Step 1
Preheat the oven to 350°. Remove the tough stems from the kale and tear the leaves into large 3-inch pieces. Place the kale in a large bowl; drizzle it with olive oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Using your hands, scrunch the kale until it is slightly crushed and softened, about 1 minute.
Step 2
Spray a 10-inch cast-iron skillet with nonstick cooking spray. Place the kale in the skillet in an even layer. Tuck the ham slices into the kale.
Step 3
In a medium bowl, whisk the eggs until the yolks and whites are combined. Stir in the heavy cream, 3/4 cup of the cheddar cheese, parmesan cheese, herbs, and the remaining 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
Step 4
Pour the egg mixture over and around the kale and the ham. Sprinkle with the remaining 1/4 cup cheddar cheese. Bake until the egg mixture is set, 40 to 45 minutes. Garnish with additional herbs, if desired.
