Step 1

Peel your potatoes and chop them into small cubes. Place them in a saucepan and then cover with water and place the lid on.

Step 2

Par-boil the potatoes for 10 minutes, then drain.

Step 3

Coat the potatoes in 1 tbsp of olive oil and then either bake at 220C | 425F for 30 minutes or bake in the air fryer at 200C | 395F for 20 minutes.

Step 4

Next, heat the remaining olive oil in a pan and then add the minced garlic. Saute for 1-2 minutes until it begins to turn fragrant and golden, then add the tomato paste.

Step 5

Stir the tomato paste into the garlic and cook for another 1-2 minutes.

Step 6

Add the chili flakes, smoked paprika, and lemon juice, and stir.

Step 7

Tip the potatoes into the pan along with the freshly chopped cilantro and stir to fully coat the potatoes.

Step 8

Serve with this delicious garlic tahini yogurt, hummus, falafel, or a range of mezze options.
