan and mix them together.

Then add soy milk (or other non-dairy milk) and whisk it in.

Heat to medium heat, keep whisking while it heats and bring it to the boil. Let it boil for a full minute to thicken.

Then remove it from the heat and stir in vegan butter and vanilla extract.

Transfer to small glasses or ramekins and smooth down.

Refrigerate to set. Serve topped with vegan chocolate shavings and vegan whipped cream

Vegan Mexican Chocolate Sweet Potato Pudding

(280 grams) lightly packed mashed (cooked) orange sweet potatoes

maple syrup,

(25 grams) unsweetened cocoa powder

(32 grams) coconut sugar

cinnamon

cayenne

fine sea salt

Bake your sweet potatoes on parchment paper on a pan, not directly on the oven rack, at 400 degrees for 45 minutes to an hour. Depending on the size, the time will vary. You want them squishy soft. I recommend baking these over microwaving because they will have a sweeter flavor and more moisture this way.

Let your sweet potatoes cool and peel the skins. Mash completely with a fork and then measure 1 1/2 cups packed and leveled off. Weigh 300 grams for the most accurate result. Add to a food processor. Process until smooth.

Add the remaining ingredients (starting with less milk at first) and process for a couple of minutes until completely smooth. Scrape down the sides well and process once more or process until it&#039;s as smooth as you like, which can vary based on the milk used. Taste and adjust if needed, adding more syrup/coconut sugar/milk. Some sweet potatoes are sweeter than others, so it can vary.

Chill in a container for a couple of hours or more before eating. You could eat it immediately if you like, but it does taste better cold, like regular pudding does.
