Preheat your waffle iron.

In a large bowl, mix eggs, butter, vanilla extract, erythritol (or monk fruit sweetener) and heavy cream, whisking for 2 minutes, until all ingredients are combined.

Add coconut flour, baking powder and salt and stir well, until all the ingredients are combined and there are no dry spots left. Let it rest for 5 minutes.
Step 4
Pour 1/3 of the batter into preheated waffle iron and cook for 3 to 4 minutes, or according to your waffle iron's instructions. Do not open you waffle iron before your waffle is ready!
Step 5
Coconut waffles are done when golden and slightly crispy, and there's no more steam coming out the sides of the waffle maker.
Step 6
