Comforting but different, this zesty lasagne is sure to impress and intrigue.

Gluten-free zesty chicken and broccolini lasagne

broccolini

chicken mince

eschalot, finely chopped

garlic cloves, finely chopped

oregano, leaves picked, 1/2 finely chopped

red chilli, seeds removed, finely chopped

(80 milliliters) extra virgin olive oil

(500 milliliters) Massel Chicken Style Liquid Stock

(70 grams) tahini

can chickpeas, rinsed, drained

firm ricotta

(125 milliliters) milk

(50 grams) finely grated parmesan

gluten-free dried lasagne sheets

tsp dried chilli flakes

tsp smoked paprika (pimenton)

Herb potato salad

500 g Waxy potatoes, halved

Tbsp Creme fraiche

tsp Wholegrain mustard

Lemon juice

Lemon

Salt &

Gherkins, finely diced

Tbsp Capers

Red onion, small, finely sliced

Tbsp

Boil the potatoes in lightly salted water until tender, drain.

Whisk together the crème fraiche, mustard, juice and zest.

Add the gherkins, capers and onion then fold through the herbs.

Apple Pecan Salad with Apple Cider Vinaigrette

spring mix

EverCrisp Apples, cored and thinly sliced

blue cheese crumbles

cranberries

butter

brown sugar

salt

water

pecan halves

cinnamon

olive oil

apple cider vinegar

white vinegar

lime juice

pineapple juice

honey

black pepper

garlic powder

Preheat the oven to 350°F and line a rimmed baking sheet with parchment paper.

In a small skillet over medium heat, add the butter, brown sugar, salt, and water.  Stir until the butter and sugar has melted. Add the pecans and cook, stirring very frequently, for about 3 minutes - being cautious not to allow the mixture to scorch.

Remove from the heat and add the cinnamon. Stir to combine. Spread the pecans on the prepared baking sheet and bake for 5 minutes. Allow to cool completely before using on salad.

To make the candied pecans:

Whisk the oil, apple cider vinegar, white vinegar, lime juice, and pineapple juice together. Add the honey, salt, black pepper, and garlic powder and whisk to combine. Set aside.

To make the dressing:

Add the spring mix to a large bowl and top with the apples, blue cheese, candied pecans, and cranberries. Drizzle with the desired dressing amount, then toss and serve.

x limes, juiced

x tbsp of Mingles Guac & Avo Topper

x tsp of light soy

dijon mustard

x tsp of agave, natural sweetener or sugar

Add all ingredients into a jar and shake until mixed

This simple appetizer is a perfect for simple entertaining!  You can make it up to two weeks ahead of time.  Just don’t forget to let it come to room temperature prior to serving.

Marinated Cheese Recipe

cheddar cheese

garlic

sea salt

red pepper flakes

thyme

Cut the cheddar cheese into cubes.

Add olive oil, apple cider vinegar, garlic, salt, and pepper flakes to a small bowl.

Whisk to combine.

Add thyme.

Place cheddar cheese in a shallow bowl and pour the marinate over it.

Cover and chill for at least 12 hours.

Bring to room temperature before serving.

This "fried" chicken tastes like the real thing, but way healthier.

Zesty "Fried" Chicken

buttermilk

blackening seasoning

kosher salt

c. cornflakes

c. fresh flat-leaf parsley, chopped

chicken drumsticks (about 2 lb.), skin removed

Heat oven to 375 degrees F. Line a rimmed baking sheet with nonstick foil. In a shallow bowl, combine the buttermilk, blackening seasoning and 3/4 teaspoon salt.

Finely crush the cornflakes and transfer to a second bowl. Toss with the oil, then the parsley. 

Dip the chicken in the buttermilk, letting any excess drip off, then coat in the cornflakes, pressing gently to help them adhere. Transfer to the prepared baking sheet. 

Bake until the chicken is golden brown and cooked through, 30 to 35 minutes.

Fresh Lemon Lime Cake

(8-ounce) package cream cheese, room temp

unsalted butter, room temp

sugar

eggs

all-purpose flour

baking powder

milk

lemon zest

lime zest

lemon juice

Preheat the oven to 350°F and grease and flour a 9&quot;x5&quot; loaf pan. Set aside.

