Pizza Waffles Prove You Can Eat Waffles Anytime

Our chopped challenge this week was quick cooking grits. We wanted to take advantage of the grits' crunch, so we added it to our waffle batter for an unexpected texture. Chopped Basket Ingredient: quick cooking grits

Butter Roasted Chicken with Grit Waffles

finely chopped chipotle in adobo (about 2 chipotle chiles)

Kosher salt

chicken drumsticks (about 1 pound)

bone-in, skin-on chicken thighs (about 1 pound)

black pepper

unsalted butter, melted

quick cooking grits

milk

Nonstick cooking spray

Special equipment: 6 1/2-inch waffle iron

Preheat the oven to 425 degrees F with a rack set in the top. Place a baking sheet on the rack to heat up.

Whisk together 1 cup of the maple syrup and the chipotles in a bowl. Season with salt.

Place the chicken drumsticks and thighs in a large bowl and sprinkle liberally with salt and pepper. Add half of the melted butter and toss the chicken to coat. Remove the hot baking sheet from the oven and carefully place the chicken on the baking sheet, skin-side up for the thighs. Bake until the skin is golden brown and crispy and the internal temperature on an instant-read thermometer registers 160 degrees F, 20 to 25 minutes.

Meanwhile, make the waffles. Preheat a 6 1/2-inch waffle iron to medium-high heat. Whisk together the flour, grits, baking powder and 1/4 teaspoon salt in a mixing bowl. In a separate bowl, whisk together the milk, egg and the remaining melted butter and maple syrup. Slowly mix the wet ingredients into the dry ingredients, stirring until just combined.

Spray the hot waffle iron with the cooking spray. Pour 1/2 cup of the batter in the center of the waffle iron, close the lid and cook until golden brown and cooked through, 3 to 5 minutes. Transfer the cooked waffle to a plate. Continue cooking waffles with the remaining batter, spraying between batches, making 4 waffles total.

To serve, place a waffle on a large plate. Top each waffle with a drumstick and thigh. Drizzle all over with the chipotle maple syrup, serving any remaining syrup on the side.

Gingerbread Waffles

In a large bowl combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In a medium bowl, beat eggs and brown sugar until fluffy, then beat in pumpkin, milk, molasses and melted butter. Stir the wet into dry until just moist. Do not overstir the waffle batter. Brush the iron with a little melted butter and cook 4 waffles, 4 sections each. Serve with toppings of choice.

Excellent and very easy to make.  My family doesn't like pumpkin, so I substituted in 3/4 cup of applesauce for the pumpkin.  Family favorite!

This was easy and very good.  The batter is thick, so don’t think you mismeasured the liquid.  I added toasted pecans on top at serving, and they were a hit with the waffles.

These are wonderful!  Even the batter is yum :)  I must have a small iron, as I got 8 waffles out of my batch.  Even better!  I froze the extra to be warmed in the toaster for later.  This is a keeper.

Absolutely amazing. This is a new Christmas morning tradition for us. I only wish I had made them sooner. I held onto the recipe for a couple of years before trying 12/25/13. I am planning them for next week and going forward. Excellent with bacon, mimosas and some whipped fresh cream on top. Easy and delicious.

This is a great great recipe.  As soon as fall hits I begin to make it and make it through the Christmas season for my family and for company.  I have even used butternut squash (left over from Thanksgiving) in place of the pumpkin and it still turns out delicious.  This is one of the best waffle recipes that I have found and we should know as we are waffle experts in my house :).  Thank you Rachel Ray.

I replaced 1/4 cup of milk with French Vanilla creamer!!!! Omg crispy on the outside, chewy soft inside and they taste like doughnuts!!!

Way too runny.  The waffles were raw and chewy.

