A delicious, easy Sweet Potato Frittata with Ham and Caramelized Onions. Whole30 and Paleo friendly, it's great for healthy breakfasts and dinners too!

Sweet Potato Frittata

sweet potato (about 1 medium)

olive oil (divided)

ham Canadian

onion

rosemary

eggs

cheddar cheese (about 1 ounce)

black pepper

salt

feta cheese (plus additional for serving)

Place a rack in the center of your oven and preheat the oven broiler to high.

Place the chopped sweet potato in a microwave-safe bowl. Fill the bowl with water to a depth of 1/2 inch. Cover the plate with a paper towel (or use a reusable microwave-safe cover). Microwave on high until the cubes are slightly tender but not fully cooked, about 4 to 5 minutes. Let cool a few minutes, then drain.

Meanwhile, heat 2 tablespoons oil in a 10-inch cast-iron or similar ovenproof skillet over medium-high heat. Swirl to coat the skillet. Once the oil is hot, add the ham. Cook, stirring often, until the ham is browned on all sides, 4 to 5 minutes. With a slotted spoon, remove the ham to a plate and set aside.

Reduce the heat to medium. Add the remaining 1/2 tablespoon oil, onion, rosemary, and sweet potato. Sauté, stirring often, until both the onion and sweet potato are lightly browned and the onion is softened, about 7 minutes.

In a large mixing bowl, whisk the eggs until blended. Whisk in the cheddar, black pepper, and salt.

Remove the skillet from the heat. Slowly and gently pour in the egg mixture. Sprinkle with the ham and feta.

Place the skillet in the oven. Broil until the eggs are set and the top is golden, about 3 to 5 minutes. Watch very carefully towards the end of the cooking time to ensure it doesn’t burn (don’t walk away!). This time may vary depending upon your skillet (different materials hold heat differently). If at the 5 minute mark your frittata is not fully cooked, switch the oven to BAKE at 350 degrees F and continue cooking until the eggs are set. Remove from the oven (be careful, the skillet handle will be hot). Let cool a few minutes. Slice and serve warm or at room temperature.

Turkey Sausage Patties with Apple

Combine turkey (or chicken), diced apple, spices, salt, and pepper in a mixing bowl. Mix thoroughly with a large spoon or your hands.

Using wet hands, form meat mixture into 12 small patties (Thin is good because they will shrink and fatten up in the pan a bit).

Heat a large skillet over medium-high heat. When the skillet is hot, add oil/fat (about ½ Tbsp. per batch of patties, depending on the size of your pan and whether or not it&#8217;s non-stick).

Add the patties to the pan, being careful not to overcrowd them or it&#8217;s difficult to flip them and they won&#8217;t brown as well. Cook for about 4-5 minutes per side until browned and no longer pink in the center.

Remove patties to a plate lined with a paper towel and repeat with remaining oil and turkey mixture.

Store in a covered container in the refrigerator for up to 4 days – may be frozen for longer storage.

Got this recipe emailed to me right on time! With my husband being sick, and me working two jobs, there was no time to go grocery shopping. And this recipe allowed me to utilize the stuff we already had at home to make an all-thumbs-up breakfast for, not only my ailing husband, but my roller-derby-bound daughter! Both were astounded at how successful "my" creativity turned out, especially with our limited ingredient supply! I did substitute pears for the apples (again, no time to shop), and all our ground turkey is blended with lean ground beef.  Still turned out DELICIOUS though! After devouring the sausage and eggs, my husband said he felt better than he had been in the prior days, and I felt really good knowing my daughter had an excellent breakfast in time to serve up the hits on the derby track!

I made these this morning and they are great!!!  I didn't have sage, so I used italian seasoning and followed directions.  I used ground turkey breast 97% fat free.  I will double or triple recipe next time!

Found this recipe in the midst of a frustrating stop in front of the breakfast sausage section of the grocery store, and it was exactly what I needed! Simple and delicious. I knew I didn't have fennel or onion or garlic powder at home, but I decided real garlic could work - totally did! The sausage patties turned out great, and I definitely recommend using sage. Thanks!

I loved the flavor of the sausage, however it turned out a bit dry for my taste. Perhaps I just overcooked it, but perhaps adding some fat or an egg to the mix would help with this?

NOTE: If you don’t like reviews by people who don’t follow recipes exactly, move on. 

I made these with some significant changes. First, I added carmelized red onions and chopped, steamed kale along with the apples. I doubled the spices, using both sage and Italian seasoning, but omitting the fennel. I also added half an egg. (I was baking apple oatmeal bread at the same time and had leftover egg wash, which I threw in with the sausage. Guess who went apple picking!) Lastly, I roasted a tray of these under the broiler, which solved the baking wan color problem discussed in a prior review, and allowed me to cook a whole batch at once. My broiler was set at 550, and I flipped them when they started to brown. 

