Step 1
Place milk, egg, oil, yoghurt and yeast into mixing bowl and mix 4 sec/speed 6, then heat 3 min/50°C/speed 2.

Add flour, baking powder, sugar and salt and knead Dough /2 min. Transfer onto a silicone bread mat or a floured work surface and shape into a ball. Wrap in a silicone bread mat or place into a large glass bowl, cover with plastic wrap and set aside to prove for 30 minutes. Meanwhile, continue with filling.
Step 3
Place cheese into mixing bowl and grate 6 sec/speed 9. Transfer into a large bowl and set aside.
Step 4
Place mint, parsley and spinach into mixing bowl and chop 2 sec/speed 6. Transfer into bowl with cheese.
Step 5
Place oil, garlic, onion, cumin, coriander and paprika into mixing bowl and chop 3 sec/speed 7.
Step 6
Scrape down sides of mixing bowl with spatula and cook 3 min/Varoma/speed 1.
Step 7
Add mince, flour, salt, pepper and lemon juice and cook 4 min/100°C//speed 1.
Step 8
Scrape down bottom and sides of mixing bowl with spatula and cook 5 min/100°C//speed 1. Transfer mixture into a bowl and set aside to cool.
Step 9
Place a plate onto mixing bowl lid and weigh feta onto it. Add feta and cooled mince mixture into bowl with cheese and herb mixture and stir to combine.
Step 10
Divide dough into 16 pieces (approx. 40 g each) and roll out each one into a large circle (15-20 cm). Place approx. 2 tablespoons filling onto one half of the dough, leaving a 1 cm border and fold over dough to enclose filling. Seal edges and flatten gently with the palm of your hand. Repeat with remaining dough and filling.
Step 11
Place a large frying pan over medium-high heat and lightly spray with oil. Fry gozleme until golden brown (approx. 2-3 minutes each side - see Tips). Serve warm with lemon wedges.