I decided to try this recipe because at the last minute my family decided they wanted waffles, and I didn't have sour cream for my famous sour cream Belgian waffles.  WORST CULINARY MISTAKE I'VE MADE IN A LONG TIME!!!  The batter was extremely runny, so after the "test" waffle - let me stop here and say that I have never planned a "test" anything when I cook - I added flour and baking powder, and ended up with an almost edible product.  For all the reviewers who say that they gave this recipe 5 stars with a few tweaks, I hate to break it to them, but when you have a "simple" recipe that you have to tweak, it's not a 5 star recipe.  Hope you take my advice and find another waffle recipe.  They are relatively easy to make, so don’t be afraid to run away from this recipe.

In creating this recipe, we tried out many different methods—folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

The Best Buttermilk Waffles

all-purpose flour (see Cook's Note)

1 3/4 teaspoon baking powder

baking soda

1/4 teaspoon kosher salt

1 3/4 cup well-shaken buttermilk

unsalted butter,

Maple syrup, jam, berries or yogurt,

In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. 

In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.   

Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.) 

Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

You have to like buttermilk but this recipe is very hood.  I added 1/4 sugar instead of the recipe amount.

I made these twice, each time it was discussing. I followed the instructions perfectly and had a nice looking batter, but when they came out they tasted sour and bitter. 

This is a great basic recipe, producing waffles that have a pleasantly crispy exterior, a light and tender interior, and a buttery flavor.  The batter is a little thin but it rose nicely in the waffle iron.

These are very good! I’m not a big Fan of  pancakes or waffles -the dough seems to just sits in my tummy like a lead ball. But these were quite good I had one for breakfast and another for lunch with maple syrup sandwiched around a left over fried chicken tender with Tabasco sauce from the night before. Chicken And Waffles

cayenne pepper

Chicken and Waffles

Special equipment: a deep-fry thermometer

For the fried chicken: Thoroughly rinse the chicken, then cover all the pieces with 1 3/4 cups of buttermilk. Soak in the fridge overnight or up to 24 hours.

When you're ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes to take off the chill.

In the meantime, preheat the oven to 360 degrees F and mix the breading. Put the flour, seasoned salt, paprika, pepper, thyme and cayenne (extra cayenne if you like heat) in a very large bowl and stir together well.

In a small bowl, combine the milk and remaining 1/4 cup buttermilk. Pour into the flour mixture and, with a fork, gradually mix until there are little lumps throughout. This will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to the bowl in order to make it slightly lumpy.

Heat 1 1/2 to 2 inches of vegetable oil in a deep skillet over medium-high heat until a deep-fry thermometer registers 365 degrees F. Lower the heat slightly, if necessary, to keep the oil from getting hotter.

Working in batches, thoroughly coat each chicken piece with the breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate.

Add the chicken to the oil 3 or 4 pieces at a time. Make sure they aren't sticking together, then cover the skillet and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn't getting too brown. Turn the pieces over, cover again and cook 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn't burn. Transfer the fried chicken pieces to a baking sheet (they will not be completely cooked through) and continue frying the rest of the chicken.

Bake the thighs for 15 minutes to finish the cooking process. Sometimes I'll cut into the thicker part of one of the larger pieces, just to make sure the chicken is cooked through. (If any pink juice or meat is visible, the chicken needs to continue cooking in the oven.) Cover and keep warm.

For the waffles: Preheat the waffle iron to the regular setting. Sift together the flour, sugar, baking powder and salt in a bowl.

In a separate bowl, whisk together the milk, vanilla and 2 egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and chopped jalapenos and continue mixing very gently until combined.

In a separate bowl (or using a mixer), beat the 4 egg whites with a whisk until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.

Scoop the batter into your waffle iron in batches and cook according to the manufacturer's directions (lean toward being a little deep golden and crisp!). Keep warm.

For the sauce: Pour the pancake syrup and bourbon in a small pot and bring to a boil. Turn down the heat and simmer for 3 to 4 minutes. Turn off the heat and whisk in the butter 1 tablespoon at a time, then the cayenne.

To serve: Place 2 chicken thighs on top of a waffle. Pour the warm sauce over everything and serve immediately.

