Set out a medium mixing bowl. Add the sour cream, mayonnaise, buttermilk, apple cider vinegar, salt, pepper, and garlic powder. Stir well. Then mix in the crumbled blue cheese. Cover and chill until ready to use. (If possible, make a day ahead, or early in the day, so the blue cheese has time to permeate the dressing.)

Cook the Bacon: Set a skillet over medium heat. Place the chopped bacon in the skillet. Brown the bacon for 4-6 minutes until crispy, stirring regularly.  Then scoop the bacon out of the skillet onto a paper towel lined plate to drain off the grease.

Make the Dressing:

Slice the tomatoes in half and chop the scallions. Then set the head of lettuce on the cutting board. Trim the root/core end a little. Cut the head in half, through the core. (This helps hold the wedges together.) Then cut each half in two, through the core.

Prep the Veggies:

Set each lettuce wedge on a plate. Drizzle with a generous amount of blue cheese dressing. (At least ¼ cup per salad.) Then sprinkle the tops with halved tomatoes, scallions, bacon, and more blue cheese crumbles. Finish each salad plate off with a bit of fresh cracked pepper. Serve cold.

Stack the Wedges:

On a giant board, make sure it is food safe or place parchment paper down. In the center, arrange the pepper filled with feta cheese.

Place 4 small bowls on the board filled with the 2 dressings, red onions, and bacon pieces.

Next, arrange the sliced cucumbers, then the tomato wedges around the bell pepper. Arrange the soft boiled eggs, cantaloupe, and on the outside the dinner rolls and iceberg quarters.

Don’t forget tongs and spoons. Garnish with parsley and ENJOY!

Iceberg Wedge Salad Recipe

extra blue cheese crumbles (1-2 tablespoons per salad)

Prepare Lettuce

Take a whole head of lettuce and remove any wilting or brown leaves from the exterior. Hold the entire head of lettuce core side down and give it a few good bangs on the counter to loosen the core. Use your fingers to wiggle out the center core. Fill the entire head of lettuce with cold water to rinse all the interior leaves. Since it grows like a cabbage or onion, all the layers will get rinsed! After it is filled with water, rinse the exterior. Dump out all the water you can and shake out any excess. Leave it facing down on a clean kitchen towel to drain for 5-10 minutes.Cut the entire head in half then cut one half in half again, making 2 individual wedges. Place each wedge, curve side down on a plate. Save the other half head of lettuce by wrapping the cut side in paper towel and storing in a gallon size zip top bag.

Make Dressing

In a small bowl, whisk all ingredients for the dressing together. Set aside.

Assemble

On two dinner plates, place wedges of iceberg lettuce, cut side up. Drizzle generously with dressing. Top with bacon, eggs, tomatoes, extra blue cheese and chives. Serve.

Combine the sour cream, buttermilk, olive oil, vinegar, salt, onion powder, garlic powder, chives, and sriracha in a jar. Stir until well combined.

Prep your grill by getting it nice and hot. Cut the iceberg lettuce into quarters through the core and stem - this way they hold together. Brush each wedge with a generous amount of olive oil, and get ready to put them on the grill. It will go fast, so don’t walk away. Quickly arrange the lettuce wedges cut side down across the hottest zones of your grill. Leave them there for 30-45 seconds, or long enough to take on some color. Then, quickly (and carefully) turn each wedge onto its second cut side, for another 30-45 seconds, remove quickly onto individual plates or a family-style platter.

Serve drizzled with the dressing and lots of crushed kale chips, toasted nuts (pine nuts and pistachios pictured here), and you can never have enough chives. You'll likely have plenty of leftover dressing, it keeps, refrigerated, for 4-5 days.

Make Blue Cheese Dressing.

Add all of the dressing ingredients to a medium bowl and stir well to combine. Refrigerate for at least 30 minutes, or can be made several days in advance.

Cook bacon.

Cut the bacon into pieces and cook the bacon in a skillet until crisp. Remove to a plate lined with paper towels.

Cut lettuce.

Cut the iceberg lettuce in half. Cut each of the halves again in half or thirds (depending on how big the ice berg lettuce head is), to create &quot;wedges&quot;. Place wedges on individual plates. 

Add toppings:

To serve, spoon dressing over lettuce and then sprinkle the bacon crumbles, tomatoes, onion and blue cheese crumbles on top. Season with fresh crushed black pepper, to taste.

The Best Wedge Salad

Creamy Ripe Green Olive dressing,

olive oil

cherry tomatoes,

gluten-free croutons

chives, finely chopped

½ cup parsley, finely chopped

¼ cup chopped fresh flat-leaf parsley

Kosher salt to taste, around 2 pinches

  Using a hand mixer or blender, blend the Whole30 Mayonnaise, pressed garlic, parsley, chives, lemon juice, salt, red wine vinegar, olive oil, and 2/3 can of olives until smooth. Add the remaining olives and pulse until coarsely chopped. 

How to make Creamy Ripe Green Olive dressing:

  Cut each head of iceberg lettuce into quarters, leaving the stem attached and the leaves as intact as possible. Gently rinse and allow to drain for 5 minutes, then place the quarters on a tea towel-lined dish or baking sheet, cut side up. Place in the fridge so that the lettuce wedges crisp up for 60 minutes.

  Slice the bacon slab on the short side into ½ inch slices and then cut those slices into 1-inch pieces.

  Heat the olive oil in a pan over medium heat and add the bacon pieces. Saute the bacon until desired crispiness, about 20 minutes. When finished, remove from the pan with a slotted spoon and place on a paper towel-lined plate to drain.

  Fill a pot with enough water to cover the eggs and bring to a boil. While the water is heating, fill a medium bowl with ice and water. Gently add the eggs and boil for 8 minutes and 40 seconds. Remove the eggs and put them into the ice water for 3 minutes. When the eggs are cool enough to handle, peel and slice them into 1/4-inch slices—do this lengthwise as you want to be able to see the yolk in each slice. (I learned this method from Chris Kimball.) Set aside.

  Assemble the salad on a large platter with the lettuce wedges cut side up and season them with salt.

  Evenly distribute the blue cheese then liberally sprinkle chives and parsley. Next, drizzle the dressing over the top.

  Finish with the egg slices, tomato, bacon, croutons, black pepper, and marinated red onions, if desired.
