This is great for turkey leftovers. Simple, quick and flavorful. This is a good one for substitutions too. I've used white wine in place of lemon, sour cream in place of yogurt, chicken in place of turkey and Indian naan in place of the pita. Enjoy!

Apple Curry Turkey Pita

olive oil

onion

lemon juice

turkey,

curry powder,

apple,

pita bread rounds

yogurt

Heat oil in a skillet over medium-high heat. Stir in onion and lemon juice. Cook until onion is tender. Mix in turkey, season with curry powder and continue cooking until heated through.


Remove from heat. Stir in apple. Stuff pitas with the mixture. Drizzle with yogurt to serve.


Very tasty! My hubby and I loved these flavourful pita wraps... I served them with some spiced up sweet potato wedges which I found went really well with this recipe. I used Red Delicious apples for this recipe I find their flavor mingles best with curry- mmmm so good!

My family has snubbed curry dishes in the past but I thought I'd try this anyway (I'd eat it). Suprisingly they all really liked it! The curry is mild but flavorful and it gives the sandwich a great color my kids loved: "How'd you do that?" (I should think of some funky name for the color of curry dishes...maybe they'd eat more.) Anyway a fun and unique recipe--good way to mix up the blahs of leftover turkey!

I did this the first time with leftover turkey loin, then the second time with curry marinated extra frim tofu. It was amazing both times!!!! enjoy...

An excellent use for leftover turkey especially since my husband never feels that he gets enough curry. Super quick and easy to prepare. I ran out of lemon juice and simply used orange but probably should have used grapefruit for a brighter taste. We served it in wraps and had yam fries on the side. Delightful will definetely do it again.

It was still only average after I doctored it up a bit. Unremarkable to say the least. On the bright side it did remind me how wonderful pita bread is! I will not make this again.
