Step 1

Preheat the oven to 180C / 160C Fan / Gas Mark Place 12 tall muffin cases in a 12-hole muffin tin and set aside. Alternatively, you can bake the muffins in small cases, it will make 24 muffins.

Step 2

Place the bananas in the mixing bowl. Combine 10 Sec. / Speed Add the butter and combine 20 Sec. / Speed 5.

Step 3

Add the coconut sugar, vanilla bean paste, eggs, plain flour, baking powder, bicarbonate of soda, ground cinnamon and golden syrup and combine 20 Sec. / Speed 4.

Step 4

Distribute the mixture evenly between the muffin cases and decorate each with a banana piece. Bake for 20-25 minutes until a skewer inserted comes out clean. Leave to cool slightly before serving. They are best served slightly warm.
