Step 1
Add the rolled oats, chia seeds, ½ tsp. cinnamon, ground ginger, milk, and protein powder (if desired) to a large bowl. Mix well until combined. Cover and refrigerate overnight for best results or for at least 2 hours.
Step 2
Before serving the overnight oats, heat coconut oil in a nonstick skillet over medium heat. When the pan is hot, add the apples. Sprinkle with ¼ tsp. cinnamon. Sauté the apples until softened, about 6-8 minutes. Turn off the heat and set aside.
Step 3
To assemble the overnight oats, divide the oat mixture amongst two glass jars or bowls. Add half of the apples to each serving.
