Step 1
Heat. In a pan on your stovetop, add the coconut milk, monkfruit sweetener, and vanilla extract (if using it), and combine. Stir and keep it on medium-low heat to dissolve the (monkfruit) sweetener without letting it settle. Then, bring it to a boil.
Step 2
Simmer. Once it boils, reduces the heat to low to keep simmering for 30 minutes. It should thicken, reduce, and slightly change color. Stir it every 5 to 7 minutes to keep it from sticking to the bottom.
Step 3
Remove from Heat. Be sure to remove your condensed milk from the stove and transfer it into a heat-proof jar as soon as it finishes cooking. Then allow cooling.
Step 4
Cool and Store. You must let this cool before you store it. It thickens up even more after it cools. An airtight mason jar makes a perfect container for storing. Or better still, use (2-tablespoon) individual containers, which is ideal if you wish to freeze them.