Use a mixer to beat the cream cheese, butter, and sugar together for about 5 minutes. Add the eggs individually, mixing until each is just combined.

In a large bowl, whisk the flour, baking powder, and salt together. Add the dry ingredients, milk, and lemon and lime zest to the mixture. Mix until combined.

Pour the mixture into the prepared pan. Bake for 50 to 60 minutes or until a toothpick inserted in the center of the cake comes out clean.

In a small bowl, make the glaze by stirring the powdered sugar, lemon juice, lime juice, and water together.

Leave the cake in the pan and use a skewer or toothpick to poke holes all over the top of the cake. Pour the glaze over the hot cake. Allow it to cool in the pan for about 20 minutes, then turn out onto a serving platter. Cool completely and serve. Store in an airtight container on the counter.

I've made this six times already.  It tastes fab! It could be Tarte but the frosting brings it just the right amount of lemon/lime flavor.  And so easy to do!  Thanks for the recipe!

All I had were limes, so I used all lime zest &amp; juice. Realized too late that I was out of milk but I did have heavy cream and it worked just fine. Great citrus flavor and so moist!

I haven't  made this as of yet but seriously want to but I am put off by the amount of cream cheese.  Every pound cake I've ever made with cream cheese or heavy cream , when baked, has a ribbon of butter fat going through the cake.  I've been baking for 55 years and I know about creaming and proper temps for the ingredients.  Can I adjust this recipe to feature sour cream instead of cream cheese?  I have never had any issues with my recipe for pound cake with sour cream.  Perfect in every way.  Thanks for a reply.

If you have never heard of BFC you are in for quite the treat! BFC is an acronym that I made up to describe my absolute favorite way to make chicken in the oven. Crunchy and crispy like fried chicken, but no deep frying involved. In fact, I&#39;ve already made two recipes that both went viral: Italian BFC and Lemon Pepper BFC. So, I decided to make another variation that&#39;s actually even easier and if you can believe it even tastier! My method is nearly the same, but I have a secret weapon for this recipe that actually made my son sniff the moment he walked in the door a trail all the way to the oven! He&#39;s waiting on bated breath for me to finish this meal and film the ending so he can eat it! I used a packet of Good Seasons zesty Italian dressing mix and let me just tell you something, my house has quite possibly never smelt any better! This chicken is juicy in the middle, crispy and crunchy all around, and guess what no deep frying involved, all I did was pop it in the oven. Are you ready? Let&#39;s make it!

Zesty Italian BFC

2.5 lbs bone

lbs chicken drumsticks

zesty italian dressing mix (divided)

rosemary

parsley

tsp black pepper

breadcrumbs

oz grated parmesan

olive oil (divided)

To a large bowl add in chicken thighs, chicken drumsticks, eggs, 1 packet zesty italian dressing mix, dried rosemary, chopped fresh parsley, and cracked black pepper. Mix that together using your hands until everything is incorporated. Set that aside to marinate for at least 30 minutes.

In a large ziploc bag, add in plain breadcrumbs, seasoned breadcrumbs, 1 packet zesty italian dressing mix, and grated parmesan. Close the ziploc bag and shake that up to combine. Set it aside.

Line a baking sheet with aluminum foil and place a baking rack on top of it. The baking rack is key to getting the chicken crispy on both sides.

After your chicken is done marinating, take a piece of chicken and add it into the bag with the breadcrumbs (I did 3 pieces of chicken at a time). Close the ziploc bag and shake that up so the chicken can get fully coated in the breadcrumb mixture. Once it's coated in the breadcrumbs, set it on the baking sheet with the rack (if there's some empty spots on the chicken press some more breadcrumbs on it). Save the bag with the leftover breadcrumbs for later.

Once all the pieces of chicken are coated in the breadcrumbs and on the baking rack, drizzle ABOUT an 1/8 cup (or more) of olive oil over top of the chicken. Now transfer the chicken into the oven at 425°F and bake it for 1 hour. Once it&#39;s been 40 minutes, flip each piece of chicken (if some of the breading came off, add more from the bag you saved), drizzle ABOUT another 1/8 cup (or more) of oil over that side, and let that bake for the remaining 20 minutes. Enjoy!
