Step 1
Prick each potato 3 to 4 times with a fork.
Step 2
Using a pastry brush, brush the olive oil evenly all over each potato. Sprinkle the salt and pepper all over the potatoes.
Step 3
Set the potatoes in the basket of an air fryer, leaving a little space between each.
Step 4
Cook at 400°F for 30 minutes. Flip the potatoes and continue to cook for another 20 to 25 minutes or until the potatoes are soft.
Step 5
Remove the potatoes from the air fryer and let cool for 5 to 10 minutes.
Step 6
Cut a thin slice through the top of each potato. Fluff the inside of each with a fork. Top each with a pat of butter and a sprinkle of chives.
