Step 1
Slice the beef roast against the grain into thin strips. Season liberally with the taco seasoning and place inside the inner pot of pressure cooker.
Step 2
Pour in 1/2 cup beer or beef stock and add pepper and onion mix on top of beef mixture.
Step 3
Seal instant pot, being sure vent knob is pointed to sealed. Cook on high pressure for 5 minutes.
Step 4
Once cooking time is finished let pressure release naturally for at least 10 minutes and then, mix in the zest and juice of the limes.
Step 5
Serve with a slotted spoon for fajitas or with the cooking liquid over rice or quinoa.
