Step 1
Wash the potatoes and dry them well. Preheat the air fryer to 400°F

Spray the air fryer basket with olive oil. Add the potatoes to the air fryer basket. Spray the potatoes with more olive oil and season lightly with salt pepper.
Step 3
Cook the potatoes for 15 minutes or until they are fork tender.
Step 4
Remove the potatoes from the air fryer. Place them on a plate or counter and press them with a spatula or rolling pin just until they burst open.
Step 5
Place the potatoes back in the air fryer basket. Don’t overcrowd them. It may be necessary to do two batches.
Step 6
Stir together the melted butter and garlic, in a small bowl. Using a pastry brush, coat the potatoes with the garlic butter. Cook for an additional 8-10 minutes at 400°F. Remove them once they are crispy and golden brown.
Step 7
Sprinkle with grated parmesan and serve.