These were phenomenal. The family reactions were “WOW!” And “It tastes like Fall on a plate!” I will definitely make these again. Next time I may try adding a bit of Dijon mustard to the mix instead of the Italian seasoning.

I had to remove the garlic due to allergies, but they came out great. I've just made them for the second time they have become a fast favourite in our house. I even doubled up the recipe to freeze extras.

Easy shredded sweet potato hash browns cooked in a skillet in minutes. Better tasting and better for you than the original! Crispy outside, tender inside.

Sweet Potato Hash Browns

potatoes

chipotle chili powder (optional but delicious)

unsalted butter

To keep the patties warm between batches, preheat the oven to 200 degrees F. In a large bowl, combine sweet potato, 1 tablespoon oil, salt, pepper, garlic powder, and chipotle chili powder.

Heat a large cast iron or similar heavy-bottomed skillet over medium-high heat. You want the pan to be preheated before you add anything to it. Add 1/2 tablespoon oil and 1 tablespoon butter. Once the oil is hot and the butter melted, scoop a slightly heaping 1/2 cupful of the sweet potato mixture and drop it onto the skillet in a tight mound. With the back of a spatula, flatten the sweet potato mound into a hash brown patty (it doesn't need to be a perfect circle! Any bits that poke out will be delightfully crispy). Repeat twice more, so that you have 3 hash brown patties in the skillet.

Cook the patties on both sides, flipping them halfway through (again, don't stress if they are not perfect; if they flip in pieces, no big deal. Scoot them back together and keep cooking). Cook the patties until they are nicely browned on both sides and hot and tender in the center, about 6 to 8 minutes total. Transfer the cooked hash browns to a baking sheet and place in the oven to keep warm. Repeat with the remaining 1/2 tablespoon oil, 1 tablespoon butter, and the remaining sweet potato mixture. Enjoy hot.

This Colombian classic breakfast dish known as Huevos Pericos made with eggs, scallions and tomatoes is one of my favorite ways to prepare eggs.

Huevos Pericos (Colombian Scrambled Eggs)

Heat olive oil in a medium nonstick skillet over medium heat.

Add the scallions and cook until they soften, about 3 to 4 minutes.

Add the tomato and season with adobo or salt, cook until the liquid from the tomato evaporates, about 3 to 4 minutes.

Add the beaten eggs to pan with more adobo or salt to taste and cook over medium heat, stirring a few times until just cooked.

This breakfast is quick, easy, and filling! Plus, who doesn't love an easy clean up of one sheet pan? 

Whole30 Sheet Tray Breakfast

bacon

bunch broccolini

salt and black pepper,

Place parchment paper on a sheet tray and cook bacon at 375°F for 15 minutes. Remember, you will be adding your broccolini and eggs to the tray, so leave room for those ingredients.

After 15 minutes, add broccolini. If the bacon is crisp, remove it; if not, leave in for 5 more minutes and then remove bacon.

Crack eggs directly onto the tray, season with kosher salt and pepper, and bake with broccolini for approximately 3 minutes, until done. Remove from oven and serve.

Sheet Tray Breakfast

This easy Whole30 Breakfast Casserole with spinach, sausage, eggs, and potatoes is SUPER yummy, healthy, and filling! Gluten free, dairy free, and Paleo.

Whole30 Breakfast Casserole

extra virgin olive oil

turkey (or ground pork—your choice!)

kosher salt (divided)

Italian seasoning

red pepper flakes

garlic (minced (about 1 tablespoon))

almond milk

hash browns (thawed (about 2 cups))

green onions (chopped, divided)

Preheat your oven to 350 degrees F and mist a 9x13-inch baking dish with nonstick spray.

Heat a large skillet over medium-high heat. Add the onion and let cook until it begins to soften and brown, about 5 minutes. Add the turkey, 1 teaspoon kosher salt, sage, Italian seasoning, black pepper, and red pepper flakes. Break up meat into small pieces and continue to brown until it cooks through completely, about 7 additional minutes. Drain away any excess grease (you may have some if you use pork).

Add the spinach, garlic and half of the green onions. Cook for 1 to 2 minutes, distributing the spinach as evenly as possible. Remove from the heat and let cool slightly.

In a large bowl, beat the eggs and milk.

Scatter the hash browns in the bottom of the baking dish. Sprinkle with the remaining ½ teaspoon salt. Scatter the meat and sausage mixture over the top of the hash browns. Gently pour the egg mixture over the top. Sprinkle with the remaining green onions. Cover the pan with foil.

Bake immediately or you can cover and refrigerate it overnight! (See blog post for suggestions).

