Step 1

Preheat oven to 180°C/160°C fan forced. Line 2 x baking trays with baking paper.

Step 2

Place the honey and coconut oil in a small saucepan and place over a medium heat until warm. Alternatively place in a microwave safe bowl or jug and microwave for 30-60 seconds or until melted. Mix to combine. Leave to cool.

Step 3

Combine the remaining ingredients in a large bowl. Pour in cooled honey and mix to combine.

Step 4

Drop tablespoons of mixture onto the prepared tray, flatten slightly before placing in the oven to bake for 14-16 minutes or until crisp and golden. Cool on the trays before transfering to a wire rack to cool completely.