This is a FANTASTIC recipe.  I agree with Anonymous' comment that this recipe is not a good choice for beginners. However, for those comfortable in the kitchen, this is a great recipe and my family raved about it. Since the waffles and chicken must cook at the same time, do all the prep you can beforehand.  I used chicken breasts instead of chicken parts, which means we followed the recipe sort of, but it took less time.  If you have fat chicken breasts, cut them in half lengthwise before marinating them (and marinating for a few hours is sufficient).  Also, I added some cayenne, paprika, and salt to my buttermilk marinade to add character. If using chicken breasts, don't bother with finishing them off in the oven. Just fry in a pan until the coating is a lovely light brown color on both sides -- they are done and remember that they will continue to cook for a few minutes after removing them from the skillet.  Also, don't be intimidated by the jalepenos in the waffle mix!  I chopped up 2 jalapenos, put them in a large glass measuring cup and then added my stick of butter and melted all together in the microwave for 30 seconds.  Then I added it to the waffle mix per the directions.  The spicy taste is subtle and a wonderful juxtaposition to the sweet of the waffle batter. You can also add another egg white or two to make the waffles even fluffier.  Lastly, plate this with waffle on the bottom, breast on top and drizzle with the syrup bourbon sauce.  But most importantly, serve it with a SIDE OF BABY SPINACH SALAD!  It is a perfect compliment to this meal. Actually, I don't think the chicken and waffles would have been as good without it. Just toss the baby spinach with some lemon juice, olive oil, salt, a handful of pine nuts, parmesan cheese, and some chopped up cherry heirloom tomatoes.  It takes less than 5 minutes to make the salad and the lightness of the salad really makes the chicken and waffles flavors pop (and you don't feel as guilty eating it). I give this whole meal a 9/10 (and so did my kids and husband!!!)

I’ve made this several times and it is fabulous!  Those who complain about the fried chicken batter, keep trying and add a spot more milk (as the recipe suggests).  Cooking is part science - the measurements, and part art.  The more you do anything, the better you get at it.  This is worth it.

Unbelievable flavours! I made this for Christmas brunch and it was filling and amazing. A new tradition! The jalapeño in the waffle bourbon in the syrup is so tasty. The chicken I drained and patted dry with papertowel &amp; the batter stuck perfectly! 2 fresh jalapeños without seeds wasn’t to hot just great flavour!

Tricks, if you notice in the video she doe not dump all the liquid in at once into the flour mixture, plus she uses a long casserole dish. I gradually added the liquid to the dry mixing with a fork to get the consistency I wanted. I also used a cast iron skillet. <div><br /></div><div>This will be my go too recipe for ever. It came out crispy and juicy. It was a huge hit in my household. </div>

**IMPORTANT** Adjust amount of milk in flour dredge for chicken!  Watch the video! She only does a 2 second pour for both milks. NOT 2 cups. If she’s using a 1 cup measuring cup in video it is about 3/4 full. 

AND she only adds enough to  make the flour barely lumpy—it is not wet! She says to keep sprinkling the dredge mix and pressing it in. You would not have to do that with a wet flour dredge. 

I’m guessing the 2 cups typo is why people got messy cement. 

I love Ree's food, but I had already made my chicken marinade and waffle batter when I decided I wanted to spice up what I was making when I found this recipe.  Based on this recipe I decided to add jalapenos to my batter and I made Ree's sauce.  Going forward, next time I make waffles, I will again add the jalapenos and I will make the sauce again because it was awesome! 

Made it today, the family loved it. This is by far the best waffle recipe ive found so far and the bourbon sauce was great. 

The waffles and boozy syrup were the best part of this recipe.  The chicken breading was “meh” at best.  I thought this whole recipe was a lot of work.  My family liked it, but not enough to want me to make it all over again.  I think the waffle recipe I will make again.  Just didn’t think it was worth all the work.

Chocolate Waffle

sugar, approximately 3 tablespoons

cocoa powder, approximately 1/2 cup

unsalted butter, melted and slightly cooled

Preheat waffle iron according to manufacturer's directions.