Bake covered for 20 minutes, then uncover and continue baking for 15 to 20 additional minutes, until the casserole is golden at the edges and the eggs are set in the center. Let cool 5 minutes before serving. Enjoy!

Sweet Potato Hash

sweet potatoes

white wine vinegar

sausage

extra-virgin olive oil

red bell peppers

For serving: diced avocado (non-fat plain Greek yogurt, shredded cheddar cheese (optional))

Place a rack in the center of the oven and preheat the oven to 400 degrees F.

Place the potatoes in a medium saucepan. Cover with water by 2 inches, then add the vinegar and 1 1/2 teaspoons salt. Bring to a boil, lower the heat, then simmer for 5 minutes. The potatoes should be fork tender but not total mush. Drain and set aside.

Meanwhile, heat a large (12-inch), cast iron or similar oven-safe skillet over medium heat. If using chicken or turkey sausage, add 2 teaspoons olive oil (if using pork sausage, you may not need the oil). Add the sausage, and sauté for 6 to 8 minutes, breaking the meat into small pieces, until lightly browned and cooked through. If the skillet looks dry at any point, drizzle in additional oil to keep the pan from drying out. With a slotted spoon, transfer to a plate.

Add 1 tablespoon oil and bell peppers to the pan. Increase the heat to medium-high and let cook for 4 minutes, until they are beginning to soften.

Add the drained sweet potatoes to the pan. Cook, tossing occasionally with a spatula, for 6 to 8 minutes, until the sweet potatoes are lightly browned. If the pan becomes dry at any point, drizzle in more oil as needed to prevent sticking. Return the sausage to the pan. Add half of the green onion, sriracha, black pepper, and the remaining 1/2 teaspoon salt. Stir and let cook 2 minutes.

Create 4 wells in the hash where you will crack each egg. Working one egg at a time, crack an egg into a small bowl, then carefully pour it into one of the wells. Quickly repeat with the remaining eggs.

Transfer the skillet to the oven and bake until the eggs are done to your liking, about 10 to 15 minutes for lightly runny yolks. Sprinkle with the remaining green onions and any desired toppings. Scoop generously onto plates, ensuring each serving has an egg. Enjoy immediately.

In a medium bowl, combine the nuts, flaxseed, almond flour, chia seeds, cinnamon, ginger, and salt. In a small saucepan or in the microwave, heat the milk (start with 3/4 cup) with the date syrup until almost boiling. Pour the liquid over the dry ingredients and stir to combine. Add more milk if you prefer a thinner consistency. Top with chia seeds or other desired garnishes.

One of my favorite Whole30 breakfast recipes is green shakshuka! It puts a green spin on the classic shakshuka recipe with shaved Brussels sprouts, zucchini and spinach.

Heat olive oil in a saute pan on medium heat. Add the onion and cook for 2-3 minutes, or until the onion becomes translucent. Add the garlic and cook an additional minute.

Add the shaved brussels sprouts and cook for 4-5 minutes, stirring frequently. When the brussels sprouts have softened, add the zucchini and spices and stir for another minute.

Add the baby spinach and stir until it just starts to wilt, then turn the heat to low.

Flatten the mixture with a spatula and create 5 small wells, then crack the eggs into each well.

Cook until the eggs are done to your liking. You can also add a lid to steam and cook the eggs faster.

Sprinkle the fresh cilantro on top and garnish with sliced avocado.

Breakfast Sausage (Whole30 + Keto)

Vanilla Coconut Milk Chia Pudding is a thick, creamy treat for breakfast, a snack or dessert! You only need 4 ingredients and 5 minutes of prep time to make this dairy-free, vegan, Paleo and keto recipe.

Vanilla Coconut Milk Chia Pudding

(15 oz.) can of full-fat coconut milk

sweetener of choice (see notes)

vanilla

chia seeds

Shake the can of coconut milk to blend the cream and water. Pour the coconut milk into a bowl or container (it&#039;s okay if it&#039;s not perfectly blended).

Whisk in the sweetener (if using) and vanilla until everything is smooth and blended. If the coconut cream still hasn&#039;t fully blended in, use a blender or stick blender.

Whisk in the chia seeds so they&#039;re evenly distributed.

Cover and chill in the fridge for at least an hour to set into a pudding. Give it one more stir, then serve.

Heat oil in a large cast iron pan. Add minced garlic and diced sweet potato once hot. Cook for 5-7 minutes, stirring occasionally until they begin to brown but not cook through

Add the ground turkey and all spices and brown turkey for about 5 minutes

When turkey is cooked halfway through, add in green pepper and onion. Stir to combine and cook an additional 5-7 minutes until green pepper and onion are fork tender (or done to your liking)

Taste and add any additional spices and seasonings. Remove from heat and enjoy!
