This Waldorf salad is loaded with apples, celery and walnuts. It's crisp, crunchy, refreshing and perfect served as a light appetizer or side salad.

Waldorf Salad

apples,

red seedless grapes, chopped in half

celery, diced

walnuts (toasted, if you’d like)

plain yogurt (regular, Greek or dairy-free) or mayonnaise

golden raisins (optional)

parsley (optional)

Tablespoon lemon juice

sea salt

Toast walnuts

add walnuts into a skillet over medium heat and toast for 2-5 minutes or until fragrant, tossing occasionally. Remove from pan and let cool.

Make salad

In a large bowl combine diced apple, grapes, celery, walnuts, yogurt, lemon juice as well as raisins and parsley (if using). Taste and season with salt and add pepper if desired.

Serve

Serve salad over a bed of lettuce, if desired.

Storage

Salad will keep in the fridge in an airtight container for 3-4 days.

Add the diced apples to a large mixing bowl and sprinkle with the sugar and lemon juice. Toss to coat. Add the celery, grapes, and nuts.

In another bowl, whip the whipping cream until peaks form, then gently fold in the mayonnaise. Fold into the apple mixture and season with the kosher salt. Taste and adjust the seasoning to your liking. Chill for 1 hour or overnight. Serve by itself or on a lettuce leaf.

Chicken breast, apples, grapes, pecans and celery in a creamy dressing. It's a perfect combination of flavors and textures. I served this over a bed of baby arugula and baby spinach, but this is also wonderful on a whole grain roll or in a healthy low carb wrap.

Chicken Waldorf Salad

oz 1 breast poached chicken breast (recipe follows)

chicken broth

apple

grapes

celery (chopped)

tbsp 0% Greek yogurt (I like Stonyfield)

Kosher salt and pepper

pecans

baby greens

To poach chicken breast: Cover chicken breast in broth in a small pot, add water if it doesn't cover the chicken.

Add salt and pepper, a piece of celery and it's leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil.

Reduce to a simmer and cook 5 minutes.

Remove from heat, cover tight and let it sit for 15-20 minutes or until thickest part of the breast registers 160 degrees. Chicken will be cooked through.

Drain, let it cool and cut into small cubes.

Combine mayo, yogurt, salt, pepper and mix well.

Add chicken, grapes, apples, celery, and let it chill in the refrigerator until you are ready to eat it.

Mix in pecans right before serving.

Serve over baby greens.

Heat a dry frying pan over a medium-high heat and toast the walnuts for 3-4 mins until lightly golden and aromatic. Tip into a bowl and leave to cool.

Toss the apples with a splash of the lemon juice to prevent them discolouring. Combine the mayonnaise, yogurt, mustard and remaining lemon juice in a large bowl and season well. The dressing will keep chilled for up to two days. Mix the apples, grapes and celery with the dressing and toss well in a large bowl to ensure everything is evenly coated. Arrange the lettuce leaves on a serving platter and spoon over the apple mixture and any remaining dressing from the bowl. Scatter over the toasted walnuts before serving.

Make dressing. In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, and honey. Set aside.

Toss it all together. In a large bowl, add the green apples, celery, grapes, walnuts, parsley, salt, and mayo dressing. Stir it all together until everything is evenly coated.

I used sour cream instead of yogurt, because that's what I had, and other recipes call for it.  I omitted the salt and parsley.  Pretty good, but I would reduce the amount of dressing, because it overpowers the rest of the ingredients.  As a dinner salad, I also think it might benefit from crubled blue cheese or a sharp cheddar.

I added green &amp;  red grapes, as well as the celery, green apples, and the remaining ingredients! So easy!!! Made. It with a side dish for baked haddock &amp; rice! Everyone said it was delicious! Thank you so much! Lisa

Didn't have any grapes so skipped those, but I think it had the right level of sweetness nonetheless.

Oh, I loved this recipe!

Loved the way that you changed the sugar for honey (all hail the honey bees). I changed the mayo to the light version and the Greek yogurt to the zero % fat (or strained) version.

As I don't like Granny Smiths, I used two regular organic apples and added an extra tablespoon of lemon juice for that necessary zip and zing.

I had the Waldorf Salad on the side with some baby potatoes jacketed (with wee dots of half fat butter), steamed Tenderstem™ broccoli, and a lightly seasoned turkey stake. The absolute business.