In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl beat together the eggs and melted butter and vanilla, and then add the buttermilk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

I think these waffles are so good! We put egg whites in the batter and whisked them until stiff peaks   formed! We put them in the waffle iron for about 4 minutes. And they were perfect!                             review by Madelyn age 7.<br />

I love Alton but this was awful. They were incredibly tangy. Made them for my grandsons and said they tasted weird and the other just said yuck. Everything ended up in the trash. Maybe if I make them with regular milk they will be better.

Thanks Alton for an easy and quick morning waffle recipe. I tried with Stevia but it's just not sweet enough, so go with the REAL sugar. I served with the chips on top with powder sugar and of course, REAL BUTTER, YMMM

My kids and I saw Alton make this recipe on his show Good Eats.  I found the recipe on-line and decided to give it a try.  I followed the recipe exactly as described.  We all thought the waffles were okay but will not be making these again.

I made this as a dessert. The consistency of the batter was great - I didn't have any of the problems of some of the other reviewers. I will note it is super important that the eggs are room temperature, otherwise the melted butter - even cooled - will start to solidify when you add it to the eggs. Also, the final result was more savory than sweet. I dusted with powdered sugar, and drizzled with chocolate syrup. It would also be delish with ice cream, or a sweetened fruit purée.

Very tasty! An excellent addition to our waffle repertoire, with or without the chips!

Waffle Taco with Spicy Sausage and Hot Honey

"just add water" waffle mix

vanilla paste

Preheat a mini (4-inch) round waffle maker.

Mix the waffle mix with 2 cups water and the vanilla paste until there are no more large lumps; do not overmix. Let the batter sit while you prepare the sausage and eggs.

Cook the sausage in a large nonstick skillet over medium heat, breaking the sausage into small pieces with a wooden spoon, until the sausage is cooked through, 8 to 10 minutes. Transfer to a bowl and set aside to keep warm.

Wipe out the skillet. Melt the butter in the skillet over medium-low heat. Meanwhile, in a medium bowl, beat the eggs until smooth and evenly yellow. Add the cream and salt and pepper to taste and beat until well mixed. Add the eggs to the skillet and gently scramble. When the eggs are halfway done, sprinkle the cheese over the eggs, then stir to mix in and continue to cook until desired doneness, about 5 minutes. Transfer the eggs to a bowl and keep warm.

Cook the waffles, spreading 2 1/2 to 3 tablespoons batter into the waffle maker for each. Cook until the waffles are yellow, not golden, and still pliable, about 1 1/2 minutes per waffle. Transfer the waffles to a kitchen towel to steam and soften as done. (This should yield 16 to 20 waffles.)

To assemble the waffle tacos, spoon about 2 tablespoons sausage, some crushed tortilla chips and 1 tablespoon eggs onto each waffle. Drizzle with the hot honey and serve immediately. 

"Everything" Savory Potato Waffles with Smoked Salmon

sesame seeds, toasted

russet potatoes, peeled

For the "everything" seasoning: In a small bowl, stir together the sesame seeds, poppy seeds, dried garlic, dried onion and salt. Set aside.

For the waffles: Coarsely grate the potatoes on a box grater. Wrap the grated potatoes in a clean kitchen towel and squeeze out the excess moisture. Whisk the flour, baking powder, salt and 1 tablespoon of the "everything" seasoning together in a large bowl. Add the potatoes, eggs, milk, butter and scallions; stir to combine.

Preheat a waffle iron. Using 1/3 cup batter per waffle, cook the waffles for about 4 minutes (or according to manufacturer's directions). With an offset spatula, flip the waffles and cook an additional 2 minutes, or until they're a deep golden brown. As you go, transfer the cooked waffles to a baking sheet and keep warm in a low oven.

To serve: Top the waffles with smoked salmon and a dollop of creme fraiche, sprinkle with capers and "everything" seasoning, and garnish with a dill sprig.

So yummy. Easier than I thought it would be. Will enjoy making for the family over the holidays
