This traditional Welsh rarebit recipe uses&nbsp;grated strong cheddar cheese, beer or ale, butter, Worcestershire sauce and English mustard.&nbsp;Quick and easy to make, it will be on your table in no more than 15 minutes! Blasus (that's Welsh for delicious!)

Welsh rarebit

g cheddar cheese (Welsh Caerphilly or Hafod cheese work well)

70 ml ale or beer

Worcestershire sauce

unsalted butter

tbsp English mustard (or 1 tsp English mustard powder)

Lightly toast the bread under a preheated grill or in a toaster.

In a medium-sized bowl, mix together the grated cheese, beer or ale, butter, Worcestershire sauce and English mustard. Stir until thoroughly combined.&nbsp;

Spread a generous layer of the mixture over each slice of toast, ensuring it covers the crusts too.

Transfer each slice onto a baking tray and place directly underneath the grill for five minutes or so, until golden brown and bubbling.&nbsp;

Carefully remove from the oven, cut each slice in half and serve hot, either alone or teamed with a crisp green salad and rich, fruity chutney.&nbsp;

Heat milk in a small saucepan. Melt 1/4 cup butter in another saucepan, stir in flour and cook for 2 minutes. Whisk hot milk into flour mixture, stirring constantly until thickened, about 5 minutes.

Add cheese, beer, tomato paste, Worcestershire and mustard and stir constantly over low heat until cheese is melted, about 3-5 minutes.

Spread remaining butter on bread and place on broiler-proof pan or cookie sheet. Top bread with bacon, then tomato. Pour 1/2 cup cheese sauce over each bread slice. Broil until lightly browned, about 2 minutes.

Garnish each with chopped parsley and serve, assuring diners that there are no bunnies involved.

A traditional British recipe, this perfect Welsh rarebit is the ultimate quick and easy lunch - made with a gooey cheese sauce, and grilled to perfection on crispy bread.

Perfect Welsh Rarebit

Tbsp (~ 15 grams) butter

Tbsp plain flour

120 ml (~ 1/2 cup) milk ((or

75 g mature cheddar cheese, (grated (~ 3/4 cup when grated))

tsp mustard (I used Dijon)

tsp black pepper

Begin by laying the slices of bread on a baking tray, and placing them under the grill (broiler), set to a medium-high heat. Cook for a couple of minutes until one side of the bread is golden brown and crispy. Then, turn each slice over and remove from the grill.

Meanwhile, melt the butter in a small saucepan, and add the flour. Mix well for 30 seconds, then add half of the milk. Stir well until the sauce is smooth, then add the remaining milk and mix again. The mixture should thicken up into a smooth, thick paste.

Add the grated cheese, mustard, and black pepper. Cook for another minute or two, stirring constantly, until the cheese has melted and the mixture is smooth.

Spoon the sauce onto the untoasted side of each piece of bread, gently pushing it to the edges with the back of the spoon (don&#39;t worry if it spills over the edges a bit!).

Place back under the grill (broiler) for about 5 more minutes, until the cheese sauce is just beginning to brown. Serve immediately.

A yummy vegan version of the traditional Welsh Rarebit (aka poshed up cheese on toast!) Perfect for snacking on or serving up with some soup!

Put it all under the grill to heat up &amp; become bubbly &amp; golden. Sprinkle with a few drops of the vegan Worcestershire sauce if you like.

Serve hot!

In a small saucepan gently warm the ale, set aside. Take another small saucepan and over a medium heat melt the butter until it begins to foam, tip in the flour and stir everything together, cooking for 1 min. Whisk in the warm ale in several additions to create a thick sauce then whisk through the cheese to create a thick paste. Stir the mustard, Worcestershire and chives through the sauce.

Heat a grill to its highest setting. Place the slices of bread on a flat baking sheet and grill on one side until golden brown. Flip the bread over and spread each one with the cheese mixture. Place back under the grill and cook for a further 1-2 mins or until golden brown and bubbling, serve immediately.

Give classic Welsh rarebit a tangy twist with lime pickle in this easy lunch. If you don’t have any, this could work well with spicy mango chutney instead

tbsp lime pickle, finely chopped

Melt the butter in a saucepan over a medium heat. Once foaming, tip in the flour and mustard powder and stir until a paste forms. Continue to cook for 2-3 mins until the paste turns darker. Splash in the Worcestershire sauce and a little of the beer. Stir and continue adding the beer slowly, stirring well after each addition, keeping the heat low to make sure the mix doesn’t boil.

Heat the grill to high. Remove the saucepan from the heat and stir through the cheese and lime pickle, continuing to stir until the cheese has melted. (You may need to return the pan to a low heat to completely melt the cheese.) Season with a pinch of pepper and set aside. Arrange the sliced bread on a baking tray and lightly toast both sides under the grill, 1-2 mins each side. Spread the cheese sauce over the top and grill for a further 3-4 mins until bubbling and browned. Leave to stand for 2 mins before serving with a green salad in a lemony dressing, if you like.
