Step 1

In a medium mixing bowl, whisk the eggs, cottage cheese, salt and black pepper with a fork.

Step 2

Stir in the chopped green pepper, tomato, and green onion.

Step 3

Heat a medium nonstick skillet or frying pan over medium-low heat and spray with oil (or melt butter). When warm, pour the eggs in.

Step 4

Using a rubber spatula, cook, stirring the egg mixture into the centre of the skillet until eggs are nearly set, about 3-4 minutes.

Step 5

Remove from the heat and serve.
