Step 1
Insert simmering basket into mixing bowl and weigh rice into it. Rinse rice until water runs clear. Place water and salt into mixing bowl, then re-insert simmering basket with rice.

Place Varoma dish into position and weigh onion, carrot, capsicum and broccoli into it. Secure Varoma lid and steam 10 min/Varoma/speed 4. Stir vegetables and insert varoma tray and weigh snow peas onto it. Secure Varoma lid and steam 5 min/Varoma/speed 4. Place vegetables into a bowl. Remove simmering basket with aid of spatula and transfer rice into a separate bowl and cover. Discard steaming liquid.
Step 3
Place oil and chicken into mixing bowl and start High Temp. . Using tongs, transfer chicken to the bowl with vegetables, retaining any cooking juices in mixing bowl. Scrape base of mixing bowl well with spatula to loosen any caramelisation.
Step 4
Add ginger and garlic and chop 8 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Step 5
Add remaining ingredients, except garnishes, and cook 2 min/100°C/speed 3. Pour sauce over chicken and vegetables, then stir to combine. Sprinkle with sesame seeds and garnish with spring onions/shallots before serving.
